Gluten Free Overnight French Toast Casserole with Cinnamon Swirl image

An easy, make ahead Overnight French Toast Casserole recipe made with gorgeous layers of gluten free bread and cinnamon swirls then topped with cream cheese icing. It's perfect for brunch year-round!

4 oz. cream cheese, room temperature
4 Tablespoons butter (1/4 cup), softened
1 ½ cups powdered sugar
½ teaspoon pure vanilla extract
2-4 Tablespoons milk
15 slices of Udi's Delicious Soft White Sandwich Bread *see notes
6 large eggs
1 cup milk
1 cup half & half
2 Tablespoons granulated sugar
1 Tablespoon pure vanilla extract
¼ teaspoon fine sea salt
¼ teaspoon ground nutmeg
2 teaspoons raw sugar, optional
1 cup light brown sugar
2 Tablespoons ground cinnamon
½ cup butter, melted

Steps:

  • To make the filling, stir together the light brown sugar, cinnamon, and melted butter until combined. Set aside.
  • Grease or butter a 9x13 inch dish. Place a single layer of bread on the bottom of the dish. Mine fit 4 whole pieces and 1 piece broken in half to fit.
  • Spread half of the cinnamon mixture over the bread, making sure to spread it all the way to the edges covering the bread evenly.
  • Add a second layer of bread then spread the remaining cinnamon mixture over the top then add the final layer of bread.
  • To make the custard, whisk together the eggs, milk, half & half, granulated sugar, vanilla extract, salt, and nutmeg until completely combined. Pour all of the custard slowly over the top of the bread, trying to get some custard over each top piece.
  • Gently press down on the top layer of bread to help it soak up the custard mixture. Cover the dish tightly with plastic wrap then refrigerate overnight.
  • When ready to bake, preheat oven to 350 degrees and let the casserole sit at room temperature while the oven is preheating. Sprinkle the top of the casserole with raw sugar, if desired.
  • Bake for 40-50 minutes or until the top is golden brown and the cinnamon is bubbling on the sides.
  • While the casserole is baking, make the icing. Use an electric mixer to beat together the cream cheese and butter until smooth. Add the powdered sugar, vanilla extract, and 2 tablespoons of milk. Beat until smooth and creamy. Stir in additional milk for a thinner icing for drizzling or serve as is to spread over individual slices of the casserole.
  • Serve the Overnight French Toast Casserole hot/warm with cream cheese icing.

1 (12.4 ounce) can refrigerated cinnamon rolls with icing (such as Pillsbury® Refrigerated Cinnamon Rolls with Icing)
1 tablespoon unsalted butter, melted
3 large eggs
¼ cup milk
1 teaspoon vanilla extract
1 teaspoon maple extract
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a 9x13-inch baking pan with melted butter.
  • Cut each cinnamon roll into 8 pieces and put into the prepared pan.
  • Mix eggs, milk, vanilla extract, maple extract, and cinnamon together in a bowl and pour over the rolls.
  • Bake in the preheated oven until golden and set, 23 to 30 minutes. Cover with packaged icing and serve.

1 loaf udi's gluten free bread
2 cups vanilla coffee creamer
1 cup milk
3 eggs
1 (8 ounce) container cream cheese (any pre-made sweet flavor )
12 slices bacon
1 -2 cup powdered sugar
4 tablespoons softened butter

Steps:

  • Thaw bread in fridge a day or two before needed if frozen.
  • Put bacon on baking sheet and cook in oven until done.
  • Butter a 9x14 baking dish.
  • Spread cream cheese onto one side of the bread. Place cream cheese side up in pan. You may need cut a couple pieces to fit into pan. Fill the whole bottom of the pan with one layer of cream cheese covered bread.
  • Cut bacon into pieces. Sprinkle half of the bacon onto cream cheese covered bread in the pan. Cover remaining slices with cream cheese and cut into cubes. Put cubed bread on top of slices, sprinkle remaining bacon on top.
  • Pour vanilla creamer on top of casserole. Beat eggs in a separate bowl with milk. Pour over casserole.
  • Let casserole soak in the refrigerator over night.
  • Preheat oven to 350. Cook about 30-40 min until liquid is solid.
  • Make icing by putting powdered sugar in a bowl and mixing in butter and a tsp of water at a time until desired consistency. About the consistency of cinnamon roll icing.
  • Pour icing on top of hot casserole and let cool about 15 minute Slice and enjoy!

  • Melt butter/Buttery Sticks and pour to cover the bottom of a 9×13 baking dish. Sprinkle enough brown sugar/coconut palm sugar to cover. Reserve approximately 1/4 cup sugar to sprinkle on top of the casserole before baking.
  • Slice gluten-free bread 1 inch thick. Lay slices on top of butter/sugar coated dish. The slices may overlap slightly, if necessary.
  • In a separate bowl, whisk together eggs/egg substitute, nog, vanilla and spices. Pour over top of the bread-lined pan, evenly coating each slice. Sprinkle remaining sugar, nuts and/or blueberries on top and cover the pan tightly with plastic wrap. Refrigerate overnight or for at least 2 hours.
