Gluten-Free Homemade Chicken Nuggets image

Easy homemade baked gluten-free chicken nugget recipe that is seasoned perfectly and has just the right amount of crust. Made in just 30 minutes. Both Daddy and kid approved!

3/4 cup Bisquick Gluten Free mix (If you don't have gluten-free Bisquick you can make your own, see the link in the post above.)
1/2 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon salt or garlic salt
2 chicken breasts (cut into nugget size)
1 egg (slightly beaten)
3 tablespoons butter (melted)

Steps:

  • Preheat oven to 450 degrees.
  • Spray baking sheet with gluten-free cooking spray.
  • Place the gluten-free Bisquick mix, parmesan cheese, paprika, and garlic salt in a large plastic storage bag.
  • Cut chicken breasts into nugget size pieces. An easy way to cut chicken breasts into nugget size pieces is to cut the chicken breasts in half and then in half again. Cut the chicken quarter pieces into nugget size pieces.
  • Place the chicken pieces in the bowl of beaten egg. Stir the chicken until the pieces are fully covered in egg.
  • Place the egg covered chicken pieces into the plastic storage bag with the gluten-free Bisquick mixture. Turn the bag over and over again until the chicken pieces are fully coated with the gluten-free Bisquick mixture.
  • Melt the butter in a glass measuring cup or small microwave-safe dish.
  • Place the coated chicken on the greased baking sheet. Drizzle melted butter over the chicken.
  • Bake for 20 minutes and until golden brown.
  • Serve with your favorite dipping sauce and enjoy!

This is a mild-tasting chicken nugget designed for a 2-year-old. Some additional seasoning added to the Chex® should give it a more 'grown up' flavor.

2 cups bite-size corn square cereal (such as Corn Chex®)
2 eggs
⅓ cup rice flour
4 skinless, boneless chicken breast halves, cut into bite-size pieces
¼ cup oil for frying, or as needed

Steps:

  • Blend cereal in a blender or food processor until it has the consistency of bread crumbs; pour into a bowl.
  • Beat eggs in a separate bowl until smooth. Pour rice flour into a third bowl.
  • Dredge chicken pieces in the rice flour, dip in beaten egg, and then press into the cereal to coat. Keep breaded chicken on a large plate until all are finished, but do not stack.
  • Pour enough oil into a large skillet to just cover the bottom and heat over medium-high heat.
  • Cook chicken nuggets in hot oil until no longer pink in the center and the juices run clear, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:

  • 1. Preheat oven to 450 degrees F. Mix egg with ground chicken. 2. Form chicken into balls. Roll balls in crushed potato chips to coat. 3. Place potato chip coated chicken balls onto a baking sheet and "flatten" or "shape" into nuggets. 4. Bake nuggets in preheated oven for 20 minutes. You can flip the nuggets half way through baking if you like. Variations: Use larger amounts of chicken to make chicken burgers. Nuggets can be frozen and reheated as needed. They reheat well in the microwave or oven, but for a more authentic "McDonald's" taste, deep fry the frozen nuggets for about 5 minutes.

3 cups water
1/2 teaspoon ground coriander
1 tablespoon nutritional yeast
1/4 teaspoon garlic powder

1/2 teaspoon celery seed
1/4 teaspoon rosemary
1/4 teaspoon sage
1/2 teaspoon turmeric
1/4 teaspoon thyme
2 teaspoons corn oil

Steps:

  • Divide raw gluten into 8 pieces. Using a meat mallet, pound these pieces into the shape of boneless chicken breasts.
  • In a saucepan, combine water with all remaining ingredients to form a poultry-flavored broth.
  • Add raw gluten pieces to broth. Cook gluten in broth over medium heat for 45 minutes without boiling. Slow cooking allows the poultry flavoring to penetrate the gluten. If the broth is allowed to boil, the texture of the poultry pieces will become spongy, but if cooked slowly, it will resemble chicken breasts.
  • Poultry pieces are best when dipped in batter or flour and then fried in oil.
  • However, they can be diced or chopped immediately for use in soups or salads.
  • The poultry broth used in flavoring poultry pieces is an excellent base for soups and gravies.
  • It can be stored in the refrigerator for a week or longer and used as needed.
