Steps:
- Heat 1 tablespoon vegetable oil in a skillet over high heat. Add the mushrooms and 1/2 teaspoon sugar and saute until golden, 3 minutes. Add the broth and 2 teaspoons soy sauce. Mix the cornstarch with 1/4 cup water; stir into the skillet and boil until thickened, 2 minutes.
- Heat 1 tablespoon vegetable oil in another skillet over high heat. Add the onion and the remaining 1 teaspoon sugar and cook until tender, 4 minutes. Add the bacon and cook 2 minutes. Add the peas, half of the scallions and the remaining 1 1/2 teaspoons soy sauce; cook 1 more minute. Transfer to a bowl and combine with the beaten eggs.
- Wipe out the skillet. Return to high heat and add 1/4 inch of vegetable oil. Add one-fourth of the egg mixture; spoon some of the hot oil on top and cook until puffy, 1 to 2 minutes. Flip and cook 1 minute, then drain on paper towels. Repeat to make 3 more omelets. Add the sesame oil to the mushroom gravy and pour over the omelets. Garnish with the remaining scallions.

- In a large resealable plastic bag, combine beef with garlic, pear, green onions, soy sauce, sugar, sesame oil, rice wine, sesame seeds, fresh ginger, and ground black pepper. Seal, and refrigerate for 2 to 3 hours.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Brush oil over grill pan. Place beef on pan. Cook, turning to brown evenly, for 3 to 6 minutes, or until done.

JANG JORIM WITH HARD-BOILED EGGS (KOREAN SOY BEEF STRIPS)
Today we made one of my favorite meat side dishes called Jang Jorim, which is basically Korean soy beef strips with hard-boiled eggs. It is a salty side dish. Enjoy cold or warm with rice and other banchan side dishes. It can be stored for up to a week in the refrigerator, two weeks maximum.

- Soak hanger steak in cold water in a large bowl to drain residual blood, changing water as needed, 30 minutes to 1 hour. Drain.
- Combine 6 cups water, soy sauce, green chile peppers, onion, green onions, garlic, sugar, corn syrup, rice wine, and red chile pepper in a large pot to make a broth. Bring to a boil and add steak. Reduce heat and simmer until steak is mostly tender, about 45 minutes. Submerge eggs in the broth. Continue cooking until steak is tender, about 15 minutes more.
- Remove steak from the broth; rinse under cold water until cool enough to handle, 2 to 3 minutes. Cut steak into bite-sized strips. Transfer to an airtight container; add eggs.
- Discard chile peppers, onion, green onions, and garlic from the broth. Skim broth to remove oily residue. Strain broth through a paper towel-lined mesh strainer into a bowl. Repeat several times, changing paper towels as needed, until all oily residue is removed.
- Pour broth over steak and eggs in the container. Cover and chill before serving, about 1 hour.

KOREAN GOGI BOKUM (DEEP FRIED BEEF SLICES)
This beef is to be served with Bulgogi dipping sauce recipe#191396 Very tasty delicious dish. You do not have to deep fry the beef - I stir fried it in 2 tbsp Olive oil. I also twinned a vegetarian version while I cooked the regular beef. I used Meatless Beef tenders and followed the recipe just as if it were meat.(see pictures)

Steps:
- Cut the beef as you would for stir fry, then pound each piece so it is very thin.
- Arrange beef single layer in a dish and sprinkle over it the green onion, leek & garlic.
- Mix the sugar, soy sauce, sesame oil & chili sauce together.
- Spoon over the beef.
- Marinate for 2 hours or more in the refrigerator.
- Heat the peanut oil in a wok until it is very hot.
- Fry each piece of beef for a few seconds only.
- Drain on paper towel.
- Serve at once over rice with Bulgogi sauce.

Steps:
- Whisk the eggs with sugar and salt.
- Cut the onion to 1 cm pieces and mix it with the ground beef.
- Fry it to desired cooked level.
- Heat 1 1/2 tablespoon oil.
- Fry 1/4 of the egg mixture until the down side is light brown.
- Spread 1/4 of ground beef and onion mixture .
- Fold the fryin eggs in half the engulfing the beef.
- Fry the upper side of the eggs until light brown.
- Serve immediately.
- Repeat 3 more times, making three more servings.
- For garlic lovers, add garlic to beef and onion mix.
- For color, dash paprika on top.

GOGI JUN (PAN FRIED BEEF WITH EGG)
Steps:
- Cut Beef into 2x2 size. If the Beef is thick, pound with the back of knife or use meat tenderizer to make it paper thin. Lightly salt and pepper the meat. flour the meat, then into a lightly beaten egg. Put a non-stick pan on a medium heat, pour 2-3 tablespoons oil and add meat. Cook for a minute for both sides or until gets slight color. Serve with soy sauce.
