GINGER VEGGIE STIR-FRY



Ginger Veggie Stir-Fry image

I just whipped this up one day when I felt like a stir-fry but did not have all the ingredients called for in some of the stir-fry recipes on this site. I used certain veggies I had on hand, but any seasonal veggies may be used. It has a mild ginger flavor that can be enhanced according to taste, and is filling yet light on the tummy! Tofu may be added. Serve over a bed of steamed jasmine rice.

1 tablespoon cornstarch
1 ½ cloves garlic, crushed
2 teaspoons chopped fresh ginger root, divided
¼ cup vegetable oil, divided
1 small head broccoli, cut into florets
½ cup snow peas
¾ cup julienned carrots
½ cup halved green beans
2 tablespoons soy sauce
2 ½ tablespoons water
¼ cup chopped onion
½ tablespoon salt

Steps:

  • In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat.
  • Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. Cook until vegetables are tender but still crisp.

Add carrots, cauliflower, red onion, bean sprouts or any seasonal vegetables to this easy stir-fry, or just enjoy the courgettes with a main meal!

1 teaspoon vegetable oil
280 g courgettes, sliced
1/2 red onion
10 ml chopped gingerroot
15 ml soy sauce
5 ml dark sesame oil
salt and pepper

Steps:

  • In a non-stick frying pan, heat oil over medium-high heat; stir-fry courgette, onion and ginger for 1 minute.
  • Add 1 tbsp water; cover and steam for 1 to 2 minutes or until tender-crisp, adding more water if necessary to prevent scorching.
  • Stir in soy sauce and oil.
  • Season with salt and pepper to taste.

These easy-to-prepare veggie fritters are similar to Indian pakoras

3 courgettes , finely sliced
1 large onion , halved and finely sliced
1 red chilli , halved, deseeded, finely sliced
1 tbsp garam masala
1 tsp turmeric
handful coriander leaves, picked and very roughly chopped
140g self-raising flour
½ tsp bicarbonate of soda
sunflower oil , for frying
2 tomatoes , chopped to smithereens
1 small red onion , finely chopped
1 green chilli , finely chopped (optional)
1 tsp ketchup

Steps:

  • Tip all the fritter ingredients into a bowl. Gradually work in about 200ml cold water until everything is bound in a thick, spoonable batter (you can do this an hour ahead, but the fritters should be cooked at the last minute).
  • Heat a decent layer of oil in a large frying pan, then fry large spoonfuls of the batter for 2 mins until golden. Flip them over, cook on the other side, then lift onto kitchen paper and keep warm while you cook another batch.
  • Make the salsa by mixing all the ingredients together. Serve the fritters with the salsa for spooning over.

600g courgette
3-4 tbsp plain flour
splash olive oil
sprig fresh rosemary

Steps:

  • Slice the courgettes in a food processor, using the fine disc, and pat dry on a clean tea towel. Toss the slices in a plastic bag with the flour, well seasoned. Heat the olive oil in a large frying pan with the rosemary, discarding the herb when the oli is hot, and add 1⁄4 of the courgettes. Fry the courgettes in batches on medium high heat for 2-3 minutes until light golden. Drain on kitchen paper, serve hot.
