CHAR SIU OR CHINESE BBQ / ROAST PORK
Serve this sweet, succulent pork thinly sliced over white rice or use it to fill steamed buns or make pork fried rice.

- In a large bowl, combine the honey, soy sauce, wine, hoisin sauce,sesame oil, garlic, fermented tofu, if using, and five-spice and stir to mix.
- Add the pork and turn a few times to coat all sides well. Cover and refrigerate for at least 2 hours or up to 24 hours.
- Pour the marinade into the Instant Pot and then put the trivet in. Place the pork on top of the trivet.
- Close the pot and turn the valve to the sealing position. Cook on high pressure for 35 minutes.
- Let the pressure release naturally for 10 minutes and then quick release the remaining pressure.
- Remove the pork from the pressure cooker.
- Preheat the oven to 450ºF.
- Cover a rimmed baking sheet with aluminum foil and place a rack on top. Put the pork on top of the rack.
- To make the glaze, in a small bowl, stir together the soysauce and honey. Brush the mixture on the pork.
- Cook the pork in the oven for 6 to 8 minutes. Turn the pork over, brush more of the glaze on it, and cook for another 4 minutes or so.
- Remove from the oven and let stand for a few minutes before slicing.

- Marinate Pork: Use a fork to poke lots of holes all over the pork as deep as your fork allows. Marinate the pork for 30 minutes to 2 hours in a ziploc bag with air squeezed out. Remove the pork and marinade from the bag. Pour 1 cup (250ml) of water into the Ziploc bag and mix it with the remaining marinade sticking onto the bag.
- Pressure Cook Pork: Pour the marinade mixture in Instant Pot pressure cooker, then place the marinated pork butt meat in a steamer basket in Instant Pot. Season the marinated pork with a pinch of kosher salt on both sides. Close the lid, then turn Venting Knob to Sealing Position. Pressure cook at High Pressure for 18 minutes + 12 minutes Natural Release. Open the lid carefully.
- Apply Honey Sauce: Mix 2 tbsp (30 ml) regular soy sauce with honey in a small bowl. *Pro Tip: This sauce is to give some killer sweetness and color to the outer layer of the pork butt meat. Brush this honey sauce generously onto the pork butt meat.
- Broil Pork in Oven: Preheat oven to 450°F. Place pork in oven and broil for roughly 4 - 6 minutes per side until the honey sauce on both sides are browned with some black bits.
- Serve: Serve the tasty char siu with rice or noodles and the leftover honey sauce on the side. Enjoy~ :)

SUPER EASY INSTANT POT CHAR SIU RIBS
Make this super easy Instant Pot char siu using pork ribs and finish cooking by broiling in the oven to get a nice brown color on the ribs or finish cooking on the stove. Your choice!

- Place onion and garlic in a food processor and finely chop them. You can skip this if you use powdered onion and garlic. Mix this with the rest of the char siu sauce ingredients and transfer to a saucepan. Cook this over medium heat until sugar melted and the sauce is bubbly. Have a taste and adjust to your preference. It should be more at the sweet side. Remove from the heat
- Remove any excess fat from the ribs and remove the membrane located at the back
- Pour in 1 cup of water into the inner pot of instant pot. Place a trivet in there and place the ribs in an upright position, circling around the inner pot, with the meat side facing out. Cover the lid and press "pressure cooker" and make sure it's on high pressure. Set timer to 30 minutes if using baby back ribs. If you really want it to fall-off-the-bone tender, 40 minutes will do. For spare ribs, set timer to 35 minutes and 45 minutes for fall-off-the-bone tender.Once the timer is done, wait 10 minutes and then release pressure
- If you want to coat the sauce on the stove instead of using oven, set the cooking time to 30 minutes for baby back ribs and 35 minutes for sprare ribs. So the ribs won't fall off the bones as you stir them to coat with the sauce
- Transfer to a rimmed baking sheet lined with aluminum foil, bone side down. Brush with half of the char siu sauce all over, saving the half for after broiling
- Turn on the broiler to low. You can use high too, but I prefer low so it won't get charred too quickly. Let the ribs broil until the sauce is bubbling and have a nice brown but not burn. Remove from the oven and brush with the remaining sauce and serve
- Let the ribs rest for 10 minutes and then cut into individual ribs

Use this char siu marinade for any pork dish or boil it down to make a glaze.

- Combine the first 7 ingredients; pour into a large shallow dish. Cut roast in half; add to dish and turn to coat. Cover and refrigerate overnight. , Transfer pork and marinade to a 6-qt. electric pressure cooker. Add chicken broth. Lock lid; close pressure-release valve. - Combine water, vinegar, and liquid smoke in the pot of a multi-functional pressure cooker (such as Instant Pot®). Place rack in the bottom of the pot.
- Season baby back pork ribs with salt and pepper on both sides. Cut rack in half. Place ribs in a teepee formation onto the rack. Pour a little barbeque sauce onto each half and let run down the sides. Close and lock the lid.
- Select Meat setting according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Wait 15 minutes before releasing pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil. Place ribs onto the prepared baking pan and slather with barbeque sauce.
- Cook under the broiler for 5 minutes. Remove and immediately add more sauce.

- Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.
- Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes.
