FLOURLESS OATMEAL BANANA BREAD
Flourless Banana Bread made with oats! No oil, butter, refined sugar or flour.

Steps:
- Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
- Place the rolled oats in a blender and blend on medium speed until a flour forms (this only takes about 20 to 30 seconds. Remember, it is fine if the flour is somewhat gritty). Transfer the oat flour to a mixing bowl.
- Add the coconut sugar, baking soda, sea salt and cinnamon and stir together until combined.
- Mash the bananas in a separate mixing bowl then whisk in the eggs and vanilla extract.
- Stir the dry ingredients into the bowl with the wet ingredients. Add in the lime juice and stir to incorporate.
- Transfer the batter to the parchment-lined loaf pan and smooth into an even layer. If desired, sprinkle some whole quick oats on top for looksies.
- Bake for 40 to 45 minutes, until banana bread has risen substantially and the top appears firm.
- Remove from the oven and allow bread to cool at least 30 minutes. Tug on the edges of the parchment paper to lift the loaf out of the pan and place it on a cutting board. Cut thick slices and enjoy!

- Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened., Transfer to two greased 8x4-in. loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pans to wire racks.

GLUTEN-FREE BANANA OAT BREAD
Steps:
- Preheat oven to 350°F.
- Grease and flour 9"x5" loaf pan; set aside.
- Cream together the butter and sugar until well combined.
- Add bananas, eggs, vanilla, lemon juice, milk and chopped pecans (optional); mix until well combined.
- In a separate bowl, sift together the flour, 1 cup of oats, baking soda, cinnamon and salt.
- Add dry ingredients to the bowl with the bananas; mix until just combined. (Tip: Do not overmix at this stage!)
- Pour batter into greased loaf pan. Sprinkle remaining 2 Tbsp of oats evenly across top of batter.
- Bake at 350°F for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out mostly clean.
- Let bread cool before removing from pan.

GLUTEN-FREE BANANA OAT BREAD
My son has celiac disease. I have slowly experimented with his favorite recipes to create gluten-free versions that are also yummy enough for the non-celiacs to enjoy. This banana bread is extremely close to the original. Everyone gobbles it up, despite the pecans, which I add for a little extra nutrition.

- Preheat oven to 350 degrees.
- Spray or prep 1-2 loaf pans. (My family prefers thin bread, so I make this into 2 loaves).
- In small bowl, combine oats & applesauce, set aside.
- In large bowl, mix butter & sugar together. Add eggs, bananas, vanilla, cinnamon & nutmeg.
- In small bowl, mix dry ingredients (flour, baking powder, xanthan gum).
- Add oats & applesauce to wet ingredients, combine well.
- Add dry ingredients to wet ingredients, stir just until combined.
- Fold in pecans, if using.
- Pour batter into prepared pan(s).
- Bake 35-45 minutes (less for 2 small loaves, more for one large loaf).

- Preheat the oven to 350 degrees. Spray a loaf pan with non-stick baking spray or line with parchment paper and set aside.
- In the bowl of your stand mixer, beat the brown sugar and butter until combined. Add the eggs and vanilla. Next, add the mashed bananas. Mix until well combined.
- In a medium bowl whisk together the oats, flour, baking powder, and baking soda. Alternately add the dry ingredients and the milk to the mixer. Add chocolate chips and/or walnuts, if using.
- Spoon the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted in the center of the bread comes out clean. Cool the bread in the pan on a cooling rack for 15 minutes, then remove it from the pan and allow to finish cooling on the rack before serving.

- Preheat the oven to 350 °F and line and grease a 2-pound loaf pan (8.5 inches x 4.5 inches).
- Whisk together 120 grams rolled oats, 120 grams almond flour, 30 grams pumpkin seeds, 25 grams ground flaxseeds, 20 grams hemp seeds, 2 teaspoons baking soda, 1 teaspoon ground cinnamon, and ½ teaspoon salt in a large mixing bowl and set aside.
- In another large mixing bowl, whisk together 60 grams Greek yogurt, 3 eggs, 7 tablespoons honey or maple syrup, and 2 mashed bananas.
- Pour the wet ingredients into the dry ingredients and mix together until fully combined. Remember not to overmix.
- Transfer the batter to the prepared loaf pan and arrange the extra banana on top. Bake in the oven for 1 hour.
- Once baked, remove the banana bread from the oven and cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
- Slice and serve!
