8 large eggs
1/2 cup half-and-half cream
1 cup shredded cheddar cheese
1 cup finely chopped fully cooked ham
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion

Steps:

  • In a large bowl, whisk eggs and cream. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9-in. square baking dish. , Bake at 400° for until golden brown, 20-25 minutes.

10 large egg whites
5 large eggs
1 cup fat-free milk
1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1-1/2 cups cubed fully cooked ham
1 cup chopped fresh broccoli
1 cup shredded reduced-fat cheddar cheese
1 medium tomato, seeded and chopped
3 tablespoons finely chopped onion

Steps:

  • In a bowl, beat the egg whites, eggs, milk, seasoned salt and pepper. Pour into a greased 10-in. cast-iron or other ovenproof skillet. Sprinkle with the ham, broccoli, cheese, tomato and onion. Bake, uncovered, at 350° until eggs are almost set, 30-35 minutes. Broil 4-6 in. from the heat until the eggs are set and top is lightly browned, 1-2 minutes.

6 eggs
1/2 cup milk
1 cup shredded cheese (whatever you have in your fridge)
1/4 cup sliced fresh mushrooms
1/4 cup diced green pepper
1 tablespoon dried onion or 1 tablespoon fresh onion, if you prefer
salt and pepper

Steps:

  • Whip eggs and milk together. Add in rest of ingredients.
  • Pour into round casserole dish --> or pie dish.
  • Cook at 350 for 20-25 minutes.
  • Can also add meats like bacon, sausage, or ham. Also chopped tomatoes are good in this recipe --> just make sure you take all the gunk out (seeds). Asparagus lovers just chop and throw in, mighty tasty.

2 tablespoons unsalted butter
3 beaten eggs, beaten
Kosher salt and freshly ground black pepper
Caramelized onions (optional)

Steps:

  • Heat a nonstick 8" or well-seasoned heavy steel skillet over medium-high heat for 1 minute. Add 2 tablespoons unsalted butter. Once butter sizzles and begins to brown, swirl to coat pan. Add 3 beaten eggs and season with kosher salt and freshly ground black pepper. Cook, pulling up the edges with a heatproof silicone spatula, allowing uncooked eggs to run into pan, until the bottom is golden brown and the top begins to set, 1-2 minutes.
  • Add fillings, such as caramelized onions, chopped herbs, and grated Parmesan. Using the spatula, fold up 1/3 of the omelet. Roll the omelet over onto itself, then tilt the pan and slide omelet onto a plate.

This is an easy omelet to make. I like making them during the week as they reheat nicely. I cut this in fourths and everyone can have a nice breakfast by placing it in the microwave to heat up. ½ cup coarsely chopped soft fresh herbs (such as parsley, chives, dill, tarragon, or cilantro)

Steps:

  • Preheat oven to 400°F. Grease a 13- x 9-inch baking dish with cooking spray. Whisk together eggs, heavy cream, scallions, salt, garlic powder, black pepper, and 1 cup of the cheese in a large bowl. Pour egg mixture into prepared baking dish; top with remaining 1 cup cheese.
