GARLIC GINGER TOFU
From All Recipes. I don't think I would cook this for a full 30 minutes. Update: This works as written, but I think it would be easier to marinate the tofu in the ginger, garlic and soy sauce and then add it to a greased pan. Very tasty though.

Steps:
- Heat oil in a wok or skillet over medium heat.
- Stir in garlic and ginger, and cook for 1 minute. Add tofu to the pan with tamari, and stir to coat.
- Cover, and continue cooking for 20 to 30 minutes.
- Squeeze lime juice over tofu before serving.

This makes a very sticky gooey tofu, almost tofu taffy. it tends to stick to itself and everything else. Its a bit of an aquired taste...

Steps:
- Heat about 12mm/1/2 inch of oil in saucepan
- add the tofu and fry until golden brown on all sides.
- Pour off the excess oil
- add the sugar, garlic, ginger, salt and pepper and continue to cook, turning from time to time, until the tofu well coated and sugar is just beginning to get sticky.
- Serve hot over rice, or noodles.

- Place tofu on a baking sheet lined with several layers of paper towels; place several layers of towels on top and press gently to remove liquid. Place tofu in a shallow baking dish.
- Bring vinegar, soy sauce, and palm sugar to a boil in a small saucepan, stirring to dissolve sugar. Pour over tofu and turn to coat. Let stand at least 1 hour to marinate.
- Heat oil in a large nonstick skillet over medium-high. Add ginger and garlic and cook, stirring often, until beginning to brown, about 1 minute.
