LOW CARB MEATLOAF RECIPE

This moist meatloaf recipe is made keto-friendly and low carb!

1 Tablespoon olive oil
½ small onion (diced)
2 cloves garlic (minced)
1 ½ lbs lean ground beef
½ teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
2 Tablespoons fresh parsley
1 large egg
¼ cup shredded parmesan cheese
¼ cup almond flour
⅓ cup low carb tomato sauce
1 tablespoon swerve brown sugar

Steps:

  • Preheat oven to 400°F. Line a small pan with foil and spray with cooking spray.
  • Cook onion and garlic in olive oil until tender. Cool completely.
  • Combine all meatloaf ingredients in a bowl and mix well.
  • Form into a 3"x8" loaf and place on prepared pan.
  • Bake 30 minutes uncovered. Top with topping and bake an additional 30-40 minutes or until loaf reaches 160°F.
  • Rest for 5-10 minutes prior to serving.

This meatloaf is really tasty, but is denser than traditional meatloaves. I eat it on SBD with no problems. I hope you enjoy it. The density and the fact that it slices nicely makes it GREAT for sandwiches!

3 lbs ground turkey (Lean but not all turkey breast)
2/3 cup finely grated pecorino romano cheese or 2/3 cup parmigiano-reggiano cheese
1 (1 ounce) packet Italian salad dressing mix
2 eggs
1 tablespoon McCormick's Montreal Brand steak seasoning
1/2-2/3 cup old fashioned oats (NOT quick oats)

Steps:

  • Preheat Oven to 350 Degrees.
  • Mix it all up and press it into a pan.
  • Depending upon your loaf pan size, you might divide it into two pans.
  • Bake at 350 degrees for 50 minutes to 1 hr or until internal temperature reaches 165 Degrees F.
