The pattern on these buttery, spiced speculaas cookies is created by placing a doily on top of the dough and then using a rolling pin to imprint the design in it. The thicker the doily, the clearer the imprint. The simple sugar glaze dries to a frosty finish.

3 1/2 cups unbleached all-purpose flour, plus more for dusting
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground coriander
1/8 teaspoon ground cloves
1 1/2 sticks unsalted butter, room temperature
1 cup packed dark-brown sugar
1 1/2 cups confectioners' sugar
1/4 cup whole milk, plus more if needed
1/8 teaspoon pure vanilla extract

Steps:

  • Whisk together flour, baking soda, salt, and spices. In a large bowl, beat butter with brown sugar on medium-high speed until light and fluffy, about 3 minutes. Add half of flour mixture, then 1/3 cup water, then remaining flour mixture, beating on low after each addition until just incorporated. Shape dough into 3 disks and wrap in plastic. Refrigerate until firm, at least 1 hour and up to overnight.
  • Working with one disk at a time, roll out to 1/4 inch thick on lightly floured parchment. Cover with a doily; gently roll to make an imprint. (Dough should now be about 1/8 inch thick.) Remove doily and freeze dough until firm, about 15 minutes. Cut dough first using a 5-inch snowflake-shaped cutter, then cut remaining dough using a 3-inch snowflake-shaped cutter and 1 1/2-inch snowflake-shaped cutter. Chill and reroll scraps. Arrange large cookies on one parchment-lined baking sheet and medium and small cookies on another; freeze until firm, about 15 minutes. Preheat oven to 325 degrees.
  • Bake until cookies set around edges, 16 to 18 minutes for large, 12 to 14 minutes for medium and small. Transfer cookies on sheets to wire racks; let cool completely.
  • Whisk together confectioners' sugar, milk, and vanilla until smooth. If necessary, add more milk, 1/2 teaspoon at a time, until glaze is slightly thicker than heavy cream. Dip each cookie, design-side down, into glaze, tilting to evenly coat, then transfer to rack until glaze is set, about 10 minutes. Cookies can be stored in an airtight container at room temperature up to 3 days.

1 egg

1 bag (6.25 oz) Hawaiian fruits fruit-flavored ring-shaped hard candies
1 tube (4.25 oz) Betty Crocker™ white decorating icing
Edible glitter or sanding sugar, if desired

Steps:

  • In medium bowl, stir cookie mix, butter, egg, flour and vanilla until soft dough forms. Shape dough into a ball. Cover; refrigerate 1 hour. Unwrap 16 hard candies. Crush candies and keep colors separate. Reserve remaining candies for another use.
  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper. Divide dough in half. On floured surface, roll one portion of dough to 1/8-inch thickness. Cut with 3 1/2-inch snowflake cookie cutter with a center hole. On cookie sheet, place cutouts 2 inches apart. Place 1/4 teaspoonful of crushed candies in each cutout hole, filling full. With drinking straw, poke hole close to edge of one point for attaching ribbon after baking.

1 ½ cups white sugar
3 eggs
3 ¾ cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.

1 cup granulated sugar
3/4 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
3 cups powdered sugar
4 teaspoons light corn syrup
1/4 cup hot water
1/2 teaspoon almond extract
1/8 teaspoon salt
White coarse sugar crystals (decorating sugar), powdered sugar or white edible glitter
1 cup powdered sugar
3 to 5 teaspoons water

Steps:

  • In large bowl, mix granulated sugar, butter, vanilla and eggs until well blended. Stir in flour, baking powder and salt. Cover and refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 400°F. On lightly floured surface, roll about one-third of dough 1/8 inch thick. Cut with 1 1/2 to 2-inch star-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheet.
  • Bake about 6 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Repeat with remaining dough.
  • In medium bowl, mix all glaze ingredients except coarse sugar crystals until smooth, glossy and pourable. Place cooled cookies together in pairs with about 1 teaspoon glaze, with points of top cookie between points of bottom cookie. Place cookies on cooling rack on cookie sheet to catch excess glaze. Pour 1 tablespoon glaze evenly over top and sides of each cookie, glazing only a few at time. When glaze is set but still soft, move cookies to another rack or waxed paper; sprinkle with sugar crystals. (Occasionally remove glaze from cookie sheet, and add a few drops of hot water as necessary to make glaze smooth and thin enough to pour; continue glazing.)
  • In small bowl, mix frosting ingredients to make a frosting that can be easily drizzled or used in a decorating bag, yet holds its shape. Pipe snowflake designs on cookies. Let cookies dry completely before storing.

1 cup (2 sticks) butter, softened
1 egg
2 teaspoons McCormick® Pure Vanilla Extract
Colorful Cookie Icing:
1 cup confectioners' sugar
3 to 4 teaspoons milk
1/2 teaspoon McCormick® Pure Vanilla Extract
3 to 4 drops McCormick® Assorted Food Colors & Egg Dye

Steps:

  • 1. Mix flour, baking soda, cinnamon, nutmeg and salt in medium bowl. Set aside. Beat granulated sugar and butter in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate dough 2 hours or overnight until firm.
  • 2. Preheat oven to 375 degrees F. Roll out dough on lightly floured surface* to 1/8-inch thickness. Cut into shapes with favorite cookie cutters. Place on greased baking sheets.
  • 3. Bake 8 to 10 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
  • 4. For the Icing, mix all ingredients except food colors. (Stir in additional milk to thin icing or more confectioners' sugar to thicken, if needed). Place small amount of icing into small shallow bowls, using one bowl for each color desired. Stir drops of food color into icing until desired shade is reached.
  • 5. To ice cookies, hold cookie by its edge and dip top of cookie into icing. (Or spoon the icing onto cookie using a teaspoon.) Place iced cookies on wire rack set over foil-covered baking sheet to dry. (The foil-covered baking sheet will catch drips.) To add decorative details to cookies, spoon tinted icing into resealable plastic bag. Snip off a tiny piece of the corner. Squeeze icing through hole in plastic bag to decorate cookies. If desired, Colored Sugar may be sprinkled onto freshly iced cookies.
  • For the variations below, omit the cinnamon and the nutmeg. Use the following extract in place of the vanilla extract in the cookies:
  • Almond Holiday Sugar Cookies: Use 1 teaspoon McCormick® Pure Almond Extract.

In another bowl, whisk flour and salt; gradually beat into creamed mixture., Divide dough into three portions. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Number Of Ingredients 12

1 1/2 cups sifted all purpose flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
1 large egg
2 teaspoons vanilla extract
Powdered sugar

Steps:

  • Sift flour, baking powder, spices and salt into medium bowl. Using electric mixer, beat butter in large bowl until light. Gradually beat in 3/4 cup sugar. Beat in egg and vanilla extract. Gradually beat in dry ingredients. If dough is too soft to mold, refrigerate until firm enough.
  • Spoon dough onto large sheet of plastic wrap. Roll into 7-inch-long, 2 1/4-inch-diameter log. Wrap tightly. Cover and refrigerate overnight.
  • Preheat oven to 350°F. Grease 2 large baking sheets. Unwrap dough and cut into 1/4-inch-thick slices. Place on baking sheets, spacing slices 1 inch apart. Bake until light golden brown, about 12 minutes. Transfer cookies to rack and cool. (Can be made 1 week ahead. Store in airtight container at room temperature.)
  • Place doilies or stencils atop cookies. Sift powdered sugar over. Carefully remove doilies or stencils and serve.

1/2 cup confectioners' sugar
1 teaspoon cinnamon
1 cup plus 2 tablespoons all-purpose flour
2 large eggs, beaten lightly
2 tablespoons granulated sugar
vegetable oil for deep-frying

Steps:

  • In a small bowl with a fork stir together the confectioners' sugar and the cinnamon until the mixture is combined well. In a bowl with a fork blend the flour, the eggs, the granulated sugar, and a pinch of salt until the mixture forms a dough. On a lightly floured surface knead the dough until it is soft and elastic, roll it out slightly less than 1/4 inch thick, and cut into 2-inch squares. Make a 1-inch slit through the center of each square and pull one corner of the square through the slit.
  • In a heavy kettle heat 3 inches of the oil until it registers 375°F. on a deep-fat thermometer and in it fry the cookies in batches for 1 minute on each side, or until they are pale golden. Transfer the cookies as they are fried with a slotted spoon to paper towels to drain and, while they are still warm, sprinkle them with the cinnamon sugar.

Add the confectioners' sugar, milk, and extracts; beat until smooth. Spread over cooled cookies.
