1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
24 chicken wings (about 5 pounds)
SAUCE:
1/4 cup honey
1/4 cup thawed orange juice concentrate
1/2 teaspoon ground ginger
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. Line 2 baking sheets with foil; coat with cooking spray., In a shallow dish, combine flour, salt, paprika and pepper. Add chicken wings, a few at a time; toss to coat. Divide wings between prepared pans. Bake 30 minutes., In a small bowl, combine honey, orange juice concentrate and ginger; brush over chicken wings. Bake until juices run clear, 25-30 minutes., Preheat broiler. Broil wings 4 in. from heat until lightly browned, 1-2 minutes. If desired, sprinkle with parsley.

1 cup orange marmalade
1/2 cup minced fresh cilantro
1/2 cup Sriracha chili sauce
1/2 cup reduced-sodium soy sauce
1/4 cup lime juice
1/4 cup rice vinegar
1/4 cup ketchup
1/4 cup honey
4 garlic cloves, minced
1 tablespoon minced fresh gingerroot
1 tablespoon grated lime zest
1 tablespoon sesame oil
1 teaspoon salt
1 teaspoon pepper
4 pounds chicken wingettes and drumettes

Steps:

  • In a large bowl, combine the first 14 ingredients. Add chicken; turn to coat. Cover and refrigerate 8 hours or overnight., Preheat oven to 375°. Drain chicken, discarding marinade. Transfer chicken to two greased 15x10x1-in. baking pans. Bake 35-45 minutes or until juices run clear.

12 chicken wings, seperated,and rinsed
6 cups peanut oil
2 cups hot sauce (frank durkee's is preferred)
1 1/2 cups brown sugar
salt
pepper
garlic powder

Steps:

  • you can adjust the"hot/sweetness" of this by starting with 1 cup of hot sauce and brown sugar and adding more of whatever your preference is.
  • mix hot sauce with brown sugar, stir and heat in microwave, just until mixed smooth.
  • sprinkle wings with salt, pepper, or garlic powder (optional).
  • heat oil, and drop wings in, fry for 9-12 minutes depending on the fryer you are using, you want them to be a golden brown and crispy.
  • remove the wings from the oil and let them drain on paper towels for 2-3 minutes.
  • dip wings in hotsauce-brownsugar mixture.
  • put wings back in peanut oil for 2-3 minutes.
  • careful of any splattering.
  • remove wings again.
  • place on paper towels again for 1 minute.
  • then put all wings into hotsauce-brownsugar mixture.
  • serve with blue cheese dressing.

1 ½ cups Louisiana-style hot sauce
¾ cup butter
1 cup honey
1 pinch garlic salt
1 pinch ground black pepper
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Grill the chicken 8 to 12 minutes on each side, or until juices run clear. (You can deep fry or bake the chicken instead if you want to, but it is best when grilled.) Remove chicken to a large roasting pan.
  • In a saucepan over medium heat, mix the hot sauce, butter, honey, garlic salt, black pepper, and cayenne pepper. Simmer about 10 minutes, until blended and heated through. Pour the sauce over the grilled chicken wings and stir to coat.

Steps:

  • In 1-quart saucepan, combine all glaze ingredients; bring to a simmer, stirring frequently over medium heat until sugar is dissolved, about 5 minutes. Remove from heat; set aside.
  • In 2-gallon resealable food-storage plastic bag mix pepper sauce, oil, salt, pepper and chicken. Seal bag; shake to coat. Add flour, seal bag and shake until chicken is coated with flour.
  • Heat oven to 375°F. Line two baking sheets with heavy-duty foil; spray with cooking spray.
  • Place chicken on cookie sheets. Bake uncovered 30 minutes, turn chicken over and rotate pans. Bake 20 to 30 minutes longer or until golden brown and juice of chicken is no longer pink when centers of thickest piece are cut.
  • In large bowl, toss chicken with glaze.

2 eggs, beaten
1 cup all-purpose flour
1 cup margarine
½ cup apple cider vinegar
3 tablespoons soy sauce
3 tablespoons water
1 cup brown sugar
1 teaspoon monosodium glutamate (MSG)
½ teaspoon salt
3 serrano chile peppers, minced
2 tablespoons grated fresh ginger
2 tablespoons sesame seeds, toasted

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Blot chicken wings dry with a paper towel.
  • Beat the eggs in a bowl, and place the flour in another bowl. Dip chicken wings into the egg, then into the flour to lightly coat, shaking off the excess.
  • Melt the margarine in a large skillet over medium high heat.
  • Pan fry the chicken wings until well browned on all sides, about 10 minutes.
  • Meanwhile, gently boil the cider vinegar, soy sauce, water, brown sugar, monosodium glutamate, salt, serrano chile peppers, and ginger in a saucepan over medium heat until thickened, 5 to 7 minutes.
  • Toss the browned chicken wings in the sauce to coat, then transfer the wings to large baking dish with a slotted spoon. Reserve remaining sauce.
  • Bake in the preheated oven until the chicken is no longer pink in the center, about 30 minutes, rotating and basting with the reserved sauce after 15 minutes.

½ cup kosher salt
¼ cup sugar
1 tablespoon gochugaru, (Korean chile flakes)
2 lb chicken wings
1 ginger, peeled and sliced - 3 in (7 cm)
8 cloves garlic, peeled
4 scallions, cut into 2 in (5 cm)
3 cups olive oil, plus more as needed
¼ cup rice vinegar
¼ cup soy sauce
½ cup honey
4 cloves garlic, minced
2 tablespoons fresh ginger, grated
¼ cup gochujang, (Korean chile paste)
2 cups cornstarch, divided
1 cup all purpose flour
2 teaspoons kosher salt
1 ¾ cups water
toasted sesame seed
fresh cilantro leaf
scallion, sliced

Steps:

  • Dry brine the wings: Set a wire rack inside a rimmed baking sheet.
  • In a small bowl, combine the salt, sugar, and gochugaru.
  • Add the wings to a large bowl and sprinkle with the dry brine, tossing to coat evenly. Arrange the wings right side up on the wire rack and refrigerate, uncovered, for at least 4 hours, or overnight.
  • Confit the wings: Preheat the oven to 300°F (150°C).
  • Transfer the brined wings to an 8 x 11-inch baking dish. Scatter the ginger, garlic, and scallions around the wings. Pour the olive oil into the baking dish, adding more oil if needed to ensure the wings are fully submerged.
  • Cover the baking dish with aluminum foil and place on a rimmed baking sheet. Bake for 2½-3 hours, until the meat starts to pull away from the bones, but is still intact and tender.
  • Line a baking sheet with foil. Remove the wings from the oven and let cool slightly. Lift out of the oil and drain well, then set on the prepared baking sheet. Transfer to the refrigerator and chill for at least 1 hour. If desired, reserve the leftover oil to confit more wings. The oil will keep in an airtight container in the freezer for up to 2 month.
  • Meanwhile, make the sauce: In a medium pan over medium heat, combine the rice vinegar, soy sauce, honey, garlic, ginger, and gochujang. Cook, stirring often, until the sauce is bubbling and thickened, 3-4 minutes. Remove the pan from the heat and set aside.
  • Fry the wings: Heat the canola oil in a large Dutch oven over high heat until it reaches 350°F (180°C).
  • Make the batter: Add 1 cup of cornstarch to a large bowl and set aside. Add the remaining cup of cornstarch to a separate large bowl, along with the flour, salt, and water and whisk until smooth with no lumps.
  • Coat a chicken wing in the cornstarch, shaking off excess, then gently dredge the wing in the batter, letting any excess drip off.
  • Working in 2 batches, add the wings to the hot oil and fry for 4-5 minutes, until golden brown and crispy. Transfer to a paper towel-lined baking sheet to drain.
  • Transfer the wings to a large bowl and pour the sauce over. Toss to coat well.
  • Transfer the wings to a serving platter and pour more sauce over, then garnish with toasted sesame seeds, cilantro, and scallions.
