Gingerbread Waffles image

If you enjoy gingerbread you will like it as a waffle. These make a nice winter breakfast. Serve with whipped cream and dusted with cinnamon.

4 tablespoons butter, melted
2 cups flour
1 tablespoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
3/4 cup brown sugar
1 1/2 cups buttermilk
1/4 cup molasses
2 eggs, beaten

Steps:

  • Heat waffle iron and spray with cooking spray.
  • In a mixing bowl, sift together flour, brown sugar, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  • In another mixing bowl, combine eggs, buttermilk, and molasses. Beat in melted butter.
  • Add dry ingredients with wet ingredients just until moistened and lump free.
  • Pour enough batter to fill two-thirds of the waffle iron.
  • Cook until crisp and golden brown.
  • Set aside.
  • Repeat with remaining batter, spraying with cooking spray as needed.

Add some sugar & spice to your life with these deliciously dark, rich & fluffy waffles. Full of warm & comforting gingerbread flavour & surprisingly healthy!

Number Of Ingredients 12

125g / 1 slightly heaping cup spelt flour
1 tablespoon ground flax seeds
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1.5 teaspoons ground cinnamon
2 teaspoons ground ginger
4 tablespoons coconut sugar ((you may sub this for any other brown sugar))
240 mls / 1 cup non dairy milk
1 tablespoon apple cider vinegar
2 tablespoons black strap molasses
1½ tablespoons liquid oil (( I used a light olive oil but coconut oil would also be good as would any other liquid cooking oil))

Steps:

  • Grease and preheat your waffle iron. I used setting 4 on my Cusinart Waffle Maker.
  • If you don't have a waffle iron then use a non stick fry pan and make them into pancakes.
  • Put all of the dry ingredients into a bowl and stir well.
  • Put all of the wet ingredients into a jug or bowl (one with a lip is easier to pour). Stir until well combined.
  • Pour the mixed wet ingredients into the dry ingredients and mix using a spoon, until just combined. Do not over mix. A few small lumps are fine. You just want it to get to the stage that you can't see any dry bits of flour through it. The batter should be a thick dropping consistency, kind of like thick cake batter. If it feels too thick, add an extra tablespoon or two of milk at this stage but don't make it too thin.
  • When your waffle iron is ready pour in your mixture until it's just full (they all vary in size so you might make more or less waffles) and cook on a medium temperature until steam stops coming out of the side. As soon as it does remove them. Ignore any signals from your machine if it tells you they are done earlier.
  • When ready open your waffle iron carefully and remove.
  • If making as pancakes pour the batter into the pan and cook over a medium heat until bubbles start forming on the surface. Once you see bubble flip and cook for a minute or two more.
  • Serve immediately (see recipe notes for storage instructions)

3 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon freshly grated nutmeg, eyeball it
1/2 teaspoon salt
4 large eggs
2/3 cup packed dark brown sugar
1 cup canned pumpkin puree
1 1/4 cups milk
1/2 cup molasses
1/2 cup (1 stick) melted butter, plus some to butter the iron
Syrup, whipped cream or fresh fruits for topping, to pass at table

Steps:

  • Preheat waffle iron.
  • In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

7 tablespoons butter, divided
3 ripe Bartlett pears, cored and thinly sliced
1 tablespoon white sugar
1 cup whole wheat flour
1 cup all-purpose flour
1 ½ teaspoons ground cinnamon
1 ½ teaspoons baking soda
1 ½ teaspoons ground ginger
½ teaspoon salt
3 eggs, lightly beaten
¾ cup molasses
½ cup buttermilk
¼ cup milk
¾ cup vanilla yogurt

Steps:

  • Melt 5 tablespoons butter in a saucepan over low heat; remove from burner and set aside.
  • Melt remaining 2 tablespoons butter in a very large skillet over medium heat; add pears and cook, turning occasionally, until mostly tender, about 6 minutes. Sprinkle sugar over pears and cook until browned and tender, about 3 minutes. Cover skillet and keep warm over low heat.
  • Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, ginger, and salt in a large bowl; make a well in the center. Mix melted butter, eggs, molasses, buttermilk, and milk in a separate bowl. Pour butter mixture into the well of the flour mixture and stir just until batter is moistened and slightly lumpy.
  • Preheat and grease a waffle iron according to manufacturer's instructions.
  • Pour batter into preheated waffle iron and cook according to manufacturer's instructions; repeat with remaining batter. Serve each waffle with pears and 1 tablespoon vanilla yogurt.

1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

1/4 teaspoon ground cloves
4 large eggs
6 tablespoons unsalted butter, melted and cooled
1 cup whole milk
1/2 cup sour cream, plus more for serving

Lingonberry preserves (or other berry preserves), for serving

Steps:

  • Whisk together flour, sugar, baking powder, baking soda, salt, and spices in a large bowl. Whisk together eggs, butter, milk, sour cream, and molasses in a medium bowl. Add egg mixture to flour mixture, and whisk until smooth.
  • Heat a waffle iron. Spoon 1/3 cup batter into each mold, and cook until golden brown. Serve warm waffles with sour cream and preserves.
