BEN & JERRY'S FRESH GEORGIA PEACH ICE CREAM

The best way to capture the elusive flavour of summertime. Ben and Jerry prefer small peaches because they have more flavor and less water than the larger ones. Prep is 2hrs 15 mins which is almost all chill time. Freezing time is however long it takes for your ice cream maker to freeze it.

Number Of Ingredients 6

2 cups peaches, finely chopped
1 1/4 cups sugar
1/2 lemon, juice of
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
  • Cover and refrigerate for 2 hours, stirring the mixture every 30 minutes.
  • Remove the peaches from the refrigerator and drain the juice into another bowl.
  • Return the peaches to the refrigerator. Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
  • Whisk in the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
  • Pour in the cream and milk and whisk to blend.
  • Add the peach juice and blend.
  • Transfer the mixture to an ice cream maker and freeze following manufacturer's instructions.
  • After the ice cream stiffens (about 2 minutes before if is done) add the peaches, then continue freezing until the ice cream is ready.
  • Makes 1 generous quart.

I'm convinced that this is the BEST homemade ice cream recipe available. My grandma made this "forever" (in my mind...) - and we're carrying on the tradition! FABULOUS! ENJOY!

Number Of Ingredients 7

3 quarts milk
3 cups heavy cream
3 cups sugar
3 teaspoons vanilla
6 junket tablets
6 tablespoons water
1 dash salt

Steps:

  • Dissolve Junket tablets in cold water.
  • Mix milk, cream, sugar, salt and vanilla in a pan& heat to lukewarm.
  • (NOT hot!) Add Junket tablets.
  • Mix well and pour immediately into freezer (with dasher in place).
  • Let stand until set.
  • (will be thick like Junket) Mix in the ice cream freezer until thick& stiff.
  • Serve as-is- or with toppings!

1 cup whole milk

2 teaspoons vanilla

Steps:

  • Whisk all ingredients together until sugar dissolves.
  • Pour into the bowl of an ice cream machine.
  • Freeze according to the ice cream maker's instructions.
  • After the ice cream is made, transfer to an airtight container, cover tightly and freeze .
  • Serve with your favorite toppings.

3 cups cooked grits, still warm
2 large eggs, lightly beaten
1/4 cup milk
3/4 cup sharp cheddar cheese, grated
1/4 cup sweet onions, minced
2 tablespoons butter, melted
2 garlic cloves, minced
1 teaspoon salt, or to taste
Fresh ground black pepper to taste

Steps:

  • In a large bowl, combine the cooked grits, eggs, milk, cheese, onions, butter and garlic. Season with salt and pepper. Stir until well blended. Prepare a 1½-quart casserole dish with butter. Pour grit mixture into casserole. Bake at 350 degrees F for 1 hour, if it begins to brown too much on top, cover with foil.
