GLUTEN-FREE PEANUT BUTTER AND PEANUT BUTTER CHOCOLATE CHIP MUFFINS



Gluten-Free Peanut Butter and Peanut Butter Chocolate Chip Muffins image

Lovely mild-flavored muffins when made plain or delicious muffins that feature the classic peanut butter and chocolate combo. Be sure to warm the latter muffins before eating because nothing beats these muffins when the chocolate chips are all melty!

Number Of Ingredients 11

2/3 cup light brown sugar
¼ cup maple syrup (or honey)
1 cup peanut butter
3 large (or extra large) eggs
2 tbsp coconut oil, liquefied
1 tsp baking soda
1 1/2 tsp baking powder
1 cup finely ground almond flour (not almond meal)
½ cup oat flour, certified gluten free and made from purity protocol oats (like this one) or gluten-free flour mix (like my two-ingredient mix or your favorite mix)
1 tablespoon vanilla extract (I use homemade)
1/3 cup gluten-free chocolate chips (optional)

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Grease or line 12 muffin cups with liners.
  • In a large mixing bowl, mix wet ingredients (see notes). Stir in dry ingredients.
  • Fill muffin cups about ¾ full to almost full. (Muffins will not rise very much during baking.)
  • Bake for about 18 minutes. Let cool in muffin tin about 10 minutes before removing to wire rack.

1 (16 ounce) jar natural-style peanut butter or 1 (16 ounce) jar almond butter
1 (15 ounce) can pumpkin
1/2 cup cocoa
1/3 cup sugar or 1/3 cup sugar substitute
4 eggs
1 teaspoon vanilla
1 1/2 teaspoons baking soda
1 teaspoon apple cider vinegar
1 cup miniature chocolate chip

Steps:

  • Preheat oven to 375 degrees.
  • Prepare muffin tins with cupcake liners.
  • With mixer, blend all ingredients except chocolate chips.
  • Stir in coco late chips.
  • Spoon into 14 muffin tins.
  • Bake 15minutes. Will be slightly moist when tested with a toothpick. Do not overbake.

3 eggs 3/4 cup almond flour 1/4 cup coconut flour 1/4 cup cocoa powder 1/2 cup maple syrup 1/4 cup melted ghee or butter 1/4 cup Peanut butter 1/4 cup chocolate chips1 tsp baking powder

Steps:

  • In a mixing bowl, whisk the eggs
  • Then add in everything besides the chocolate chips
  • Mix together well
  • Fold in the chocolate chips
  • Add to batter to a muffin tin lined with muffin liners.
  • Add batter about 3/4 of the way.
  • Makes 7 muffins.
  • bake at 350F for 27-28 minutes.
  • Remove form the oven and top with more chocolate chips and Pb
  • Let cool then completely and enjoy!
