GRANDMA'S FAMOUS MEATLOAF WITH SALTINES
This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Steps:
- Mix all together; I generally use my hands.
- Form mixture into a loaf shape.
- Put in a baking dish (I use a pie plate).
- Bake at 350 for 1 hour.
- NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.
GONZALES MEAT LOAF
This meatloaf is very flavorful and sweet. The texture was perfect. Don't skip the step where you cook it on a broiler pan, that makes the difference.

- Combine all ingredients. Shape into a 9- x 5-inch loaf, and place on a lightly greased wire rack in a baking pan.
- Bake at 350° for 45 minutes; increase heat to 425°, and bake 15 more minutes or until done. Let meat loaf stand 10 minutes before serving.

JEFF AND GEOFFREY'S ULTIMATE MEATLOAF

Steps:
- Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. Line the pan lengthwise with a long strip of parchment, rubbing it to adhere it to the pan and making sure it is long enough to hang over the ends of the pan.
- Put the beef, lamb and pork into a large mixing bowl and add the olives, onions, crushed saltines, yogurt, mint, oregano, cumin, garlic and egg. Add the hot sauce, salt and some ground pepper and very gently mix with your hands until the ingredients are evenly incorporated. Add the feta and mix lightly, incorporating the feta in whole crumbles if possible. Try not to overmix; it can make the meatloaf tough.
- Transfer the meat mixture to the pan and press it gently to eliminate any air pockets. Set the loaf pan on a baking sheet and bake until an instant-read thermometer inserted into the center registers 155 degrees F, 40 to 45 minutes.
- Let the meatloaf cool in the pan for about 20 minutes before using the parchment paper to lift it out of the pan and transfer it to a serving platter. Slice while warm and serve with the Mint Tzatziki on the side.
- Grate the cucumber on the large holes of a box grater into a large fine-mesh strainer set over a bowl. Sprinkle the cucumber generously with salt, tossing a few times with your hands to evenly distribute it; let stand for 10 minutes to drain.
- Using your hands, squeeze the cucumber to drain any excess moisture. Transfer to a mixing bowl and add the yogurt, mint and garlic. Stir well to combine, taste and adjust the seasoning with salt if necessary.
- Store the tzatziki in an airtight container for up to 3 days.
GONZALES STEAK
Steps:
- Slit chiles and remove seeds. Chop 2 of the chiles into fine dice and mix with the salt, garlic, and oregano. (New Mexicans traditionally like to leave a few seeds in the dish. The seeds give it life, they say.)
- With a very sharp knife, cut a horizontal pocket into the steak. Stuff the chopped chiles into the pocket. Brush the meat and the remaining chile with canola oil. Grill the steak on both sides to desired doneness. If using buffalo, watch carefully so as not to overcook (because it contains less fat than beef it cooks much faster and is best medium-rare).
- Salt and pepper the meat. Grill the remaining whole-roasted chili to get a nice grid mark on it. Lay it across steak for garnish. A teaspoon of butter on the steak as a special treat is heaven. To make brown butter, simply place the butter in a saute pan over medium-high heat and allow to melt and turn golden brown.
GRAMMY'S COMFORT MEATLOAF
This is the recipe that my grandmother makes. The only change from her recipe is that she uses oatmeal.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, thoroughly mix together the ground beef, half of one can of tomato soup, instant rice, onion, garlic, Italian seasoning, egg, and green bell pepper; season with salt and black pepper. Reserve remaining tomato soup. Form the meat mixture into a loaf, and place into a 9x13-inch baking dish.
- Bake the loaf in the preheated oven until browned and an instant-read meat thermometer reads 160 degrees F (70 degrees C), about 30 minutes. Remove from oven, and cover the loaf with the remaining 1 1/2 cans of tomato soup. Return to oven, and bake until the soup is hot and beginning to form a glaze on the meat, about 10 minutes.

MEATLOAF WITH GINGER AND SCALLIONS

- Preheat oven to 425 degrees.
- Heat oil in a nonstick skillet. Add scallions, garlic and chestnuts. Cook briefly till wilted. Set aside.
- Place the beef and the turkey in a mixing bowl. Add the scallion mixture, ginger, coriander, bread crumbs, soy sauce, egg, sherry and pepper. Blend well with your hands, taking care not to overmix.
- Divide the mixture into 4 equal portions and place into 4 individual 1 1/2-cup souffle dishes. Smooth over the tops.
- Set the souffle dishes in a large pan with an inch of water and bring to a boil on top of the stove. Place in the oven and bake for 30 minutes. Let the loaves cool about 5 minutes before unmolding. Spoon barbecue sauce over and around the loaves.

CLASSIC MEATLOAF RECIPE BY TASTY

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.

OLIVER CLARK'S MEAT LOAF

- Preheat oven to 350 degrees.
- Saute garlic in 2 tablespoons of oil till lightly brown and onions till translucent. Remove to a bowl. Add a dash of salt and pepper.
- Saute mushrooms in the remaining oil until water is released, about two minutes, and remove them to the bowl. Add more salt and pepper.
- In a bowl, place everything except the eggs and bacon. Paw at it with two forks, combining thoroughly but not overmixing.
- Mix in the eggs and the ingredients of the first bowl.
- Bake in the oven for an hour.
- Midway through the baking time, saute the bacon till half-cooked, then adorn the meat loaf with it and finish cooking.
