1/4-oumce ginger liqueur (recommended: Domain de Canton)
2 ounces fresh lemon juice
1-ounce simple syrup (equal amounts water and sugar heated until sugar dissolves; cool)
Club soda
Lime wedge, for garnish
Crystallized ginger, for garnish

Steps:

  • Add the gin, ginger liqueur, lemon juice, and simple syrup to an ice-filled Collins glass. Top with club soda and stir. Garnish with a lime wedge and a skewer of crystallized ginger.

This recipe comes from Tom Collins, in Walker Wisconsin and was published in Ron Schara's Minnesota Fishing Guide in 1978. It has been a favorite of mine for many years and works well with any firm white meat fish. It can also be used to deep fry firm vegetables like broccoli.

2 eggs, whole beaten
12 ounces beer
12 ounces flour
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 nutmeg
1/2 teaspoon baking powder

Steps:

  • Combine eggs and beer Add dry ingredients all at once.
  • Mix smooth, adjust consistency as required.
  • If batter is heavy, adjust with a small amount of milk, If batter is too thin, adjust with cornstarch. Do not over mix.
  • Dredge fish or vegetable lightly in cornstarch.
  • Shake off excess, dip in batter and immerse directly into fat cooking at 375 degrees.

To Assemble and Serve:
1½ ounces Highland Park 12-Year Single Malt whisky
¾ ounce Landy VSOP Cognac
¾ ounce fat-washed ginger liqueur
½ ounce lemon juice
1 teaspoon amber agave nectar
1 twist lemon

Steps:

  • For the Fat Wash: Combine the butter and the ginger liqueur; refrigerate for 30 minutes. Strain through a coffee filter and reserve. To Assemble and Serve: Combine the whisky, Cognac, ginger liqueur, lemon juice, honey, and ice. Shake and double strain into a chilled coupe glass. Garnish with the lemon twist.
