I originally got this from a Cuban friend, but made some changes to it. I have had it many times, the leftovers are very good wrapped in a tortilla, too. Very filling dish.

1 tablespoon olive oil
1 cup chopped onion
1 green bell pepper, chopped
2 cloves garlic, minced
1 teaspoon salt
4 tablespoons tomato paste
1 (15.25 ounce) can kidney beans, drained with liquid reserved
1 cup uncooked white rice

Steps:

  • Heat oil in a large saucepan over medium heat. Saute onion, bell pepper and garlic. When onion is translucent add salt and tomato paste. Reduce heat to low and cook 2 minutes. Stir in the beans and rice.
  • Pour the liquid from the beans into a large measuring cup and add enough water to reach a volume of 2 1/2 cups; pour into beans. Cover and cook on low for 45 to 50 minutes, or until liquid is absorbed and rice is cooked.

6 cups water
2 cups dried red beans
2 ham hocks
3 tablespoons oil
2 white onions, diced
6 garlic cloves, diced
2 green bell peppers, diced
2 tablespoons ground cumin
2 tablespoons paprika
2 tablespoons dried oregano
2 tablespoons freshly ground black pepper
2 tablespoons kosher salt

Steps:

  • In a large pot add water, beans and ham hocks. Boil for 45 minutes until tender.
  • In a medium saucepan add oil, onions, garlic, peppers, cumin, paprika, oregano, pepper and saute until translucent, do not brown.
  • When bean mixture has reduced by 1/2, add the onion saute mixture and the salt. Continue to reduce until water is level with bean mixture. Hold warm for service.

1 pound dried black beans
1/4 teaspoon baking soda
1 to 2 teaspoons olive oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon sugar
1 teaspoon white vinegar
Ten to fifteen 3-inch cilantro stems, tied in a bundle
3 bay leaves
1 onion, diced
Kosher salt and freshly ground black pepper

Steps:

  • Soak the beans with the baking soda in 10 cups of water for about 3 hours. Rinse and drain.
  • Add the beans to a Dutch oven and add 10 cups fresh water, along with the olive oil, cumin, oregano, sugar, vinegar, cilantro stems, bay leaves and onion. Simmer until the beans are soft, about 2 hours. Add 2 teaspoons of salt (or more to taste) and freshly ground black pepper to taste.

• 450 gram of black beans
• 2400 ml of water
• 4 spoons of oil
• 1 onion
• 6 cloves of garlic
• 1medium pepper
• 1bay leaf
• 1 teaspoon of cumin
• ½ teaspoon of milled oregano
• ½ spoon of milled bay leaf
• 1 tablespoonful of dry wine
• 1 teaspoon of sugar
• 1 pinch of salt

Steps:

  • 1 The first step is to clean and wash the beans well; we will leave them to soak since the previous night with sufficient water and bay leaf.
  • 2 The following morning, we empty them into a pressure cooker together with the water and the bay leaf; we cook it from 30 to 45 minutes, until they get tender.
  • 3 Meantime, we prepare the lightly Fried, for it, in a Frying pan place the oil and when it gets hot, we add mashed garlic, the onion and the pepper finely cut. Fry lightly over a low heat for some seconds
  • 4 Once the beans tender, uncover the pressure cooker and extract one cup that we reserve to use it later.
  • 5 We add the lightly Fried and continue Cooking without cover it, then we add the dry wine, the sugar, the salt to taste and the rest of the ingredients.
  • 6 Finally, we take the cup we had preserve before and blend it well or crush until its turn as a puree that we will empty to the black beans soup to has a dense texture.
  • 7 We stir it well, check the point of salt and remove from the flame.

A Cuban lady down the street made these every Wednesday...wonderful stuff! She served the beans over a bowl of hot rice, and garnished them with salsa, a little sour cream, and shredded cheese. It was also good without the dairy products. Can substitute canned, rinsed beans to cut cooking time.

¼ cup olive oil
1 large onion, chopped
1 medium green bell pepper, chopped

This classic recipe is adapted from "Tastes Like Cuba," by Eduardo Machado and Michael Domitrovich. The secret is the homemade sofrito, but bottled will do in a pinch.

1 1/2 green peppers, stemmed and seeded
10 garlic cloves
1 pound dried black beans, rinsed and picked over to remove any stones
1 smoked ham hock
2 bay leaves
5 teaspoons salt, or to taste
1/4 cup olive oil
4 slices thick bacon, cut into 1/2-inch pieces
1 Spanish onion, diced
1 jalapeño, stemmed and finely chopped
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
3 tablespoons distilled white vinegar
1 tablespoon turbinado or other brown sugar

Steps:

  • Cut 1 green pepper into 1-inch squares. Smash and peel 4 of the garlic cloves. Put the green pepper and garlic into a large pot with the beans, ham hock, bay leaves and 1 tablespoon salt. Add 2 quarts water and bring to a boil. Cover the pot and simmer until the beans are tender, an hour or more.
  • Meanwhile, make a sofrito. Cut the remaining ½ green pepper into ¼-inch dice. Peel and finely chop the remaining garlic. Heat the olive oil in a very large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until it starts to brown, about 5 minutes. Add the green pepper and onion and cook, stirring, until slightly softened, about 3 minutes. Add the garlic, jalapeño (leave out the seeds if you don't want it too spicy), oregano, cumin, black pepper and 2 teaspoons salt and stir for another minute. Pour in the vinegar and scrape any browned bits from bottom of pan with a wooden spoon. This is your sofrito.
  • When the beans are cooked, discard the bay leaf. Remove and set aside the ham hock and let it cool. Transfer 1 cup of beans to small bowl, mash them into a paste with the back of a fork and return to the pot. Add the sofrito, then the sugar. Pull the meat from the ham hock, leaving behind any white sinew or gristle. Chop the ham into ½-inch pieces and return it to the bean pot.
  • Stir the beans well and bring to a boil over medium heat, then lower to a simmer and cook, uncovered, for 20 minutes or so, skimming any foam from the top. Taste for salt and serve with white rice.

1 lb dried black beans
1 green bell pepper, chopped
10 cups water
2/3 cup olive oil
1 large onion, minced
1 green bell pepper, minced
4 garlic cloves, pounded
4 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1 teaspoon sugar
1 bay leaf
2 tablespoons vinegar
2 tablespoons wine
2 tablespoons olive oil

Steps:

  • Wash beans.
  • In a large pot, soak the beans with the first chopped bell pepper in water until swollen. Overnight?.
  • **It doesn't say so but I'd drain it at this point and add new water so the beans won't be so musical if you know what I mean.**.
  • Cook until soft about 45 minutes.
  • Heat oil in a medium pan. Add onion, second bell pepper and garlic and cook until soft.
  • Add 1 cup of cooked beans and mash them well. Add mixture to bean pot.
  • Add dry seasonings to the pot.
  • Cover and boil 1 hour.
  • Add vinegar and wine.
  • Cover and simmer 1 hour.
  • If broth is too watery, uncover and cook until it thickens.
  • Just before serving stir in the olive oil.

Using back of fork, mash beans coarsely. Add remaining beans, broth and vinegar and simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes. Mix in sugar, if desired. Season beans to taste with salt and pepper and serve.

6 cups water
1 cup chopped onion
1 cup chopped bell pepper
1 tablespoon minced garlic
1/2 cup olive oil
2 bay leaves
1 teaspoon salt

1 slice cooked and crumbled bacon
2 tablespoons red wine vinegar
2 cups cooked long-grain rice
chopped green onion, chopped hard boiled eggs,sour cream

Steps:

  • In a large stockpot cover beans with water and boil for 2 minutes.
  • Remove from heat and let stand for one hour.
  • Drain water and cover with fresh water (6 cups).
  • In a skillet saute the onions, bell pepper and garlic in oil for 5 minutes, until tender.
  • Add onion mixture and all remaining ingredients, except the red wine vinegar, to the beans and bring to a boil.
  • Reduce heat to simmer covered for 2 hours, until beans are tender.
  • Add more water if necessary.
  • At the last minute add the red wine vinegar, just before serving.
  • Serve with 2 cups of cooked rice.
  • Top with chopped green onions, chopped hard boiled eggs or sour cream.

1 red bell pepper, chopped
1 green bell pepper, chopped

¼ cup balsamic vinegar

  • In a large bowl, soak beans in water to cover overnight.
  • Rinse beans, and transfer to a large stock pot. Add onion, bell peppers, bay leaves, paprika, cumin, oregano, and chile peppers, along with water to cover. Bring to a boil, reduce heat, and simmer for 1 1/2 hours.
  • Test beans for tenderness, and when tender add garlic and balsamic vinegar. Salt and pepper to taste.

2 cups green beans, trimmed
1 tablespoon olive oil
1/4 cup chopped white onion
2 garlic cloves, chopped fine
1/2 cup cooked ham or 1/2 cup bacon, chopped
2 tablespoons fresh lime juice
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
1/4 cup chopped fresh cilantro

Steps:

  • In a saucepan, place the green beans in boiling, salted water. Cook, uncovered, until fully cooked, about 6 minutes. If you like your beans w/ a little crunch, cook 3-4 minutes.
  • Remove from heat and drain.
  • Sauté the onion in olive oil until the onions begin to get limp. Add garlic and ham or bacon and cook for 2 additional minutes.
  • Remove from heat.
  • Stir in fresh lime juice.
  • Pour sauce over cooked green beans and toss to coat evenly. Season w/ salt pepper to taste.
  • Sprinkle chopped fresh cilantro on top and serve.

Authentic Cuban-style black beans take a great deal of time but are well worth the wait. It is said that adding a teaspoon of baking soda in the last hour of cooking lessens the gastric after-effects of eating beans.

1 lb black beans
2 large green peppers (cut into several large slices)
10 cups water
2/3 cup olive oil
1/2 teaspoon black pepper
1 large onion (diced)
1/4 teaspoon oregano
4 garlic cloves (crushed)
1 bay leaf
2 teaspoons sugar
4 teaspoons salt
2 teaspoons vinegar
2 teaspoons olive oil
2 teaspoons dry wine

Steps:

  • Wash beans and let them soak in water and half of the green pepper over night at room temperature.
  • Once beans have swollen, simmer on stove until they become soft (about 45 minutes).
  • Heat olive oil in pan and sauté onion, garlic, and the rest of the green pepper.
  • Add 1 cup of the coked beans to pan and mash well.
  • Return entire mixture to pot with beans.
  • Add salt, pepper, oregano, bay leaf, and sugar.
  • Cover and return to boil.
  • Simmer for 1 hour longer.
  • Add vinegar and dry wine, cover and simmer for one hour longer.
  • If beans are still too wet after this time, cook uncovered until they thicken.
  • Remove bay leaf and top with olive oil prior to serving.

1/2 cup olive oil (preferably Spanish olive oil)
2 garlic cloves, finely chopped
1/2 small red onion, finely chopped
1 medium green pepper, seeded and finely chopped
1/3 cup chorizo sausage, chopped (approx. 1/2 a sausage)
1/2 cup canned tomato, drained and chopped
2 (16 ounce) cans black beans
1/2 cup chicken stock
1 teaspoon ground cumin
1/4 teaspoon hot sauce
1 tablespoon red wine vinegar
salt & freshly ground black pepper
4 green onions, chopped (for garnish)

Steps:

  • Drain one can of black beans and discard the liquid. Save the liquid from the other can of beans, and set it aside.
  • In a medium sized sauce pan over low heat, heat the olive oil until it is fragrant; then add the garlic, red onion, green pepper and chorizo. Cook onion is tender, stirring frequently, about 10 minutes.
  • Add the chopped tomatoes and cook another 10 minutes.
  • Add the beans, bean liquid from the one can of beans, chicken stock, cumin, hot sauce and red wine vinegar. Stir to blend. Correct the seasonings and simmer, uncovered until heated through, about 20 minutes.
  • Garnish with green onions and serve.
