There are many different types of ginger sauce recipes, but we particularly like to serve it with xiaolongbao and seafood dishes.

1/2 cup light soy sauce
1/4 cup rice wine vinegar
2 teaspoons ginger, minced
2 tablespoons brown sugar
2 spring onions, finely chopped

Steps:

  • Gather the ingredients.
  • Combine soy sauce, rice wine vinegar, and minced ginger in a small bowl. Set aside.
  • Melt brown sugar over high heat in a small heavy saucepan until just melted but not burnt.
  • Add soy sauce and rice wine vinegar mixture.
  • Bring to a boil until brown sugar has melted again (it will harden temporarily after the soy sauce mixture is added).
  • Remove from heat, pour into a serving dish, and garnish with chopped spring onions.
  • Serve with pot stickers, gyoza, or other Chinese dumplings.

Heat 3 tablespoons vegetable oil in a small saucepan until smoking; pour over the ginger-scallion mixture and stir. Add a splash of water if the sauce is too thick. Season with salt.

3 tablespoons minced peeled ginger
1 1/2 tablespoons sugar
1 cup chilled whipping cream

Steps:

  • Combine 1/4 cup water, ginger, and sugar in heavy small saucepan. Stir over medium heat until sugar dissolves. Simmer until mixture is syrupy, about 5 minutes. Cool completely. Using electric mixer, beat cream in medium bowl until peaks form. Fold in ginger mixture. (Can be made 4 hours ahead. Cover and chill.)

1/4 teaspoon fresh ground pepper
2 tablespoons butter or 2 tablespoons margarine
4 green onions, chopped

1/2 cup chicken broth
1/2 cup dry white wine
1 teaspoon fresh lime juice
3/4 cup whipping cream
2 medium tomatoes, peeled,seeded,and chopped

Steps:

  • Melt butter in lg pan; saute shallots.
  • Add wine and chicken broth; warm through and reduce heat to simmer.
  • Add whipping cream and simmer gently a few more minutes.
  • Reduce heat again, add salt, pepper, ginger, and lime juice; warm through.
  • Garnish with chopped tomatoes and serve.

2 garlic cloves, minced
4-1/2 teaspoons soy sauce
1-1/2 teaspoons butter
1 cup heavy whipping cream
1-1/2 teaspoons wasabi mustard
Hot cooked rice

Steps:

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper. Place sesame seeds in a shallow bowl; dip chicken in sesame seeds., In a large skillet, cook chicken in oil over medium heat for 6-8 minutes on each side or until a thermometer reads 170°. Remove and keep warm., In the same skillet, cook and stir the mushrooms, ginger and garlic in soy sauce and butter for 3 minutes. It takes about a half-hour of your time, and will add a buttery note to any dessert.

1 pound dark brown sugar
2 1/2 ounces (about 4 inches) fresh ginger root, peeled and sliced into coins
1 vanilla bean, split lengthwise, pulp scraped
10 tablespoons (5 ounces) unsalted butter, cubed
2 cups heavy cream
3/4 teaspoon salt

Steps:

  • Place sugar, ginger and vanilla pod and pulp in a heavy pot set over medium heat. Cook, stirring occasionally, until sugar is molten and fragrant with ginger and vanilla, about 8 minutes. (It won't melt entirely but will be somewhat crumbly.) Add butter (stand back, it will foam up), and stir until melted and smooth, about 2 minutes.
  • Pour cream and salt into pot, stirring, and bring to a simmer. Let sauce bubble until thickened, about 8 minutes. Let cool for at least 1/2 hour, then strain out ginger and vanilla pod. Warm sauce before serving. This sauce will keep for up to 2 weeks in refrigerator.

Steps:

  • Preheat oven to 200°F. Sprinkle 1 side of tuna steaks with pepper. Heat 2 tablespoons oil in heavy large skillet over high heat. Place tuna steaks, pepper side down, in hot oil and sear 2 minutes. Turn tuna over and continue cooking to desired doneness, about 2 minutes for rare. Transfer tuna to rimmed baking sheet; keep warm in oven.
  • Add butter, sliced green onions, cilantro, ginger and chopped garlic to same skillet and sauté until fragrant, about 30 seconds. Mix in mushrooms and soy sauce and simmer 30 seconds. Add whipping cream and simmer until sauce lightly coats back of spoon, about 3 minutes. Stir in lime juice. Spoon sauce onto plates; arrange tuna atop sauce. Garnish with lime wedges and cilantro sprigs, if desired.

  • In a large bowl cream shortening and sugar. Beat in egg and molasses. Combine the flour, ginger, baking soda, salt, cinnamon and cloves; gradually add to creamed mixture alternately with water (dough will be soft). , Drop by heaping teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 7-8 minutes or until tops are cracked. Remove to wire racks to cool., In a small bowl, beat cream cheese, butter and confectioners' sugar until light and fluffy. Beat in vanilla and enough lemon juice to achieve spreading consistency. Frost cookies. Store in the refrigerator.

4 chicken breasts
1/2 cup flour
1/2 teaspoon paprika
1/4 cup butter, melted
1 (10 ounce) can cream of chicken soup
1 cup milk
1/2 teaspoon ground ginger

Steps:

  • Pre-heat oven 400 degrees.
  • Mix flour and paprika in bowl or plastic bag. Coat chicken breasts in flour mixture and place in lightly greased baking dish.
  • Pour melted butter over chicken and bake 20 minutes, turn chicken pieces over and bake another 20 minutes. (If you use boneless chicken breasts you need to reduce the cooking time to 15 minutes, turn, then 15 minutes more).
  • While chicken is baking, mix together cream of chicken soup, milk, and ginger in a small sauce pan and heat on med-low, stirring until blended and heated through. Do not boil.
  • Pour soup mixture over chicken and return to oven for another 20 minutes. The top will be slightly browned.
