Golden Macaroni and Cheese image

Golden Macaroni and Cheese - quick homemade macaroni and cheese topped with Ritz crackers and baked. SO good - I could make a meal out of this! YUM!! Can easily half or double the recipe for a crowd! Macaroni tossed in a homemade cheese sauce - butter, flour, milk, dry mustard, onion, Worcestershire sauce and cheddar cheese. Ready in under 30 minutes!

2 cups dry elbow macaroni pasta
2 Tbsp butter
2 Tbsp all-purpose flour
1 cup milk
½ tsp salt
¼ tsp black pepper
¼ tsp dry mustard
¼ tsp onion powder
1 tsp Worcestershire sauce
1 cup shredded cheddar cheese
crushed Ritz crackers

Steps:

  • Preheat oven to 400ºF. Lightly spray an 8x8-inch pan with cooking spray. Set aside.
  • Cook pasta according to package directions Drain and set aside.
  • In a medium saucepan, melt butter. Whisk in flour, cook 1 minute. Slowly whisk in milk. Cook until thickened. Stir in salt, pepper, dry mustard, onion powder, Worcestershire and cheese. Stir until cheese melts. Remove from heat.
  • Stir in cooked pasta. Pour into prepared pan. Top with crushed Ritz crackers.
  • Bake for 20 minutes, until bubbly.

I tried alot of recipes, and I just figured I must have been absent or daydreaming when eveyone else in the world learned to make macaroni and cheese. But then, as so many times, Southern Living saved the day, with this great recipe

1 (8 ounce) package elbow macaroni
2 cups milk
1/4 cup all-purpose flour
1 teaspoon onion salt
2 (10 ounce) blocks sharp cheddar cheese, shredded, and divided (about 4 1/2 cups)
1 cup soft breadcrumbs (4 slices, crust removed)
1/4 cup butter, melted

Steps:

  • Cook macaroni according to package directions, drain well. Set aside.
  • Place milk, flour, and onion salt in quart jar;cover tightly, and shake vigorously 1 minute.
  • Stir together flour mixture, 3 1/2 cups cheese and macaroni.
  • Pour macaroni mixture into a lightly greased 13 x 9 inch baking dish or 2 11 inch oval baking dishes. Sprinkle with breadcrumbs and remaining cheese, drizzle evenly with melted butter.
  • Bake at 350F for 45 minutes or until golden brown.

I found this recipe in a comforting food cookbook. It is from The Rattlesnake Club in Detroit, Michigan. It can be served as a main course or a side dish.

1/2 lb macaroni
1 cup shredded sharp cheddar cheese
1 cup grated parmesan cheese
1 cup shredded fontinella cheese or 1 cup mozzarella cheese
1 cup finely chopped fresh chives or 1 cup green onion top
1/4 cup unsalted butter, at room temperature
3 large eggs, beaten
1 3/4 cups half-and-half
3/4 teaspoon fresh coarse ground black pepper
3/4 teaspoon paprika
1/2 cup fine fresh breadcrumb
1/4 cup grated romano cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large pot, bring 2 quarts or more of water to a boil. Add 1 Tablespoon salt, then stir in the macaroni. Cook until al dente, following suggested cooking time on the package. Drain, then rinse with warm running water.
  • In a large mixing bowl, stir together the cheddar, Parmesan, fontinella or mozzarello and the chives. Add the macaroni and mix well.
  • With 1 Tablespoon of the butter, grease a 2 1/2 or 3 quart deep baking dish. Add the macaroni mixture.
  • In the mixing bowl, stir together the eggs, half and half, pepper, paprika and 1/2 teaspoon of salt. Pour evenly over the macaroni.
  • In a small bowl, toss together the bread crumbs and Romano cheese. Sprinkle them evenly over the macaroni and dot with the remaining butter.
  • Bake the macaroni and cheese until bubbly and golden, about 30 minutes. Serve immediately.
