Big Batch of Grandma's Biscuits with Molasses Butter image

"My grandma's biscuits were a must on our table. My grandpa would pour molasses onto a plate, then cut in a big chunk of butter with a fork. Dipping a warm biscuit into the mixture is pure bliss!" says Katie

Number Of Ingredients 10

Cooking spray
2 1/2 cups all-purpose flour, plus more for dusting
1 1/2 sticks unsalted butter (1 stick cubed and chilled, 1/2 stick melted)
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon sugar
1/4 teaspoon baking soda
1 cup buttermilk
1 stick unsalted butter, at room temperature
2 to 3 tablespoons molasses

Steps:

  • Make the biscuits: Preheat the oven to 400 degrees F. Coat a baking sheet with cooking spray.
  • In a large mixing bowl, combine the flour and the cubed butter. Using a pastry blender, cut the butter into the flour until it resembles a coarse meal. Stir in the baking powder, salt, sugar and baking soda. Form a well in the center of the flour mixture and pour in the buttermilk. Mix with a fork until all of the ingredients are incorporated and the dough begins to come together into a ball. (The dough will be slightly dry.)
  • Dust a clean work surface with flour, coat your palms and rub some on a rolling pin. Turn out the dough onto the work surface. Knead the dough for 1 to 2 minutes, folding it over onto itself each time. Roll out the dough until about 1/2 inch thick. Dip a 3-inch biscuit cutter or the rim of a 3-inch-wide glass in flour and then cut out the biscuits. Reshape the leftover dough into a ball, roll it out again and cut out more biscuits. Repeat until the dough is gone.
  • Place the biscuits on the baking sheet and bake until the tops are golden brown, 10 to 15 minutes. While the biscuits are still hot, brush with the melted butter.
  • Make the molasses butter: Stir the butter and molasses together to combine. Serve the warm biscuits with the molasses butter.

1 large egg, room temperature
1/2 cup molasses
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup hot water
9 tablespoons fat-free whipped topping

Steps:

  • In a small bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in egg. Beat in molasses. Combine the flour, baking soda, ginger, cinnamon and salt; add to butter mixture alternately with water, mixing well after each addition., Transfer to a 9-in. square baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares; garnish with whipped topping.

1/2 cup molasses
1 teaspoon cinnamon
1/2 teaspoon clove
1 cup seeded raisins
1/2 cup pecans, chopped
1 1/2 teaspoons baking soda
1/8 teaspoon salt
1 cup hot water

Steps:

  • Heat oven to 350 and oil 8" cake pan.
  • Combine all ingredients, except the hot water, mix well.
  • Add hot water, batter will be thin.
  • Blend well and pour into pan.
  • Bkae 35 minutes.

5 egg whites
¼ cup white sugar
½ teaspoon salt
5 egg yolks
¼ cup white sugar
½ cup molasses
1 teaspoon lemon zest
2 teaspoons lemon juice
¾ cup cake flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg whites to form moist peaks. Gradually beat in 1/4 cup white sugar and salt. Beat until very stiff and shiny.
  • Beat egg yolks and 1/4 cup white sugar together until very light and fluffy. Beat in molasses, grated lemon rind and lemon juice. Stir in cake flour. Fold meringue gently into batter. Pour batter into an ungreased 9 inch tube pan.
  • Bake for 45 minutes. Remove cake from oven, and invert until cool. Loosen edges, and remove cake from pan.

Most people love it for the nostalgic feeling they get when their grandmother's made it when they were children. Great for the cold months with it's warm aroma filling your house. Perfect with coffee or tea after dinner.

2 eggs, well beaten
1/2 cup white sugar
1 1/2 cups molasses
1/2 cup melted butter
2 teaspoons baking soda, dissolved in
1 cup boiling water
2 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon ground cloves
1/2 teaspoon nutmeg
1 pinch salt

Steps:

  • Mix all dry ingredients except the baking soda.
  • Dissolve the baking soda in the boiling water.
  • Add the baking soda mixture, beaten eggs, melted butter and the molasses to the dry mixture.
  • Mix well.
  • Batter will be thin.
  • Bake at 350 degrees for about 45 minutes, checking the cake at 40 minutes with a toothpick (center comes out clean).
  • Serve warm.
  • May dust with some powdered sugar.
