- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
- In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
- Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

Steps:
- Preheat oven to 375 degrees F and place oven rack in center of oven.
- Prepare your cooking pan by placing a cooling rack over a baking pan with sides, then cover with aluminum foil; poke small holes every half inch or so and spray with cooking spray.
- Place the grated cheese on a plate and place in the freezer until ready to use.
- Heat a skillet over medium high heat, add butter and cook until foamy; add onions and celery, cook, stirring occasionally, until they begin to caramelize, about 8 minutes.
- Add in garlic, thyme, paprika; cook, stirring, about a minute.
- Reduce heat to low and stir in tomato juice; transfer to a small bowl and let cool.
- In a large bowl, whisk together eggs and broth; sprinkle with the gelatin and let sit 5 minutes.
- Stir in soy sauce, mustard, saltines, parsley, salt, pepper, and the onion mixture; crumble frozen cheese over top.
- Add ground beef and mix with hands until combined.
- Transfer meat mixture to prepared foil lined pan and form into a 10 x 6 inch loaf (it should be about 2 inches high).
- Bake to an internal temperature of 135 to 140 degrees F, about 55 to 65 minutes; remove from oven and set oven to broil.
- Meanwhile, combine glaze ingredients in a small saucepan, bring to a simmer.
- Stir until syrupy, about 5 minutes.
- Spread half the glaze over the meatloaf and broil until bubbly and beginning to brown at the edges; repeat with remaining glaze.
- Let sit 20 minutes before slicing.

- Position a rack in the upper third of the oven and preheat to 375 degrees F. Mix 1/2 cup of the ketchup, the breadcrumbs, milk, eggs, parsley, and 1 tablespoon Worcestershire sauce together in a large bowl and set aside until the breadcrumbs have absorbed the liquid, about 3 minutes.
- Add the ground beef and pork, onion, garlic, 1 tablespoon salt, and 1/2 teaspoon pepper to the bowl and mix until well combined (do not overmix).
- Transfer the meat mixture to an 18-by-13-inch sheet pan (see Cook's Note) and press it into an even layer covering the entire surface. Whisk the remaining 1 1/2 cups ketchup, 1 tablespoon Worcestershire, brown sugar, cider vinegar, and chipotle powder in a small bowl. Brush the meatloaf with the sauce.
- Bake until the meat is cooked through, about 20 minutes, then turn on the broiler setting and broil until the top becomes caramelized and dark in spots, 3 to 4 minutes more, turning the pan periodically for even broiling. Let rest 5 minutes before serving.

I think this recipe originally came from the Pillsbury Family Cookbook, but I've made some changes over the years. I usually serve this with scalloped potatoes and baked beans. It's my husband's #1 favorite dinner and smells absolutely wonderful while it's baking.

- Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.
- Cook the Vegetables:Pulse vegetables in food processor until finely chopped (or do so by hand). Heat olive oil in a large skillet over medium-high. Add vegetables, thyme, and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until vegetables have softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
- Prep the Meat and Glaze: In a small bowl, stir together remaining 1/2 cup ketchup and the brown sugar for glaze; set aside. In a large bowl, combine vegetable mixture with ground chuck, egg, 1/2 cup breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.
- Bake and Let Cool:On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze. GLAZED ALL-BEEF MEATLOAF (ATK)

- 1. MEAT LOAF: Adjust oven rack to middle position. Heat oven to 375F. Spread cheese on a plate and place in freezer until ready to use. To prepare baking sheet, set a metal cooling rack over a rimmed baking sheet. Fold a sheet of heavy-duty aluminum foil to form a 10" by 6" rectangle. Center foil on cooling rack and poke holes in foil with a skewer (about 1/2" apart). Spray foil with nonstick cooking spray. 2. Heat butter in 10" skillet over med-hi until foaming; add onion and celery and cook, stirring occasionally, until beginning to brown, 6 to 8 mins. Add garlic, thyme, and paprika and cook, stirring, until fragrant, about 1 min. Reduce heat to low, add tomato juice. Cook, stirring to scrape up browned bits from pan, until thickened, about 1 min. Stir in soy sauce, mustard, saltines, parsley, salt, pepper, and onion mixture. Crumble frozen cheese into a coarse powder and sprinkle over mixture. Add ground beef; mix gently with your hands until thoroughly combined, about 1 min. Transfer the meat to foil and shape into a 10" by 6" oval about 2" high. Smooth top and edges of meatloaf with a moistened spatula. Bake until instant-read thermometer reads 135F-140F, 55-65 mins. Remove meat loaf from oven and turn on the broiler. 4. For glaze: While meatloaf cooks, combine ingredients for glaze in a small saucepan; bring to simmer over med heat and cook, stirring, until thick and syrupy, about 5 mins. Spread half of glaze evenly over cooked meatloaf with a rubber spatula; place under broiler and cook until glaze bubbles and begins to brown at edges, about 5 mins. Remove the meatloaf from oven and spread evenly with remaining glaze; place back under broiler and cook until glaze is again bubbling and beginning to brown, about 5 mins more. Let meatloaf cool about 20 mins before slicing.

- Preheat oven to 350 degrees F.
- In a skillet over moderate heat, add the oil. Heat the oil until hot, but not smoking. Add the onion and garlic and cook, stirring, until softened, about 5 minutes. Set aside and let cool.
- In a mixing bowl, whisk the eggs, milk, mustard, and hot sauce together. Add marjoram, thyme, salt, and pepper.In a large mixing bowl, combine the meats, egg-milk mixture, bread crumbs, parsley, and the cooked onion mixture.
- In a small bowl stir together ketchup, sugar, and vinegar. Set aside.
- Form 1 tablespoon of the meat mixture into a small patty, add it to a small oiled skillet, and cook until no longer pink. Taste for seasoning and adjust.
- Transfer meat mixture to an oiled loaf pan.*.
- *NOTE: The best way to make the meatloaf is to use a baking sheet, lined with foil. Place a cooling rack on top. Cut a piece of foil to be larger than a the loaf-- and shape the meat into a loaf. Using a metal skewer, poke holes along the foil -- usually every other hole.
- Place the shaped loaf on top of the foil. I prefer this method, as the loaf is less likely to "steam" in a loaf pan. You can also glaze all around the meatloaf, which is even better!
- Brush meat with ketchup glaze.Bake in oven for about 45 minutes, until glaze has set.
- Brush meat loaf with remaining glaze and bake for 15 minutes more; glaze again.
- My oven takes 1 hour and 15 minutes to reach the desired doneness. Times do vary, so allow for that!
- Internal temperature of loaf should be 160 degrees F.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
- Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
- Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
- Bake in the preheated oven on the middle rack for 30 minutes.
- While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
- Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
- Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.
