4 tablespoons canola oil, divided
10 ounce extra-firm tofu, drained and cut into 3/4-inch cubes
2/3 cup fresh corn kernels
1 tablespoon grated peeled fresh ginger
4 garlic cloves, minced
1 small onion, vertically sliced (about 3/4 cup)
1 julienne-cut red bell pepper (about 1 cup)
6 ounces asparagus, steamed and cut into 1-inch pieces (about 2 cups)
1/4 cup organic vegetable broth
2 tablespoons lower-sodium soy sauce
3 tablespoons rice wine vinegar
1/4 teaspoon crushed red pepper
2 cups hot cooked short-grain rice
2 thinly sliced green onions (about 1/4 cup)

Steps:

  • 1. Heat 2 tablespoons oil in a large cast-iron skillet over medium-high heat; swirl to coat. Add tofu; sauté for 10 minutes or until golden brown, stirring frequently. Remove tofu from pan with a slotted spoon; wipe pan dry with a paper towel. 2. Heat remaining 2 tablespoons oil in pan; swirl to coat. Add corn, ginger, garlic onion and bell pepper; stir-fry 5 minutes. 3. Add reserved tofu, asparagus, broth, soy sauce, vinegar, and crushed red pepper. Stir-fry 1 minute or until asparagus and tofu are heated. 4. Divide the rice evenly among 4 plates. Spoon about 1 cup corn mixture over rice, and top evenly with 1 tablespoon green onions.

I just whipped this up one day when I felt like a stir-fry but did not have all the ingredients called for in some of the stir-fry recipes on this site. I used certain veggies I had on hand, but any seasonal veggies may be used. It has a mild ginger flavor that can be enhanced according to taste, and is filling yet light on the tummy! Tofu may be added. Serve over a bed of steamed jasmine rice.

1 tablespoon cornstarch
1 ½ cloves garlic, crushed
2 teaspoons chopped fresh ginger root, divided
¼ cup vegetable oil, divided
1 small head broccoli, cut into florets
½ cup snow peas
¾ cup julienned carrots
½ cup halved green beans
2 tablespoons soy sauce
2 ½ tablespoons water
¼ cup chopped onion
½ tablespoon salt

Steps:

  • In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.
  • Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. Cook until vegetables are tender but still crisp.

2 tablespoons low sodium soy sauce
2 1/2 teaspoons cornstarch
2 teaspoons sake (rice wine) or 2 teaspoons dry sherry
2 teaspoons dark sesame oil
1 lb pork tenderloin, trimmed and cut into strips
1/3 cup unsalted chicken stock
1 tablespoon canola oil
2 teaspoons minced garlic
2 teaspoons minced peeled fresh ginger
1 red pepper, cut into 2-inch pieces
1/2 small white onions, sliced or 1/3 cup white onion
1 lb asparagus, trimmed and cut into pieces
1/2 teaspoon salt
2 (8 1/2 ounce) envelopes Uncle Ben's converted brand rice

Steps:

  • Combine 1 tablespoon soy sauce, 2 teaspoons cornstarch, sake, and sesame oil in a large bowl. Add pork and toss to coat. Combine 1 remaining 1/2 teaspoon cornstarch & 1/2 teaspoon soy sauce and stock in a small bowl.
  • Heat wok or large skillet over high heat. Add canola oil; swirl to coat. add garlic and ginger. stir fry 30 seconds or until fragrant. Add pork mixture to pan; stir fry 3 minutes or until browned. add bell pepper, onion, and asparagus; stir fry 3 minutes until crisp tender. Add stock mixture and salt; bring to a boil. Cook 2 minutes or until sauce is slightly thickened.
  • Prepare rice according to package instructions. Serve pork mixture over rice.

How to make Ginger Chicken Stir-Fry with Asparagus

1 1/4 lbs boneless skinless chicken breast, diced into 1-inch pieces
4 1/2 tsp canola oil, divided
1 lb asparagus, end portions trimmed and remainder diced into 1 1/2-inch pieces
1 small yellow onion, sliced into thin strips
8 oz button mushrooms, sliced*
1/4 tsp red pepper flakes, then more for garnish if desired
1 Tbsp peeled and finely grated fresh ginger
4 cloves garlic, minced
3/4 cup low-sodium chicken broth
1/4 cup low-sodium soy sauce
1/4 cup honey
2 Tbsp cornstarch
Salt and freshly ground black pepper

Steps:

  • In a 12-inch non-stick wok (or large and deep non-stick skillet), heat 1 1/2 tsp canola oil over moderately high heat. Once oil is hot, add diced chicken and season lightly with salt and pepper. Sauté until cooked through, tossing occasionally, about 6 to 7 minutes. Pour chicken onto a large plate and set aside.
  • Return wok to burner, reduce to medium-high heat, add remaining 1 Tbsp canola oil. Once oil is hot, add asparagus, yellow onion and mushrooms, and red pepper flakes and sauté until tender-crisp, about 4 - 5 minutes, adding in garlic and ginger during the last 1 minute of sautéing. Meanwhile, in a mixing bowl (or in a 2-cup liquid measuring cup) whisk together chicken broth, soy sauce, honey and cornstarch until well blended.
  • Pour chicken broth mixture into skillet with veggies, season with salt and pepper to taste, and bring mixture to a light boil, stirring constantly. Allow mixture to gently boil, stirring constantly, until thickened, about 1 1/2 minutes. Toss chicken into mixture and serve warm over white or brown rice, sprinkled with additional red pepper flakes if desired (note that this is best served immediately as the liquids from the veggies will begin to break down and thin the sauce).

  • Heat very large empty skillet over high heat until skillet is very hot, about 2 minutes. Add 1 tablespoon oil and swirl to coat bottom of skillet. Add ginger and stir-fry until softened, about 15 seconds. Add red pepper and asparagus and ¼ cup water. Cover and cook until vegetables are crisp-tender, about 2 minutes. Transfer vegetables to platter.
  • Heat remaining tablespoon oil in skillet until very hot. Add beef and stir-fry until beef loses raw look, about 3 minutes. Return vegetables to skillet.
  • Mix 1 cup water and soy sauce in small bowl, sprinkle cornstarch on top, and whisk to dissolve cornstarch. Pour into skillet, mix well, and bring to boil. Season with salt and pepper to taste. Serve hot, spooned over rice.
