The best gluten-free molasses cookies are soft and chewy, filled with the flavors of cinnamon, ginger and cloves, dipped in sugar, and, of course, gluten free! These cookies taste just like classic molasses cookies but use Betty Crocker™ All-Purpose Gluten Free Rice Flour Blend, a great all-purpose substitution for wheat-based flour. This recipe makes almost 50 cookies, enough to bring to a holiday cookie exchange or perfect for enjoying them at home and freezing the leftovers for later.

1 cup packed brown sugar
3/4 cup shortening
1/4 cup molasses
1 egg
2 2/3 cups Betty Crocker™ All-Purpose Gluten Free Rice Flour Blend
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon xanthan gum
1/4 teaspoon salt
3 tablespoons granulated sugar

Steps:

  • Heat oven to 350°F. In large bowl, mix brown sugar, shortening, molasses and egg with spoon. Stir in remaining ingredients except granulated sugar.
  • Shape dough by rounded teaspoonfuls into 48 (1-inch) balls. Roll in granulated sugar. Place on ungreased cookie sheet 2 inches apart.
  • Bake 9 to 12 minutes or until set and cookies appear dry. Let stand 1 minute; remove from cookie sheet to cooling rack.

In an attempt to find some kind of "goodie" I could eat, I meshed a few recipes I found online together and came up with this one. Be forewarned, this is not a sweet cookie. For the oil I used coconut oil.

3 cups almond flour
1/2 teaspoon salt
1 teaspoon baking soda
2 tablespoons ground ginger
1/4 cup oil
1/4 cup molasses
1/2 cup maple syrup
1 tablespoon fresh lemon zest

Steps:

  • In large bowl combine flour, salt, soda and ginger.
  • In medium bowl combine oil, molasses, maple syrup and lemon zest.
  • Mix wet ingredients into dry.
  • Refrigerate dough for 1/2 - 1 hour.
  • Scoop 1 tablespoon of dough onto parchment lined baking sheet or onto a baking stone.
  • Bake at 350 degrees for 7-10 minutes or until tops start to crack.
  • Cool and serve.

  • Add flour, baking soda, cinnamon, ground ginger, ground cloves, and salt to a medium-sized bowl then whisk to combine. Set aside.
  • Add softened butter and brown sugar to the bowl of an electric mixer, or a large glass bowl if using a handheld mixer, then beat until light and fluffy. Scrape down the sides of the bowl then add egg, molasses, and vanilla and then beat until smooth.
  • Scrape down the sides of the bowl then add dry ingredients in two batches, mixing until just combined before adding the second batch. Refrigerate dough until firm - several hours or overnight.
  • When you're ready to bake, let the dough sit at room temperature while the oven preheats to 375 degrees - this let's the dough soften just enough to roll. Line a half sheet pan with parchment paper, then add granulated sugar to a bowl.
