In only 20 minutes you can enjoy these delicious scratch cookies made with tart chopped apples, warm spices and sweet brown sugar. Come fall there are plenty of cookie recipes that will make good use of the bounty of fresh apples, but you won't find one better or faster than these Old-Fashioned Apple Oatmeal Cookies.

Steps:
- Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
- Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
- Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

GRANDMA'S STYLE APPLE CAKE WITH VANILLA SAUCE

- Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. Stir in flour, baking powder and remaining 1 teaspoon cinnamon. Pour into the mold. Put the sliced apples on top and bake in a preheated 350-degree oven for 40 minutes.;
- Scrape the vanilla bean into scalded milk. Whisk yolks and sugar. Add a little hot milk to the yolk and sugar mixture. Pour back into the hot milk. Stir continuously with a wooden spoon over a low heat until it starts to thicken. Make sure it does not boil. Strain and let cool down.

- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flours, baking soda, nutmeg, salt, and pinch of cloves. In a large bowl, using an electric mixer, beat butter and brown sugar on high, scraping down bowl as needed, until light and fluffy, about 4 minutes. Beat in eggs, one at a time, scraping down bowl after each addition. With mixer on low, beat in half the flour mixture, then milk and remaining flour mixture. Beat just until combined.
- With a rubber spatula, fold apples and raisins into dough. Drop dough in 2-tablespoonful mounds, 2 inches apart, onto two baking sheets. Bake until cookies are firm around edges, about 14 minutes, rotating sheets halfway through. Let cool completely on wire racks.
- In a small bowl, whisk together confectioners' sugar and 1 tablespoon water. Transfer to a zip-top bag. Snip a very small hole in one corner and drizzle glaze over cookies.

GRANDMA'S APPLE CAKE
A classic one here. A simple, fuss free, easy apple cake. Basically you just need to stir the ingredients together and pop some apples on top. You can dust it with vanilla icing sugar when it has cooled down if you like.

- Pre-heat the oven at 180 C.
- In a bowl work the butter to a creamy consistency (an electric mixer would make it easier). Gradually add the sugar, eggs, vanilla essence, salt, juice and zest of the lemon. Incorporate well then add the flour, the cornflour and the raising agent. Stir well and add the milk.
- You should get a mixture which falls heavily from the spoon, not to runny, not too thick.
- Pour it all in a round cake tin.
- Peel and slice the apples into quarters, scrape them with a fork and lay them on the cake.
- Put the cake on the lower rack of the oven and cook for about 45 minutes.
- Switch the oven off, take the cake out but leave the oven door shut.
- Stir the jam with the hot water and when the cake is cooked spread it all over it and put it back into the hot oven for 5-10 minutes.
