This is my favorite salsa recipe given to me by my mother-in-law! Everyone in our family loves it!

Ingredients

4 serrano chile peppers, chopped, or more to taste
4 green onions, chopped, or more to taste
4 cloves garlic, chopped
5 roma (plum) tomatoes, chopped
1 bunch fresh cilantro, stems removed
1 (28 ounce) can crushed tomatoes (such as Contadina®)
1 pinch white sugar
1 pinch lemon pepper, or to taste

Steps:

Process serrano peppers, green onions, and garlic in a food processor until finely chopped. Add roma tomatoes and cilantro; pulse until desired consistency is reached. Transfer tomato mixture to a large bowl.
Stir crushed tomatoes into tomato mixture. Add sugar and lemon pepper to salsa and stir to combine.

Ingredients

2 large onions, diced
1/4 cup oil
1 cup sugar
1 cup white vinegar
5 ounces Worcestershire sauce
1/4 cup prepared yellow mustard
32 ounces ketchup
Hot sauce

Steps:

Saute onions in oil in a heavy skillet. Add sugar, white vinegar, Worcestershire sauce, and mustard. Add ketchup and simmer for about 20 minutes. Season, to taste, with hot sauce.

Great salsa for canning or freezing. My whole family loves it! Easy to double or triple recipe depending on how many tomatoes you have.

Ingredients

4 cups fresh tomatoes
2 cups bell peppers, chopped
1 cup onion, chopped
1 cup jalapeno, chopped
3 garlic cloves, chopped
1 tablespoon salt
1/2 cup apple cider vinegar
1 (6 ounce) can tomato paste

Steps:

Skin tomatoes. (I place tomatoes in boiling water for 45-60 seconds or until skins split - remove from water and peel.)
Rough chop and remove seeds from tomatoes.
Combine all ingredients in large sauce pan. Bring to boil. Lower heat and simmer 45 minutes stirring often.
Pour into hot sterile jars. Wipe down rim of jar. Screw on lid and hand tighten.
Place in boiling water bath and process for 15-20 minutes.
Tip: Be sure and label your batches. As the summer progresses peppers can get hotter. I also sometimes blend the batch before I can.
