Steps:
- Make the sauce: in a heavy saucepan cook the onion and the garlic in the oil over low heat, stirring, for 2 minutes; add parsley, basil, tomatoes, tomato paste, stock, wine, sugar, romano, salt, and oregano, and simmer the sauce, stirring occasionally, for 30 minutes.
- While sauce is cooking, prepare the meatballs: in a large bowl combine bread (with liquid squeezed from it), chuck (it's really good if you grind your own!), eggs, romano, parsley, garlic, the oregano, salt, and pepper; mix well and form into 8 meatballs.
- In a large skillet brown the meatballs in the oil over high heat, turning them often; make sure to not crowd them in the pan, otherwise they won't brown properly.
- Transfer the browned meatballs to the sauce with a slotted spoon and simmer the mixture, stirring occasionally, for 30 minutes.
- You can serve them with your favorite pasta right away, but these improve in flavor if they're cooled and chilled, covered, and refrigerated overnight or up to 2 days before serving.

- Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

- In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
- In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

GRANDMA'S OLD ITALIAN SPAGHETTI SAUCE WITH MEATBALLS
Grandma's sauce is an old recipe that she brought over from Italy. It is a long process with strange ingredients, but they all come together to make the best sauce I have ever had. The long process is worth your trouble the minute you take your first bite.

- Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
- Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
- Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
- Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
- Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

OLD FASHIONED MEATBALLS IN TOMATO SAUCE CASSEROLE
These yummy meatballs are made with a mixture of beef and Italian sausage. They are placed in a baking dish, smothered in tomato sauce, topped with grated Romano cheese and baked in a hot oven. This saves the step of browning them on top of the stove and the sauce is wonderfully seasoned with the meatball juices and Romano cheese.

Steps:
- Remove ground beef and sausage from refrigerator 30 to 60 minutes before cooking.
- Place bread crumbs in large bowl and stir in 1/3 cup water.
- When absorbed, blend together with eggs, garlic, grated Romano, salt, and pepper.
- Preheat oven to 425°.
- Add meats to bread crumb mixture and combine well with fork.
- Form into 12 even meatballs.
- Place in 1 layer in 9x13" baking dish so each is separated by about 1 inch.
- In a separate saucepan, sauté 2 cloves of garlic in olive oil.
- Add crushed tomatoes and water.
- Add fresh basil and season with salt and pepper to taste.
- Pour tomato mixture over and around meatballs.
- Sprinkle tops with grated Romano cheese.
- Bake in center of oven until meatballs are just cooked through, about 25 minutes.

GRAMMIE'S SPAGHETTI AND MEATBALLS
My Grammie made the BEST spaghetti sauce!! This recipe is very versatile. I use more garlic and my homemade, chunky tomato sauce for my version which makes a thicker, fresher tasting sauce. My Mom adds a sausage and chicken breasts. My Dad loves spicy so he always adds a nice hot sausage and chili flakes.

- SAUCE: In a large pot, mix vegetable juice, tomato paste, water, parsley flakes, celery leaves, salt and garlic.
- Cover and cook over medium-high heat.
- MEATBALLS: Mix together ground beef, eggs, salt, parsley flakes, garlic powder and bread crumbs together. If too wet, add more bread crumbs; if too dry, spoon some of the sauce into the mix.
- GENTLY shape into 2-inch meatballs. You don't want to press too hard or your meatballs will be tough. My kids like to have "kid-size" meatballs, so we have a mix of big and small meatballs.
- Once the sauce comes to a boil, lower heat to simmer and add the meatballs.
- Cover and cook for 2 hours.
- Makes 12-15 servings.
- Our family usually doubles the recipe and then we have a freezer meal and a serving for a lunch the next day too!
- I have also made this in the crock pot. Put it on HIGH in the morning (I had it in there for 8 hours).
