1 cup natural cocoa powder ((3 ounces; 85 grams))
2 teaspoons baking powder
1 teaspoon salt
½ teaspoons baking soda
1 cup milk or coffee ((8 ounces; 226 grams))
½ cup vegetable oil ((3 ½ ounces; 100 grams))
3 large eggs ((about 6 ounces; 170 grams out of shell))
4 cups powdered sugar ((16 ounces; 453 grams))
½ cup natural cocoa powder ((1 ½ ounces; 42 grams))
1 cup butter, softened ((8 ounces; 226 grams))
4 tablespoons milk, divided ((2 ounces; 56 grams))
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare your pan(s). Lightly grease: two 8" round cake pans OR one 9", x 13" pan with nonstick cooking spray OR line 24 standard cups with paper liners.
  • Whisk together gluten-free flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Add milk, vegetable oil, and eggs. Whisk batter until smooth.
  • Divide batter evenly between the two 8-inch prepared round cake pans OR spread evenly into 9 x13-inch pan OR fill muffin cups about ⅔ full.
  • Bake until a cake tester inserted into the center of the cakes comes out clean.For 8-inch round cakes: about 30 minutes.For 9x13-inch pan: about 40 minutes.For cupcakes: about 22 minutes.
  • Allow cakes to cool in the pan for 10 minutes. Remove cake from the pan and place on a wire rack to cool.
  • When cool, frost with chocolate frosting. Wrap cake and store at room temperature for up to three days.
  • Cream butter until light and fluffy. Add powdered sugar, cocoa powder, salt, and milk. Mix on low speed for about 30 seconds. Increase mixer speed to medium-high. Beat frosting until fluffy and smooth. If frosting seems too thick, add the additional tablespoon milk.

1 cup (220g) caster sugar
1/2 cup (50g) light brown sugar
1 1/4 cup (210g) fine white rice flour
3/4 cup (75g) dutch processed cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda

1 cup (250ml) milk of choice ((I tested full cream lactose free and soy))
1 tablespoon apple cider vinegar ((see substitution notes))
3/4 cup (180ml) vegetable oil ((see substitution notes))
3 tablespoons fresh espresso ((see substitution notes))
2 teaspoons vanilla bean paste ((see substitution notes))
2 extra large eggs
1 cup (250ml) boiling water
185 g butter
1 1/2 cups of icing sugar
3/4 cup of cocoa
1/2 cup of milk
1/2 teaspoon vanilla bean paste ((optional))
Pinch of fine salt

Steps:

  • Preheat the oven to 180 degrees Celsius or 356 Fahrenheit. Grease and line two 20cm baking pans.
  • In a large bowl, weigh out all your dry ingredients (do it!) and whisk together until they become a lovely chocolate brown.
  • Mix the milk with the apple cider vinegar and allow to sit for a few minutes. This will form a buttermilk. It might not curdle dramatically but the buttermilk will assist in flavour development, leavening and general fluffiness.
  • Add all the wet ingredients except the boiling water to the dry. Continue whisking until a smooth batter has formed. It will look moist enough to go into the oven and you might think you don't need the water. You do! It blooms the cocoa, developing the chocolate flavour. It also creates a beautifully fluffy cake.
  • Add the boiling water and whisk to combine. Pour the mixture into the prepared cake tins and bake for 30-40 minutes or until cooked through.
  • Place the butter in a small saucepan and brown very well over a low-medium heat. If you haven't browned butter before, see the notes section for some handy links.
  • Once browned, pour the butter into a silicon cake tin and place in the fridge or freezer to set. It will take about 15-20 minutes in the freezer.
  • Once the butter is completely cooled, break it up and place it in the bowl of your stand mixer. Beat the butter with the whisk attachment until it is light and fluffy, scraping down the sides as necessary. Don't be fooled - this isn't a quick process. It will take about 10-15 minutes of beating and scraping down. The mixture should be light and fluffy - not quite white but a very pale beige.
  • While this is happening, sieve the icing sugar and the cocoa together. I hate sieving so I wouldn't instruct you to do this unless it was totally necessary for a smooth icing, I promise.
  • When the butter is ready, turn the speed to low and mix in the icing sugar mixture and the milk. It might form a cloud of icing if you go too quickly. Add the salt and vanilla bean paste (stop the machine to add vanilla or it gets tangled in the beaters) and mix until combined. Taste and adjust if necessary.
  • Once the cake has completely cooled, it's time for icing! You can either plonk it all on top or carefully slice the cake in half to ice between each layer. The recipe makes enough icing for a reasonably thin layer between each piece. As the notes suggest, halve it again or even double it if you're a very thick icing kinda person.
  • Use an offset spatula or a flat edged knife the spread the icing over the cake. I find it helps to dip your knife in boiling water and dry it off before icing the crummy sections of the cake. The heat makes the knife glide over the top and avoids picking up too many crumbs.
  • While it's tempting to keep fiddling with the icing all day, simple is best. Get in there, ice it with confidence and move on, you know?
  • This cake keeps well in the fridge for a few days.

This fast recipe could easily be made with regular chocolate box mix, but I like to make it for my friends with celiac using gluten-free mix. It takes all the guess work out of converting your favorite chocolate cake recipe to use gluten-free flour. Since cocoa powder is GF, it's is the way to go if you need a GF option - use it to flour the pans instead of all-purpose flour.

Nonstick cooking spray
2 tablespoons unsweetened cocoa powder, plus more for dusting pans
One 1-pound package gluten-free chocolate cake mix, preferably Bob's Red Mill
One 3.9-ounce package instant chocolate pudding
3/4 cup water
1/2 cup vegetable oil
8 ounces sour cream
4 large eggs
1 cup chocolate chips
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 pound confectioners' sugar
4 to 6 tablespoons milk
1/2 cup unsweetened cocoa powder
Pinch sea salt
1 1/3 cup semisweet chocolate, melted, cooled

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray three 6-inch cake pans with cooking spray. Line each pan with parchment paper rounds. Spray the parchment paper and dust cocoa powder over the pan and paper. Tap the pan over a sink or trash can to get rid of excess powder.
  • Whisk together the cake mix, pudding mix, water, oil and sour cream in large bowl. Add the eggs one at a time, whisking until full incorporated after each addition. Toss the chocolate chips with the cocoa powder in a small bowl. Fold the chocolate chips into the batter.
  • Divide the batter evenly among the prepared pans. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Allow to cool in the pans on a wire rack for 10 minutes, then turn the cakes over onto the wire rack to cool completely.
  • For the chocolate buttercream frosting: Add the butter to the bowl of a stand mixer fitted with a paddle attachment and stir on low speed until combined. Gradually add the confectioners' sugar alternating with the milk until incorporated. Gradually add the cocoa powder, salt and melted chocolate and mix until combined. Add to a large piping bag and tie off with a rubber band.
  • Place the first cake layer on a 6-inch cardboard round and place on a rotating cake stand. Pipe a layer of about 1/2 cup buttercream on top and use an offset spatula to spread into an even layer. Place the second cake layer on top of the buttercream and pipe another 1/2 cup buttercream on top. Spread into an even layer, then top with the third cake layer.
  • To apply a crumb coat, pipe about 2 cups buttercream on the top and sides of the cake and use an offset spatula or bench scraper to make smooth. Remove excess buttercream and scrape into a bowl. Transfer the cake to the refrigerator and chill for 30 minutes.
  • Remove the chilled cake from the refrigerator. Pipe about 2 tablespoons buttercream onto the center of a 12-inch cake drum or plate; this will help hold the cake in place while you frost. Place the cake drum on a rotating cake stand. Place the cake on top of the buttercream.
  • Pipe 2 to 3 cups buttercream up the sides and top of your cake, smoothing the edges with a bench scraper. Scrape excess buttercream into a bowl to keep the bench scraper clean.

I've also made a vegan option of this by using egg substitute and replacing the milk with almond milk. The taste and texture was identical to my non-vegan original! Either version stores well in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month. My favorite frosting for this cake is coconut cream cheese.
