A sweet poppy seed dressing beautifully coats fresh cut fruit in a 20-minute recipe.

1/4 cup vegetable oil
3 tablespoons honey
2 tablespoons lemon juice
1 1/2 teaspoons poppy seed
1 orange, peeled, sliced
1 medium pineapple, peeled, cored and cut into 1-inch pieces
1 small bunch seedless grapes, each cut in half (2 cups)
2 apples, cubed

Steps:

  • In tightly covered container, shake dressing ingredients until well mixed. Shake again before pouring over fruits.
  • In large bowl, toss dressing with orange, pineapple and grapes. Cover; refrigerate up to 24 hours. Just before serving, stir in apples.

1 can (20 ounces) pineapple chunks, undrained
1 can (11 ounces) mandarin oranges, drained or 2 medium navel oranges, peeled and chopped
1 large red apple, cubed
1 cup sliced fresh strawberries
1 cup halved seedless red grapes
3 kiwifruit, peeled and sliced
1 cup fresh or frozen blueberries
1 cup fresh or canned pitted dark sweet cherries
2 medium firm bananas, sliced

Steps:

  • In a large bowl, combine the first six ingredients; cover and refrigerate overnight. Just before serving, fold in the blueberries, cherries and bananas; gently toss.

250ml Sauternes or dessert wine
250ml cabernet sauvignon or dry red wine
50g caster sugar
vanilla pod , split, seeds scraped out
12 mint leaves, roughly chopped, plus sprigs to serve
6 basil leaves, roughly chopped
200g fresh raspberry
½ Charentais melon , scooped into 12 balls
200g fresh ripe strawberry , halved and quartered
50g wild strawberries (optional)
100ml chilled pink champagne , to serve

Steps:

  • In a large saucepan, bring the two wines, sugar and vanilla pod to the boil. Put the mint and basil in the centre of a small piece of muslin and tie with string to make a bag, then add to the pan with a few turns of freshly ground black pepper.
  • Remove from heat and leave to come to room temperature. Remove muslin bag, add raspberries and the melon balls. Chill for at least 4 hrs.
  • About 2 hrs before you intend to serve the fruits, add the strawberries and wild strawberries, if using, to the syrup. Serve in a large serving bowl or four individual bowls. Pour about 2 tbsp of the pink Champagne over just before serving.

1 bunch broccoli, cut into florets
1 head cauliflower, cut into florets
1/2 pound snow peas
1 pint cherry tomatoes
1/2 cup butter (1 stick) melted
Garlic powder to taste
Salt and pepper

Steps:

  • In a large pot fitted with a steamer basket, bring water to a boil and add vegetables successively starting with broccoli and cauliflower, about 3 minutes, then snow peas about 3 more minutes, then cherry tomatoes, until all vegetables are fork tender (a fork can easily be poked through). Transfer vegetables to a large mixing bowl and season with garlic powder and salt and pepper, to taste, and toss with melted butter.

My grandma used to make this whenever we visited, and made it for my mom when she was a child at least once a week! Quick, easy, and delicious! It's nice to make during the summer, because it is all cooked on top of the stove!

1 lb ground beef
1/2 cup onion, chopped
2 (14 1/2 ounce) cans whole tomatoes
2 (15 1/2 ounce) cans kidney beans
8 ounces egg noodles, cooked (about half of a package)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder (to taste)
1/2 teaspoon seasoning salt

Steps:

  • In a frying pan, brown burger with onions. Drain grease.
  • Add tomatoes and kidney beans, including juice.
  • Add seasonings and simmer 15 minutes.
  • Add noodles, stir.
  • Simmer for 20 minutes. Top with parmesean cheese if wanted. Makes a large dish!

2 cups red seedless grapes
1 (20 ounce) can pineapple chunks, drained,reserve the juice
1 (11 ounce) can mandarin orange segments, drained,reserve the juice
2 medium bananas, sliced 1/2 inch
1/2 cup sugar
3/4 cup of the reserved fruit juice
1 egg
1 tablespoon all-purpose flour
1 teaspoon lemon juice

Steps:

  • Place fruit in a large bowl.
  • In 1-qt saucepan stir together all dressing ingredients.
  • Cook over medium heat, stirring occasionally, until dressing is thickened (3 to 5 min.).
  • Let stand 5 minutes.
  • Pour dressing over fruit; toss to coat.
  • Chill 15 minutes.

1 can (20 ounces) unsweetened pineapple chunks
1 can (15 ounces) reduced-sugar sliced pears, drained
1 can (15 ounces) sliced peaches in juice, drained
1-1/2 cups seedless red grapes
1 package (3 ounces) cook-and-serve vanilla pudding mix
2 medium firm bananas
3 tablespoons lemon juice
1 jar (10 ounces) maraschino cherries, well drained

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. Add bananas and cherries to chilled fruit. Add cooled pudding; toss gently to combine. Refrigerate until serving. Refrigerate leftovers.

8 ounces sweet potato or yam
8 ounces thin-skinned white or yellow potato
2 teaspoons canola oil
2 large cloves garlic
16 ounces butternut squash
4 ounces peeled baby carrots
Several sprigs fresh sage to yield 2 tablespoons chopped
1/8 teaspoon salt
Freshly ground black pepper to taste
2 tablespoons no-salt-added chicken or vegetable stock

Steps:

  • Peel sweet potato and slice in food processor. Peel white potato and slice in food processor.
  • Heat large nonstick skillet until it is very hot.
  • Reduce heat to medium, and add oil. Saute potatoes, turning often.
  • Meanwhile, mince garlic and add to potatoes as they cook.
  • Halve butternut squash, and set aside half for another use. Remove seeds and peel remaining half, and slice in food processor; slice carrots. Add squash and carrots to potatoes, reduce heat to medium-low and cook, turning occasionally.
  • Wash and chop sage, and add to vegetables. Season with salt and pepper. Add 2 tablespoons of stock to vegetables, stir, cover and continue to cook over low heat.
  • Wash, quarter and core apples; slice in food processor.
  • Add apples to vegetables. Cook another few minutes, until apples are soft.
