CRISP CHICKEN BURGERS WITH LEMON MAYO



Crisp chicken burgers with lemon mayo image

4 chicken breasts
3 slices white bread , toasted
1 egg
1 tsp Dijon mustard
zest 1 lemon , juice from ½
4 tbsp reduced-fat mayonnaise
4 ciabatta buns, warm or toasted

Steps:

  • Heat grill to high. Put the chicken breasts between 2 pieces of cling film and bash with a rolling pin until they're about half their original thickness. Whizz the toast in a food processor to rough breadcrumbs, then tip out onto a plate.
  • Beat the egg and mustard together in a bowl and season. Dip the chicken into the egg, let the excess drip back into the bowl, then press into the toasty breadcrumbs. Put under the grill on a flat baking sheet and grill for about 10 mins, turning once, until golden and crisp on both sides and the chicken is cooked through.
  • Beat the lemon zest, juice and lots of black pepper into the mayonnaise. Spread some of the mayo onto the bottom halves of the buns, top with a chicken breast and salad of your choice and serve.

  • Trim 1 bunch broccoli rabe and cut into 2-inch pieces. Cook in boiling salted water until tender, 2 to 3 minutes; drain. Saute 2 sliced garlic cloves in olive oil in a large skillet until golden. Add the broccoli rabe, 1 teaspoon grated lemon zest, 1¿2 teaspoon kosher salt and a few grinds of pepper; toss. Top with shredded asiago.

1 1/2 pounds broccoli rabe, stems trimmed, then coarsely chopped
Coarse salt
1/2 teaspoon crushed red pepper flakes
3 cloves garlic, chopped
2 tablespoons extra-virgin olive oil
1 lemon, zested and juiced

Steps:

  • Bring 1-inch of water to a boil in a deep skillet. Add rabe, season with salt, and cover pan. Reduce heat to simmer and cook 10 minutes. Drain rabe.
  • Return pan to heat and saute garlic and red pepper flakes in oil over moderate heat for 1 to 2 minutes. Add rabe, coat in garlic oil. Cook rabe in garlic oil for 2 minutes and remove from heat.
  • Squeeze the juice of lemon over the pan and sprinkle in zest. Toss rabe to distribute lemon flavor and transfer broccoli rabe to serving dish.

  • Step 1 Preheat the oven to 375°F. Step 2 In a medium skillet, heat 1 tablespoon olive oil over medium heat. Add onion and sauté until tender, 4-5 minutes. Add garlic and cook until fragrant, about 1 minute more. Step 3 Transfer onion and garlic to a large bowl and let cool slightly. Stir in the cilantro, 5-spice, cayenne, mustard, salt, pepper, soy sauce, rice vinegar, and egg. Mix well to combine. Step 4 Add the ground chicken and mix to combine. Add breadcrumbs and mix just until fully incorporated. Divide meat mixture into six even portions, and form into patties. Step 5 In a large oven-safe skillet, heat the remaining 3 tablespoons olive oil over medium heat. Add the patties to the pan and cook until evenly browned, 3-4 minutes per side. Glaze both sides of each patty with 1 tablespoon sweet chili sauce, and transfer the pan to the oven. Continue to cook until the patties are fully heated through, 8-10 minutes more. Step 6 Meanwhile, prepare the broccoli rabe: in another large pan, heat olive oil over medium heat. Add garlic and reduce heat to low. Cook for 1 minute, then add the broccoli rabe and continue to cook until tender, about 5-6 minutes. Season with salt and pepper. Keep warm. Step 7 Prepare lemon mayonnaise: in a small bowl, stir the mayonnaise, lemon zest, and lemon juice together until combined. Step 8 To serve, spread mayonnaise onto each bun, then place a patty on top, followed by the broccoli rabe. Finish with the top bun, and serve immediately.

1 onion, chopped
2 teaspoons minced garlic
1 red bell pepper, chopped
1 cup fresh sliced mushrooms
1 tomato, seeded and chopped
2 carrots, chopped
2 pounds ground chicken
1 egg
½ cup fresh bread crumbs
1 tablespoon Old Bay (tm) Seasoning
kosher salt to taste
black pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion with the garlic first, then the bell pepper, then the mushrooms, tomatoes and carrots, all to desired tenderness. Set aside and allow all vegetables to cool completely.
  • In a large bowl, combine the chicken and vegetables. Add the egg, bread crumbs and seasonings to taste. Mix all together well and form into 8 patties.
  • Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.

4 large, boneless and skinless chicken thighs
2 garlic cloves , finely grated or crushed
1 tsp smoked paprika
pinch chilli flakes
thumb-sized piece ginger , finely grated
4 brioche burger buns, halved, to serve
150ml cider vinegar
75g golden caster sugar
½ tsp coriander seeds
1 tsp ground turmeric
½ Chinese cabbage or pointed cabbage, shredded
¼ cucumber , coarsely grated
3 tbsp mayonnaise
1 lime , zested and juiced
3 tbsp American mustard
2 tbsp sriracha

Steps:

  • Flatten the chicken thighs out by lightly bashing them between two pieces of baking parchment with a rolling pin, then put in a sealable container with the garlic, paprika, chilli, ginger and a pinch of salt. Massage the mix into the meat, then chill until ready to cook for at least 1 hr or up to 24 hrs.
  • To pickle the cabbage, put the vinegar, sugar, coriander seeds and turmeric in a pan and bring to the boil to dissolve the sugar. Take off the heat and stir in the shredded cabbage, ensuring it's completely immersed in the liquid. Cover and leave to cool.
  • For the relish, sprinkle the cucumber with a little salt and leave for 10 mins. Squeeze out the liquid, then stir the cucumber through the mayo and lime juice and set aside. For the glaze, mix the mustard and sriracha together in a separate bowl.
  • Heat a barbecue to medium or the grill to its highest setting. Barbecue or grill the chicken for 5 mins on one side, then flip and continue to cook, brushing with the glaze a few times until sticky, glossy and cooked through. Toast the buns, spoon some cabbage onto the base, place the chicken on top, then dollop a generous amount of the cooling cucumber relish over the chicken before closing the buns and serving.
