- Heat the oven to 450 degrees and grease a glass or stone 9×13″ baking dish with clarified butter. Pat the cod fillets dry and season with salt and pepper (I prefer white pepper on fish, but use it sparingly). Place the fillets in the baking dish. In a small bowl toss the cracker crumbs with HALF of the dill and HALF of the parsley. In another small bowl, combine the mayo, mustard, 1 tsp. of the lemon juice, the remaining dill and parsley and the cayenne. Mix well. Spread the mayo mixture on the top of each fillet. Press the crumb mixture into the mayonnaise, making sure they adhere. Bake until the crumbs are golden brown and all but the very center of fish has turned from translucent to opaque, about 15 minutes. Spritz each fillet with remaining lemon juice and serve with lemon wedges if desired.

- Trim fish, then season on both sides. Heat oil in a pan (which can be transferred to the oven.) Fry steaks on one side until crisp underneath. Using a pastry brush, paint Maille® Dijon Originale mustard over the top side of the cod.
- Place in a pre-heated oven at 400 degrees F for around 5 minutes, depending on thickness.
- Sprinkle with chopped parsley and serve.

This comes from a Costco Cod package from Copper River Seafoods in Alaska. We like to bake our fish, so this is one of our favorites. Most ingredients are on hand like; mayonnaise, Dijon, lemon juice, parmesan, etc. and so low in fat!

- Preheat oven to 350°F and lightly grease a baking sheet.
- In a small bowl, mix mayonnaise, mustard, horseradish and lemon juice; stir in parmesan cheese. and bread crumbs.
- Arrange fish portions on prepared cooking sheet, spread bread crumb/cheese mixture evenly over fish.
- In a small bowl mix melted butter, bread crumbs and 1 tablespoon parmesan cheese, then sprinkle over bread crumb and cheese coated cod.

NORMA'S STUFFED MAPLE/SAUSAGE ACORN SQUASH FOR TWO
Had one Acorn Squash and remembered a great reipe I had made a few years ago. Found this recipe in a magezine while at a friends house and copied it down. She had told me how great it taste so I tried it. I did change a few ingredients and added some of my own to make it my dish. My sweetie and I love this dish as a one dish meal. It's loaded with tons of flavor.

- Preheat your oven at 350.
- Wash and cut in half one acorn squash and trim bottoms so they will sit flat.
- Scoop out seeds and discard or toast them as you would pumpkin seeds and serve them with a side salad.
- Place acorn sqush halves on a sheet pan or in a shallow pan and salt and pepper to taste and pour 1/2 cup water into pan.
- Place a tablespoon of pure maple syrup into squash cavity and brush around top of squash with a pastry brush and set aside.
- Mix your stuffing mix as directed on side of the box and set aside.
- Place a non-stick pan on medium heat and add 1/2 pound of sausage and cook until browned.
- Add onion, stir and cook until onions are clear.
- Mix sausage and onion into prepared stuffing mix along with two tablespoons of pure maple syrup and mix well.
- Place a heaping amount of sausage/stuffing mix into each squach cavity until it is filled.
- Place squash in hot oven and bake for 45 minutes, or until squash is tender when pierced with a fork.
- Half way into baking; when the stuffing was turning brown I covered the squash with a foil tent to prevent the stuffing mix from becoming too brown and to help tenderize the squash.
- Uncover the squash and test the squash for tenderness.
- Remove from oven and serve as a one dish meal or add your favorite salad along with the toasted squash seeds.
- NOTE: When making only for two you will have leftover stuffing. I plan on stuffing two green peppers tomorrow with it for dinner.
- * For large or thick squash I place them cut side down on a pan with sides, add water and place in the oven to bake while I'm making the stuffing. I found that some times this is needed to soften the squash or it takes longer for them to bake after filling them. MMMMMM they are sooooo good!

- Add potatoes to a microwave safe dish and add 3 tablespoons water and ¼ teaspoon salt. Cover and microwave for 5 minutes.
- Meanwhile, whisk together all of the Spice Rub ingredients in a medium bowl. Remove 1 tablespoon (you use these Reserved Spices for the sauce later). To the remaining spices, stir in 1 tablespoon olive oil. Add Chicken and massage with spices until evenly coated.
- Heat 1 tablespoon olive oil in a 12 inch skillet over medium high heat until very hot. Add chicken and cook until golden brown on bottom, about 2-3 minutes, flip, cover, and reduce heat to medium and continue to cook for 3-4 minutes or until completely cooked through. Transfer to plate and tent with foil.
- To the remaining juices/oil in the now empty skillet, heat 1 tablespoon olive oil over medium high heat. Add potatoes and garlic and saute 1 minute. Add Dijon, maple syrup, heavy cream, chicken broth and reserved spices. Simmer until sauce has thickened and potatoes are cooked through. Stir in spinach and cook until just wilted, about 30 seconds.
