2 cups Bisquick™ Gluten Free pancake and baking mix
⅔ cup milk
3 eggs
1 (14 ounce) jar pizza sauce
1 (7 ounce) package sliced gluten-free pepperoni
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Heat oven to 375 degrees F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, cut shortening into Bisquick mix with fork until particles are size of small peas. Stir in milk and eggs until soft dough forms. Drop half of dough by spoonful* evenly in bottom of baking dish (dough will not completely cover bottom of dish).
  • Drizzle about 1 cup pizza sauce over dough. Arrange half of the pepperoni slices evenly over sauce. Top with 1 cup of the cheese. Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.
  • Bake 22 to 26 minutes or until golden brown, biscuits in center are cooked and cheese in center is bubbly.

1-1/2 cups almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 large egg
1 tablespoon grapeseed or olive oil
1/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
1/2 cup pizza sauce
1 garlic clove, minced
1/2 cup julienned roasted sweet red peppers
1/4 cup sliced ripe olives
1 cup shredded part-skim mozzarella cheese
17 slices turkey pepperoni

Steps:

  • In a small bowl, mix the almond flour, salt and baking soda. In another bowl, whisk egg and oil; stir into dry ingredients. Press onto a 12-in. pizza pan coated with cooking spray; build up edges slightly. Bake at 350° for 8-10 minutes or until edges are lightly browned., Meanwhile, in a large skillet, cook and stir sausage and onion over medium heat for 4-6 minutes or until sausage is no longer pink. Spread pizza sauce over crust; sprinkle with garlic. Top with the sausage mixture, red peppers, olives, cheese and pepperoni. Bake 18-20 minutes longer or until cheese is melted.

Cheesy, versatile, cheesy, easy, cheesy, fast, and did I mention cheesy? This scrumptious pizza-quesadilla hybrid is our new favorite easy weeknight meal.

2 8- inch flour tortillas
3/4 cup shredded mozzarella cheese
1/2 cup shredded fontina cheese
1/2 cup shredded provolone cheese (or about half of a one-ounce slice)
1/4 cup shredded Parmesan cheese
1/4 cup pizza sauce plus additional sauce for dipping
Optional pepperoni
1/4 cup sliced pepperoni per quesadilla

Steps:

  • Lay a tortilla flat, and on the bottom half only, spread 2 tablespoons pizza sauce. Sprinkle half the mozzarella, fontina, provolone, and Parmesan cheeses. Repeat with second tortilla. Evenly lay the pepperoni over the cheese, if using.
  • Carefully fold the top half over to create a half-moon shape.
  • Place the in a pre-heated panini press and cook until cheese is melted and outside is golden-crisp. Alternately, cook in a saute pan drizzled with vegetable oil or canola oil over medium-high heat, carefully flipping occasionally, until the cheese is melted and both sides are golden-brown.
  • Cut into wedges and serve with additional pizza sauce for dipping.

In my quest for gluten-free, yeast-free pizza, I'm always trying different things to get that pizza taste that I crave but can't have. One day a few months ago I was really craving pizza while I was at the grocery store, so I bought some pizza sauce, turkey pepperoni and mozarella cheese and this is what I came up with. Not quite the same thing as the pizza I remember, but a pretty close second and it's ready in a pinch! Note: I've also made this with Italian turkey sausage or just plain cheese depending on my mood.

1 tortilla (I use Food 4 Life's Brown Rice Flour Tortillas)
2 tablespoons pizza sauce (WalMart's Great Value brand is GF)
8 slices turkey pepperoni (Hormel brand is GF)
1/4 cup 2% mozzarella cheese (Kraft)
cooking spray

Steps:

  • Spread one half of the tortilla with the pizza sauce.
  • Top with half of the cheese.
  • Top with pepperoni.
  • Top with remaining cheese.
  • Fold top over.
  • Heat a grill pan over medium high heat.
  • Spray with oil.
  • Place quesadilla on grill pan.
  • Cook for 5 minutes and flip.
  • Cook for about 2-3 more minutes or until cheese is melted.
  • Cut into wedges and enjoy!

2 flour tortillas
2 tablespoons pizza sauce or 2 tablespoons any type spaghetti sauce
8 -12 pepperoni slices
2 slices provolone cheese
mozzarella cheese
parmesan cheese
minced garlic
crushed red pepper flakes

Steps:

  • Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
  • Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
  • Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
  • Sprinkle mozzerella cheese (not very much) over all ingrediants.
  • Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
  • Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
  • Place in oven (set for 450 degrees) and wait about 10 minutes.
  • Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
  • Cut into four triangles, and enjoy!

Steps:

  • Heat a skillet over medium heat and fry the pepperoni until crisp - transfer to a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce.
  • Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni. Sprinkle another layer of cheese and place the other tortilla on top, sauce side down.
  • Preheat a greased skillet over medium heat.
  • Gently place quesadilla in the pan and cook for 3 to 5 minutes on each side, until cheese is melted and tortillas are crispy.
  • Slice into quarters and serve with a bowl of warm pizza sauce.
