APPETIZER TORTILLA PINWHEELS
A friend gave me this recipe, and whenever I serve these tortilla pinwheel sandwiches, people ask me for the recipe, too! The cream cheese pinwheels can be made ahead of time and sliced just before serving, leaving you time for other last-minute party preparations. -Pat Waymire, Yellow Springs, Ohio

Steps:
- Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

GREEN CHILE TORTILLA PINWHEELS
These are very popular appetizers New Mexico and are served at just about every holiday party. A number of fillings can be used, but green chile cream cheese is by far the most favored. This is an all-purpose filling that goes well on crackers, as a dip with chips or vegetable crudities, as well as on tortillas. For those watching their fat intake, substitute light cream cheese or Neufchatel cheese. It is important to tightly roll and refrigerate the rolls or they won't stay together after they are sliced.

Steps:
- Combine all the ingredients, except the tortillas, in a bowl and mix well.
- Spread the filling on the tortillas, sprinkle the cilantro over the top, and roll the tortilla in a jelly-roll fashion and tightly wrap in plastic wrap. Repeat with the remaining tortillas.
- Place the tortillas in the refrigerator for at least 2 to 3 hours. Just before serving, unwrap the tortilla rolls and slice into 6 to 8 pieces.
GREEN TORTILLA PINWHEELS
Delicious, easy and EVERYONE loves them! I know there are a few other recipes out there, but these pinwheels are to-die-for! The green salsa and the corn tortillas are the trick. Mmmmmmm.... and I mean it! --Use the amount of ingredients to your liking, you can't go wrong!

- If you can find fresh tortillas, use them- they make all the difference!
- Over an open gas (stove top) flame, place one tortilla at a time onto burner. Cook for 10-15 seconds per side and flip with tongs.
- Smear tortilla with cream cheese, add about half of a teaspoon of chiles and a plop of salsa.
- Roll up tortilla and slice it into single bite servings- or better yet, eat it up ALL BY YOURSELF. ;0).

- Mix cream cheese, chilies, garlic salt and 2 tablespoons picante together.
- Spread on tortillas.
- Roll tortillas tightly, like a jelly roll and wrap in plastic wrap.
- When ready to serve, cut in 1/2-inch pieces.
- Serve with additional picante sauce for dipping.

Steps:
- Spread whipped cream cheese spread evenly on tortillas. Sprinkle the green onions, black olives and chopped ham slices evenly between all ten of the tortillas. Roll tortillas up jellyroll style. Cover with plastic wrap and refrigerate for 2 hours.
- Remove from refrigerator and slice at 3/4 inch intervals. Arrange on tray and serve.

GREEN CHILE TORTILLA SCRAMBLE
This was a favorite among our guests at the bed and breakfast where I cooked for many years. If you wish, add sautéed onions or diced tomatoes to the mix. I sometimes serve this dish with pinto or black beans and a warmed flour tortilla. This dish also lends itself well to be served with a side of chorizo sausage or any other breakfast meat of your liking.
