GRANDMA'S LACE COOKIES
This is one of my favorite cookie recipes that has been passed down to me from my Grandmother. Friends and family love them-- they are so addictive!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
- Drop teaspoonfuls of dough onto the prepared baking sheet.
- Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

GERMAN LEBKUCHEN COOKIES

Steps:
- In a mixing bowl, combine the flour, nutmeg, cinnamon, baking soda, cloves, and allspice.
- In a separate mixing bowl, beat the egg and the brown sugar together for 3 minutes.
- Stir in the honey and molasses to the egg/sugar mixture.
- Add all the dry ingredients to the wet mixture. Beat until well blended. Your dough will be crumbled, but when pressed together will hold its shape.
- Transfer dough to waxed fabric, plastic wrap, or a storage container with a lid. Wrap it up or cover and chill for at least 3 hours.
- When you are ready to bake, preheat your oven to 350˚F and line baking sheets with parchment paper or silicone mats.
- Remove your dough from the refrigerator and turn out onto a lightly floured surface.
- Roll dough to a thickness of ¼" to ½". Use a 3" round cookie cutter to cut out circles or use a knife to cut 3" squares.
- Place the cookies an inch apart on a cookie sheet and top with a few sliced almonds. There is no need to press them down as they will stick to the cookie as it rises during baking.
- Bake for 9-10 minutes. They will be done when you can touch the cookie top without leaving an imprint.
- Remove cookies and immediately transfer to a wire cooling rack.
- While the cookies are cooling, combine the ingredients for the icing in a small bowl.
- When the cookies are almost completely cooled, dip the top of each cookie in the icing and spread with the back of a knife. You can also use a pastry brush and brush it on. Place the glazed cookie back on the wire rack to dry.
- After the icing has hardened, store in an airtight container.

GRANDMOTHER'S LEBKUCHEN COOKIES
This cookie was sent to my boyfriend and I for Christmas last year by my Bijan's Grandmother. The first taste kind of surprised me but once I ate one cookie I was hooked. The cookies were cut out into large bar shapes with scalloped edges. They strongly taste of licorice because of the anise oil and that is what makes this cookie so unique.. The anise oil can be purchased at health food stores. The recipe sure makes a lot of cookies but I am not sure how many. The passive work time is the chilling period.

Steps:
- Cream together molasses, brown sugar, egg, and shortening.
- Sift cinnamon, cloves, baking powder, salt, and flour and set aside.
- Add coffee, anise oil and vinegar to creamed brown sugar mixture and mix thoroughly.
- Add dry ingredients and baking soda solution to mixture (mix well).
- Add ground walnuts and mix.
- Refrigerate for at least 3 days.
- Dough will be tough.
- keep unused dough in fridge.
- Keep flouring rolling pin.
- On a floured surface and with a floured rolling pin roll out dough (Roll out a pound at a time) to 1/4 of an inch.
- cut cookies with cookie cutters.
- grease cookie sheet slightly.
- Bake at 350 degrees for about 8 minutes.
- Ice with confectioner sugar, butter, milk icing (I don't have exact measurements for her icing because she says she wings it).

SUE'S GRANDMA WIRTH'S LEBKUCHEN [NO ALCOHOL]
Per Sue: This recipe is cut in half from the original which used 10 pounds!!!! of flour. Traditionally these are made right after Thanksgiving and aged in big crocks with a cut up apple to keep them moist. My great-grandmother used the candied fruit as called for in the recipe. My grandmother hated the candied fruit, left them out and increased the raisins.

Steps:
- Mix butter, shortening, honey, molasses, sour cream and brown sugar in saucepan over low heat. When blended, cool a little but while still somewhat warm, stir in coarsley chopped walnuts, candied fruit and eggs.
- Stir 5 pounds of flour less 4 cups with the spices, salt and soda. Add this to fruit and nut mixture. This mixture will be very firm. Add more flour if needed. Mix this dough until you cannot possible add any more flour into the dough. When it is very stiff, cover and put in refrigerator overnight.
- In the morning take small amounts of dough (keep rest in refrigerator) and roll out 1/4 inch thick and cut into oblong shape using a Spam Can for cookie cutter. Use as little flour as possible when rolling cookies. Place on greased cookie sheet, press a whole almond in middle to decorate and bake 8 to 10 minutes at 350-375 degrees. Do not overbake. They should be done in the middle, but still soft and chewy.
- Her recipe said you could use hickory nuts or walnuts. Instead of the candied fruit mix, she used candied orange peel, citron and lemon peel. If you don't have a Spam Can cookie cutter roll the dough 1/2 inch thick and cut in oblongs that are 1 1/2 inch by 2 1/2 inch.

GRANDMA BONNIE'S DREAM COOKIES RECIPE BY TASTY

- Preheat the oven to 275˚F (135˚C). Line 2 baking sheets with parchment paper.
- In a medium bowl, sift together the flour, salt, and baker's ammonia.
- In a separate medium bowl, cream together the butter and sugar with an electric hand mixer on low speed until light and fluffy, about 2 minutes.
- Add the vanilla and continue beating until fully combined.
- Add the dry ingredients to the wet ingredients and beat to incorporate.
- Roll about 1 ounce of dough at a time in your hands to make walnut-sized balls. They will be small, about ½ inch (1 ¼ cm) wide. Place the balls of dough on the prepared baking sheets, leaving about 1 inch (2 ½ cm) of space between each cookie. Using a flat-bottomed measuring cup, gently press down on the cookies to flatten.
- Top each cookie with 3 chocolate chips, a single almond, or raisins.
- Bake the cookies for 30 minutes, or until the bottoms are light golden brown and the edges are crispy.
