GRANDMA'S MEATLOAF
This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

Steps:
- Mix everything together very well and shape into 2 loaves.
- You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
- Bake at 350 degrees for about 45 minutes to 1 hour or until done.
- Makes 2 loaves.
GRANDMA'S FAMOUS MEATLOAF WITH SALTINES
This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Steps:
- Mix all together; I generally use my hands.
- Form mixture into a loaf shape.
- Put in a baking dish (I use a pie plate).
- Bake at 350 for 1 hour.
- NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

DAD'S MEATLOAF
Steps:
- Preheat the oven to 375 degrees F.
- In a large bowl, add all meatloaf ingredients and mix with your hands until combined. Do NOT overmix it! Divide the mixture between two 9 x 5-inch loaf pans and set aside.
- For the glaze, in a medium bowl, stir together the sugar, ketchup, and mustard. Brush the top of each meatloaf with a thick coat of the glaze. Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150 degrees F, about 45 minutes.
- Let the meatloaves rest for 10 to 15 minutes, unmold, cut into slices, and serve.
GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

GRANDMA'S MEAT LOAF
We love Grandma's version of meat loaf so much that we have it at Thanksgiving, Christmas and Easter-the holidays wouldn't be the same without it! It's just as good the next day, as a cold sandwich.-Joan Frey, Spencer, Ohio

My grandmother gave me this recipe many years ago. The buttery flavor of the crushed crackers is what gives this meat loaf the special taste that our family says is best!-Etta Winter, Pavilion, New York

Steps:
- Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Transfer the sweet potatoes into a mixing bowl, and allow to cool for about 10 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch pie dish with unbaked pie crust.
- Mash the sweet potatoes smoothly, and mix in butter, 3/4 cup of sugar, salt, milk, egg yolks, cinnamon, and vanilla extract. Pour the filling into the pie crust.
- Bake in the preheated oven until the filling is set and the pie crust is beginning to brown, 25 to 30 minutes.
- Place the egg whites into a clean mixing bowl, and beat until stiff with an electric mixer set on medium, 3 to 5 minutes. Beat in 1/4 cup sugar and 1/2 teaspoon of vanilla extract, until the mixture holds firm peaks and is glossy. Remove the pie from the oven and spoon meringue over the sweet potato filling, swirling the meringue into attractive peaks. Return to oven, and bake until the meringue turns golden brown, about 10 minutes, watching carefully to avoid burning. Allow to cool before serving.
