VEGAN MAPLE DONUTS



Vegan Maple Donuts image

These cake-like vegan maple donuts are perfectly spiced and come with a maple glaze that is simply amazing. Perfect for breakfast or dessert!

1/2 tbsp apple cider vinegar
1/2 cup unsweetened dairy free milk ((we used almond milk, see post for allergy notes))
1 cup flour
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/2 cup brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp unsweetened applesauce
2 tbsp vegan butter, (melted)
1 1/2 tsp vanilla
2 tbsp vegan butter, (melted)
1/3 cup maple syrup
1 pinch salt
1 cup powdered sugar

Steps:

  • Combine the apple cider vinegar and milk in a bowl. Let sit for 10 minutes. This makes vegan buttermilk.
  • Preheat oven to 350 degrees. Grease two donut pans. We used these donut pans .
  • Add all the dry ingredients in a bowl and whisk together.
  • Once buttermilk is ready, add in the wet ingredients in with dry and mix well.
  • Pour batter into greased pans, a little over half full.
  • Bake for 8-10 minutes or until cooked thoroughly.
  • Make glaze while you wait.
  • Whisk together your melted butter, maple syrup and salt.
  • Add in a little powdered sugar at a time, whisking after each addition until a smooth glaze forms.
  • Remove donuts from oven. Let cool for 10 minutes. Dip donuts into the glaze.
  • Serve immediately or let cool completely and store in an air tight container.

¾ cup + 2 tablespoons all-purpose gluten free flour blend (Bob's Red Mill and Ryze work)
2 tablespoons dark brown sugar
2 tablespoons sugar
3/4 teaspoon gluten-free baking powder
1/4 teaspoon salt
1 large egg, room temperature
6 tablespoons (1/4 cup + 2 tablespoons) dairy-free milk
3 tablespoons oil
1 teaspoon gluten-free vanilla extract
2 tablespoons maple syrup
1/4 cup powdered sugar
1 tablespoon dairy-free milk

Steps:

  • Preheat oven to 350°F. Grease a 1 six-serving donut pan; set aside
  • In a medium mixing bowl, combine flour, sugars, baking powder, and salt.
  • Add the egg, dairy-free milk, oil, and vanilla. Mix just until combined.
  • Spoon batter into a large zip lock back and cut a half-inch off one corner. Squeeze batter into each donut well, filling 2/3rds full. Don't overfill.
  • Bake for 12 to 14 minutes or until set.
  • For the glaze, mix maple syrup, powdered sugar and dairy-free milk in a small mixing bowl. Microwave for 20 seconds, then stir again.
  • Dip the tops of each donut into the glaze.
  • Store in an airtight container for up to three days, or in the freezer for up to 1 month.
