1/3 cup barbecue sauce
4 lamb loin chops (1 inch thick and about 6 ounces each)

Steps:

  • In a small saucepan, combine the orange juice concentrate and barbecue sauce. Cook and stir over medium heat for 3-4 minutes or until heated through; set aside 1/3 cup for serving. Spread remaining sauce over both sides of lamb chops. Place on a broiler pan. , Broil 4-6 in. from the heat for 4-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 1 cup white wine (or more olive oil)

  • Pre-heat a large sauté pan with olive oil.   • In a bowl, combine your spices (paprika, cayenne pepper, garlic powder, black pepper, and salt).
  • Rub the pork chops in the spices generously.
  • Heat olive oil in an oven-safe skillet over medium/high heat. When the oil is hot, add the pork chops. 1 (3 pound) boneless turkey breast roast, thawed
½ cup pure maple syrup, or more as needed
1 teaspoon liquid smoke flavoring
1 teaspoon ground paprika
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried crushed thyme
1 pinch cayenne pepper, or to taste

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Remove the plastic netting and wrap from the turkey roast, if any, but leave on string netting. (Remove and discard gravy packet, if any). Rinse the turkey, and pat dry with paper towels.
  • Mix together the maple syrup, smoke flavoring, paprika, salt, pepper, garlic powder, onion powder, thyme, and cayenne pepper in a bowl, stirring to combine well. Brush the syrup mixture all over the turkey roast.
  • Place the roast, skin side up, on a baking rack set in a roasting pan. Roast in the preheated oven, basting occasionally, until the roast is golden brown and a meat thermometer inserted into the center of the roast reads 170 degrees F (75 degrees C). Roasting time is about 1 1/2 hours. Wrap the roast in foil, and let stand 10 minutes before removing the string netting for slicing.

Zest of 2 oranges
1 cup maple syrup or honey
3 tablespoons coarse salt
1 tablespoon molasses
1 large onion, sliced
2 bay leaves
20 whole peppercorns
1 bulb garlic, cloves separated but unpeeled
1/2 cup grated fresh ginger
1 tablespoon mustard seeds
6 turkey chops, cut 1 inch or more thick
Olive oil
1 shallot, minced
1/2 cup maple syrup
1/4 cup balsamic vinegar
2 cups chicken or veal stock
1 tablespoon unsalted butter

Steps:

  • For the chops, in deep glass dish large enough to hold all the chops, combine all ingredients but the chops and oil. Add 6 cups boiling water, mix well, and cool.
  • Add chops to cooled brine, cover, and refrigerate for 48 hours.
  • For the glaze, combine all ingredients but butter in saucepan, and bring to boil over medium-high heat. Cook until mixture reduces to almost a syrupy consistency, for 20 to 25 minutes. Set aside.
  • Prepare grill, indoors or out. Remove chops from brine; dry with paper towels.
  • Bring brine to boil in saucepan; set aside.
  • Brush chops generously with oil. Sear on both sides on grill, and then cook away from hottest part of grill, turning to cook both sides. Brush chops often with brine to keep moist. Cook for 15 to 20 minutes, or until all the pink is gone.
  • Just before the chops are cooked, warm the glaze slightly; whisk in the butter. Brush over the chops; serve with cranberry relish or compote.

4 tablespoons butter, plus 12 tablespoons melted
1 cup diced onion
1/2 cup diced carrots
1/2 cup diced celery
2 tablespoons chopped fresh parsley leaves
1 teaspoon chopped fresh sage leaves
8 ounces roasted, peeled and coarsely chopped chestnuts
2 apples, peeled cored and diced
1/2 cup dried cranberries
1 cup sauteed mushrooms
1 1/2 pounds sourdough bread, crusts removed, cut into 1-inch cubes and toasted
2 eggs, lightly beaten
1 cup chicken stock
Kosher salt and freshly ground black pepper
1 (22-pound) fresh turkey, giblets removed, rinsed well inside and out, patted dry
2 sticks butter, softened, divided
2 cups brown sugar, divided
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/2 cup dark rum
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • In a large skillet over medium-high heat, melt 4 tablespoons of the butter. Add onions, carrots and celery and saute until tender. Transfer to a large mixing bowl and toss with parsley, sage, chestnuts, apples, dried cranberries, mushrooms and bread. Pour eggs, stock and remaining 12 tablespoons of melted butter over, season with salt and pepper and toss again well. If the stuffing is too dry add a bit more stock or water. It should not be saturated or soggy, though.
  • Place the turkey on a rack in a roasting pan. Rub the cavity opening with salt and pepper. With your fingers, carefully separate as much of the turkey's skin from the breast, as you can, trying not to puncture any holes in the skin as you go.
  • In a small mixing bowl stir together 8 tablespoons of the softened butter with 1 cup of the brown sugar. Smear about half of the softened butter and sugar mixture over the breast under the skin. Rub the remaining butter and sugar mixture all over the turkey.
  • Loosely stuff the turkey with the cooled chestnut stuffing. If there is extra stuffing bake it in a buttered baking dish next to the turkey in the oven.
  • Roast the stuffed turkey about 3 to 3 1/2 hours, basting often during the last hour of cooking with the buttered rum glaze, or until an instant-read thermometer inserted into the thickest part of the turkey leg registers 155 degrees F; it will continue cooking for another 20 minutes or so out of the oven. If the turkey skin starts to get too dark, tent it with foil while it roasts.
  • While turkey is cooking, in a small saucepan combine remaining 8 tablespoons of the butter with 1 cup of the brown sugar, ground cinnamon, freshly ground nutmeg, dark rum and a little salt and pepper. Bring to a boil then lower and simmer for 10 minutes until slightly thickened and syrup-like, stirring often.
  • Transfer the turkey to a carving board to rest and loosely tent with foil and allow to cool. Brush the outside of the turkey with syrup mixture to get a glazed look.

1 medium onion, sliced 1/4 inch thick

Steps:

  • Season the turkey legs with the remaining salt and the fresh-ground pepper.

1 package (14 ounces) unseasoned stuffing cubes
1 small onion, chopped
1 medium tart apple, peeled and chopped
1 celery rib, chopped
1 cup raisins
1 cup hot water
1 cup butter, melted
1 tablespoon poultry seasoning
1 turkey (10 to 12 pounds)
FRUIT GLAZE:
2 cans (8 ounces each) unsweetened crushed pineapple
1 can (11 ounces) mandarin oranges
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
GRAVY:
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the first eight ingredients. Loosely stuff into turkey just before baking. Place remaining stuffing in a greased 1-qt. baking dish; cover and refrigerate until ready to bake. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Bake, uncovered, at 325° for 1 hour., Meanwhile, in a blender, combine the glaze ingredients; cover and process until smooth. Cover and refrigerate 1 cup for gravy. Brush turkey with some of the remaining glaze. Add 1/2 in. of hot water to the roasting pan. , Bake 2-1/2 to 3 hours longer or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting two to three times with glaze and occasionally with pan drippings (cover loosely with foil if turkey browns too quickly). Discard any unused basting glaze., Cover and bake additional stuffing, for 30-40 minutes. Uncover; bake 10 minutes longer or until lightly browned. Cover turkey and let stand for 20 minutes before removing stuffing and carving turkey., For gravy, loosen browned bits from the roasting pan. Pour pan drippings and browned bits into a bowl. Skim fat, reserving 1/4 cup. In a 2-cup measuring cup, combine pan drippings and enough water or broth to measure 2 cups. , In a large saucepan, combine the flour, salt and pepper; gradually whisk in the reserved 1/4 cup fat and dripping mixture until blended. Cook and stir over medium-high heat until thickened and bubbly. Stir in the reserved glaze. Bring to a boil, cook and stir for 2 minutes or until thickened. Serve with turkey.,
