MIXED BERRY SALAD WITH MINT



Mixed Berry Salad with Mint image

Strawberries, blackberries, and blueberries at their peak make for the most spectacular sweets. A few sprigs of mint give this salad a refreshing twist.

2 tablespoons sugar
2 tablespoons orange-flavored liqueur, such as Grand Marnier
1 pound strawberries, hulled and halved or quartered if large
1 cup raspberries (4 ounces)
1 cup blackberries (4 ounces)
1 cup blueberries (5 ounces)
1/4 cup fresh mint leaves, torn

Steps:

  • In a medium bowl, whisk together sugar and liqueur. Gently fold in strawberries, raspberries, blackberries, blueberries, and mint. Serve immediately (or cover and refrigerate, up to 4 hours).

1 papaya or mango
1 cup strawberries
2 kiwis
1 banana
2 navel oranges
3 tablespoons honey
1 tablespoon Grand Marnier, optional
3 to 5 sprigs fresh mint
1 cup raspberries or blueberries

Steps:

  • Peel and dice the mango or papaya, and put in a medium bowl. Trim the strawberries' stems and half or quarter, if large. Add to the bowl of fruit. Peel and dice the kiwi, add to bowl. Peel and slice the bananas, add to bowl.
  • Cut the top and bottom off the oranges just deep enough to expose the inner fruit. Following the curve of the fruit cut the skin and pith off the orange in panels. Holding the orange over the bowl cut between the membranes to free the citrus segments. Let them fall into the bowl as they are cut free. By hand, squeeze all the juice from the remaining membrane over the fruit, then discard. Repeat with the other orange.
  • Lightly stir the honey and Grand Marnier, if using, into the fruit. Strip the mint leaves off the stem, tear, or chop into smaller pieces, and stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours.
  • Serve.

A sweet and sophisticated berry salad with fresh mint

6 ounces blackberries (rinsed and drained)
6 ounces raspberries (rinsed and drained)
1 pint blueberries (rinsed and drained)
1 quart strawberries (rinsed, drained and sliced)
2 tablespoons fresh chopped mint (or more)
1 tablespoon fresh lime juice
1 tablespoon honey
1 splash Grand Marnier liqueur (about 1 1/2 teaspoons)
Optional: mint sprig and lime wedge for garnish

Steps:

  • Place all rinsed and drained berries and chopped mint in a serving bowl.
  • Separately, whisk together fresh lime juice, honey and Grand Marnier liqueur.
  • Pour evenly over fruit and stir gently to coat.
  • Garnish with mint sprig and lime wedge if desired.
  • Serve immediately or cover and refrigerate.

This is just to die for!! I've never served this without someone wanting the recipe, but more than that, they want to take leftovers home! (That's why I always make a double batch!). It's a simple make-ahead sauce and can be used for dessert or breakfast. It's a great presentation when served in a wine or martini glass. I got this recipe from Bon Appetit magazine in 1995.

10 ounces cream cheese, room temperature
1 cup sour cream
1/2 cup powdered sugar
6 tablespoons powdered sugar
1/2 cup whipping cream
2 tablespoons Grand Marnier (I usually double this)
8 cups fresh fruit

Steps:

  • Combine first 5 ingredients and 2 tablespoons Grand Marnier in processor. Blend until smooth.
  • Taste and add more Grand Marnier, if desired.
  • Transfer mixture to bowl and refrigerate until cold, about one hour. (Can be prepared 1 day ahead. Keep refrigerated.).
  • Divide fruit among 8 stemmed goblets.
  • Top with sauce and serve.
  • Note: Use any fresh fruit in season that you like. It's especially good with strawberries, grapes, and blueberries.

From Classic Liqueurs, by Cheryl Long and Heather Kibbey: Grand Orange-Cognac Liqueur. I modified it to make it a little more chef friendly.

1/3 cup orange zest
1/2 cup granulated sugar
2 cups cognac or 2 cups brandy
1/2 teaspoon glycerine, for texture (optional)

Steps:

  • Place zest and sugar in a small bowl. Mash together with the back of a wooden spoon or a muddle. Continue until sugar is absorbed into zest.
  • Place in a container with a tight seal, preferably glass. Add cognac, stir and seal.
  • Allow to age in a cool, dark place 2 to 3 months. Shake monthly.
  • After initial aging, strain and filter. Stir with a wooden spoon to combine. Cap and age 3 months more before serving.
  • Note: Seville oranges produce the authentic taste but any type of orange peel/zest may be used with good results.
