GRANNY'S OLD FASHIONED PUDDING CAKE VIGILANTE

Steps:
- Preheat the oven to 350 degrees F.
- For the cake: In a large bowl, combine the cake mix, pudding mix, buttermilk, oil, eggs, lemon zest and lemon and lime juices. Whisk well, or beat with a hand mixer, until the batter is combined and smooth.
- Pour the batter into a 9-by-13-inch nonstick baking pan, or use a regular pan coated with cooking spray. Bake until the cake is baked through, 25 to 30 minutes. Remove the cake from the oven.
- For the glaze: Combine the powdered sugar, butter, buttermilk, lemon and lime zests and lemon juice in a saucepan and whisk well to combine. Bring the mixture to a simmer over low heat. Remove from the heat.
- Slice the cake into even pieces and drizzle the glaze over the top.

- Preheat oven to 375°F.
- Combine first 5 ingredients, 1-1/2 Tbs.
- cocoa powder and 3/4 cup sugar in a bowl.
- Pour into an 8 or 9 inch baking dish.
- Combine 2 Tbs.
- cocoa powder, 1 cup sugar and hot water in a separate bowl.
- Pour over cake batter and bake about 40 minutes.
- Combine remaining ingredients in a chilled bowl.
- Using chilled beaters, whip cream mixture until stiff.
- Serve cake upside down with whipped cream.

- Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, beat butter and sugar until crumbly. Beat in egg. In another bowl, whisk flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. If desired, coarsely chop cranberries. Fold cranberries into batter., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 20-25 minutes., In a large saucepan, combine brown sugar, water, sugar and butter; bring to a boil over medium heat, stirring constantly to dissolve sugar. - Preheat the oven to 350 degrees F (175 degrees C).
- Sift flour, 3/4 cup white sugar, baking powder, and salt together in a bowl. Mix in milk, butter, vanilla extract, and chocolate. Pour mixture into an ungreased 8x8-inch baking pan.
- Mix brown sugar, cocoa, and remaining white sugar together in another bowl. Spread over the top of the batter in the pan. Pour in water.
- Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, about 30 minutes. Allow to cool in the pan for 15 to 30 minutes. Serve warm.

GRANDMA'S BANANA PUDDING
My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

- Preheat the oven to 375 degrees F (190 degrees C).
- Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
- Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
- Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
- Beat egg whites in a glass, metal, or ceramic bowl, gradually adding cream of tartar, until soft peaks form. Add sugar and continue beating on high speed until stiff peaks form. Fold in vanilla extract. Spoon meringue over the pudding.
- Bake in the preheated oven until meringue browns, 15 to 20 minutes. Let cool before serving.

GRANDMA BALDWIN'S MAYONNAISE CAKE/PUDDING FROSTING
This is such a lovely example of a perfectly designed chocolate cake! If you haven't tried a mayo cake before, this is a must... It's oh-so moist.

- 1. Mix all cake ingredents together in medium mixing bowl and beat with mixer for 3 minutes, pour into 2 8inch well greashed and floured pans. Bake at 350 degrees for 20 to 30 minutes or until tooth pick when insert in middle of cake comes out clean. Let cool then Place onto a clean large plate or cake tray.
- 2. GRANDMA'S HOMEMADE CHOCOLATE PUDDING FOR FROSTING: In saucepan combine water, sugar and cocoa. While boiling, in small bowl mix milk and cornstarch (set aside). When mixture has boiled, turn heat down to medium, but remove from heat(for now).
- 3. Again stir cornstarch mix until blended and slowing stir into boiling mixture. Place back on stove over medium heat and add vanilla and crisco. Mixture will begin to thicken and look like chocolate pudding. When pudding has thicken, Pour pudding mixture over cooled cake and serve, any uneaten cake should be kept in Refrigerator.
GRANDMA'S PUDDING CAKE
This was my favorite dessert growing up that my Grandma used to prepare just for me at her Sunday morning brunch. Bring's back memeories!! Blueberry was always my favorite but I would think just about any fruit would work. Great way to use up extra friut before it spoils!

- Pre-heat oven to 350.
- Grease and flour square 9x9x13 pan.
- Sift flour, baking powder and salt into a mixing bowl.
- Ad remaining ingredients and beat until smooth.
- Bake at 350 for 30-40 minutes or until toothpick inserted in center comes out clean.
- Sauce:.
- In saucepan melt margarine or butter.
- Add flour, sugar, salt and water and cook until thickened, stirring often.
- Once sauce reaches desired consistancy (should be like a thick gravy) stir in vanilla.
- Pour some warm sauce over warm slice of cut cake. (Do not pour sauce on top of entire cake-it will get all soggy. Keep sauce warm on burner and use per serving. Sauce must be served warm.).
