Favorite Old Fashioned Gingerbread image

This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

½ cup white sugar
½ cup butter
1 egg
1 cup molasses
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup brown sugar, packed
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 egg whites, lightly beaten
1/2 cup buttermilk
1/2 cup unsweetened applesauce
1/2 cup light molasses

Steps:

  • In a large bowl, stir together the flours, brown sugar, ginger, cinnamon, baking powder, and baking soda.
  • In a small bowl, combine the egg whites, buttermilk, applesauce, and molasses.
  • Add the buttermilk mixture to the flour mixture and beat with an electric mixer until combined.
  • Transfer the batter to an 8"x8"x2" baking pan that has been sprayed with nonstick cooking spray and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool on a wire rack 10 minutes and then remove from pan and serve.
