GOLDEN SESAME COOKIES
A light sugar cookie with toasted sesame seeds. To make a double batch, I double all the ingredients but the butter and they still taste delicious.

- To Toast Sesame Seeds: Pour seeds into a pie pan and place in a 300 degrees F (150 degrees C) oven for about 10 minutes or until lightly browned. Stir seeds occasionally.
- Cream the butter or margarine with the vanilla until light and fluffy. Add the confectioners' sugar gradually, beating until fluffy. Add egg and beat thoroughly.
- Sift the flour, baking powder and salt together. Add in thirds to the creamed mixture. After each addition of the flour mixture stir in the toasted sesame seeds. Mix until blended. Cover and chill dough for at least 2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- On a lightly floured surface, roll 1/3 of the dough at a time to 1/8 inch thick. Cut with a 2 inch scalloped cutter. Transfer cookies to ungreased cookie sheets.
- Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes.

SESAME-AND-JAM SANDWICH COOKIES
Sandwiches for lunch, sandwiches for snacks-these cuties look like mini burgers, so they have extra kid appeal. The cookies come out of the oven crisp-tender; the jam filling softens them up overnight, making them more like jam-filled cakes the next day.

- Position oven racks in the top and bottom thirds of the oven, and preheat to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat the butter and sugar in the bowl of a stand mixer on medium-high speed until fluffy, about 2 minutes. Reduce the speed to medium, beat in the egg and vanilla until well combined, then beat in the tahini until smooth. Reduce the speed to low, then beat in the flour mixture until the dough comes together (it will be quite soft). Cover and refrigerate for 30 minutes (the dough will be soft but rollable).
- Put the sesame seeds in a small bowl. Roll teaspoonfuls of dough into 1-inch balls, roll them in the sesame seeds and space them about 1 1/2 inches apart on the prepared baking sheets.
- Bake the cookies until just puffed, lightly golden brown and just firm, about 12 minutes, rotating the pans halfway through. Let the cookies cool in the pan on a wire rack for 5 minutes, then transfer them to the rack to cool completely.
- To assemble: Spread 1/2 teaspoon jam on a cookie, then top with another cookie, pressing gently. Keep in an airtight container for 2 days; they will soften overnight.
GOLDEN SESAME ROLL-UPS

- Mix the sugar, sesame seeds and cinnamon in a small bowl. Lay out a 12-by-16-inch piece of parchment paper. Sprinkle 1/2 cup of the sugar mixture evenly on the paper. Lay the puff pastry on top and sprinkle with another 1/2 cup of the sugar mixture. Roll out the dough into a 12-inch square, pressing the sugar into the dough with the rolling pin. Roll up the dough tightly into a log. Wrap in the parchment paper and freeze until firm, about 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Slice the log into 1/2-inch-thick rounds and place 1 inch apart on the prepared baking sheets. (If the spirals unravel, pinch them back together.) Freeze until firm, about 20 minutes.
- Bake until the pastry is puffed and light brown, 10 to 15 minutes. Remove from the oven and sprinkle with the remaining sugar mixture. Return to the oven and bake until the cookies are glazed and golden, 10 to 15 more minutes. Use a spatula to transfer the warm cookies to another sheet of parchment paper, flipping them over before the sugar hardens. Let cool completely. Store in an airtight container up to 1 week.
BENNE COOKIES
Emily Meggett, who published her first cookbook, "Gullah Geechee Home Cooking: Recipes From the Matriarch of Edisto Island," at 89, learned how to make these crisp wafer cookies from her grandmother who learned from generations before. Benne seeds, sesame seeds that enslaved Africans brought with them to the southeastern shores of America, have long been a staple in Gullah Geechee cooking. They are an important component in rice dishes and savory crackers and are the stars of these buttery wafers. Regular sesame seeds will work fine, especially if you toast them in butter, but Mrs. Meggett suggests you try to buy benne seeds, an heirloom seed that is available online. They have a nutty, almost burned honey flavor and bring out the umami in the cookies.

- Heat the oven to 350 degrees. Lightly grease 2 large cookie sheets with butter.
- Melt 1 tablespoon butter in a cast-iron skillet over medium heat and add the benne seeds, stirring them until coated. Toast the seeds, stirring frequently, until fragrant and darkened a shade, 2 to 3 minutes. Take care not to burn the seeds and turn down the heat if needed. Scrape onto a plate and let cool completely.
- Whisk the flour, baking soda and salt together in a medium bowl.
- In a large bowl, cream together the remaining 8 tablespoons/115 grams butter and both sugars until well combined and fluffy. Add the egg and beat well. Add the cooled toasted benne seeds and the vanilla, then stir in the flour mixture.
- Drop rounded teaspoonfuls of the cookie dough at least 2 1/2 inches apart on 1 prepared cookie sheet. Bake for 8 to 10 minutes, until golden brown around the edges. Remove the wafers from the cookie sheet immediately and place on waxed or parchment paper to cool. Repeat with the remaining dough on the second cookie sheet, reusing the first sheet when it's cool, if needed.
GOLDEN SESAME BALLS
A Chinese pastry with lotus paste filling.

- Combine sugar and shortening in a bowl to make a paste. Add rice flour, baking powder, and ice water and mix everything into a dough ball. Wrap in plastic film and refrigerate for 30 minutes.
- Remove dough from fridge and separate into 6 equal portions. Roll into balls and flatten the balls into thin disks. Portion lotus paste into 6 equal parts and roll into small balls. Set a lotus paste ball in the center of the flattened dough disks and wrap dough around the lotus paste. Roll between the palms of your hands until all the seams are gone and no lotus paste is showing.
- Pour sesame seeds onto a saucer and roll finished balls in the sesame seeds. Roll balls between your palms one more time to make sure sesame seeds stick.
- Pour oil into a pot and heat to 350 degrees F (175 degrees C). Drop balls into the hot oil and fry until golden brown, 5 to 6 minutes. Remove from the hot oil with a slotted spoon and drain on a paper towel-lined plate to absorb the excess oil
- Serve - be careful! The lotus paste inside the balls will be very hot.

A recipe that comes from the South of USA. Taken in a book of recipe from different countries. I don't know how much cookies it gives, so I guess 20. If you do it, tell me how much and I'll change it :)

- Cream the butter with the sugar.
- Add the egg, beat then add the flour, baking powder, salt, vanilla and sesame seeds.
- Beat well.
- Drop teaspoons of dough on a greased baking sheet making sure to space out each cookie.
- Bake in a preheated oven of 340 F for 8 to 10 minutes or until the cookies are hard.
- Let cool few seconds, then take them off the baking sheet carefully.
- Chilicat had 35 cookies, using a 1-teaspoon scoop.

- Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
