- Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

OMA'S GINGER COOKIES
These little cookies are my grandmother's specialty. Perfect to keep in the freezer for later as well! I used to make these all the time with my grandmother, now I get a huge basket of them for every holiday and birthday! In my grandmother's instructions, it tells you to sift some of the ingredients. It makes for a nicer batter, but I don't own a sifter and it's not particularly necessary, I used a whisk or a fork to turn and fluff the dry ingredients before adding.

- In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover. Let sit, stirring every 45 minutes, for about 4 hours, or until the sugar is completely dissolved and there's syrup in the bottom of the bowl.
- Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible. Store in an airtight container in the refrigerator for up to 3 months.
- In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.
- Strain into a glass filled with ice and top with ginger beer.

CHRISTMAS GINGER MAN COOKIES
Found the recipe in an old cookie book and tweeked the recipe to my liking. My family ate them before I could even have time to arrange and take pictures! Next batch will be a solo act to be sure. Prep time does not include chill time.

- Mix shortening, brown sugar & molasses together thoroughly and stir in the 1/2 cup cold water.
- Sift all the dry ingredients together and stir into the creamed sugar/shortening/molasses mixture.
- Dissolve the baking soda into the 3 TBS. water and stir into the cookie batter (make sure to mix well but not overbeat).
- Chill dough for 3 hours.
- Preheat oven to 350º.
- Break dough apart into fourths (for easier handling).
- Roll out on floured surface and cut out with your favorite Ginger Man cookie cutter.
- Transfer to lightly greased cookie sheet and decorate with raisins for the eyes & nose, ginger or cherries for the buttons.
- Bake 15-18 minutes (remember to leave plenty of room for they puff up!).
- Remove from cookie sheet and let cool on rack.
- Decorate with your favorite cookie frosting.
