GRANNY GILLESPIE'S PEACH COBBLER

Granny Gillespie's Peach Cobbler image

When I was a kid growing up in Georgia, summertime meant endless adventures with my cousins at the beach, shelling peas and shucking corn on the porch, and hopefully at least one big bowl of my Granny's famous peach cobbler. We were very fortunate to live only a half-mile or so from one of the...

Time 1h5m

Yield 4 to 6

Number Of Ingredients 12

5 large peaches, pitted, peeled, and cut into 2-inch pieces
½ cup light brown sugar
⅛ tsp. almond extract
½ loaf of brioche or farmhouse style white bread, diced into 2-inch pieces
½ cup granulated sugar
1 tsp. vanilla extract
1 tbsp. cinnamon
½ cup melted butter
2 tbsp. whole milk
2 tbsp. flour
1 egg
Coarse sea salt, such as Maldon

Steps:

  • Preheat oven to 350°F.
  • Combine peaches with brown sugar and almond extract in a small mixing bowl. Allow this to sit for approximately 5 minutes for juices to collect. Spoon this mixture into the bottom of an 8x8 baking dish, leaving behind the collected juices and set aside.
  • Using the same mixing bowl as the peaches. Combine the reserved juices, melted butter, egg, cinnamon, vanilla extract, milk, and flour. Whisk this mixture together to create a batter.
  • Toss bread cubes into the batter and stir to coat evenly.
  • Spoon the bread cubes and batter over the top of the peaches in the pan in an even layer. You should have approximately the same volume of peaches on the bottom as you have bread on top. Lightly sprinkle sea salt over the top of the bread mixture.
  • Wrap the pan in aluminum foil and place in the preheated oven. Bake for 30 minutes before removing the foil and bake uncovered for an additional 15 minutes or until golden brown.
  • Remove from the oven and allow to cool for 15 minutes before serving. Serve either alone or with vanilla ice cream.

GRANDMA'S FAMOUS PEACH COBBLER

Grandma's Famous Peach Cobbler image

My husband's grandmother was known by everyone for her good cooking and her peach cobbler was among her all-time favorite crowd pleasers. Unfortunately she became ill with cancer and, not to sound heartless, but it occurred to me that her recipe would be lost forever. She dictated this to me not long before she passed away. I scribbled it on some paper and hope it's accurate - she was one of those "pinch of this" type of cooks so some of the measurements are guesses. I have made it once and the family said it was her cobbler. Hope you enjoy it as much as we do.

Time 1h

Yield 16 serving(s)

Number Of Ingredients 11

2 cups flour
1 1/2 cups shortening
1/4 teaspoon salt
2 (29 ounce) cans peaches, undrained
1 cup sugar, to taste
1/2 cup water
2 -3 tablespoons cornstarch
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups powdered sugar
2 -3 tablespoons milk

Steps:

  • Make crust by cutting shortening into flour and salt. Roll out into two crusts. Put one into 13x9 inch pan. Bake only the crust in the pan at 350 for about 15 minutes. You don't want it to be completely cooked.
  • Put peaches in pan over medium heat. Add sugar, vanilla, and cinnamon.
  • Mix water and cornstarch and add to peach mixture. Cook until thick.
  • Pour peach mixture on top of crust.
  • Place second, uncooked crust on top of peach mixture.
  • Bake approximately five minutes or until brown.
  • Mix powdered sugar and milk making a glaze. You may need to add more milk as needed.
  • Brush glaze on top of crust and bake until it reaches a nice color, about five minutes.

GREAT GREAT GRANDMA'S FRESH PEACH COBBLER

Great Great Grandma's Fresh Peach Cobbler image

This recipe has been in my family for generations. The brown sugar and the juices from the fresh peaches caramelize as the batter on top bakes into a moist cake. This is wonderful served warm with heavy cream, whipped cream, or ice cream. **NOTE: The number of peaches needed will depend on their size. You want an even layer, covering the bottom of your baking dish. I have use anywhere from 4 large peaches to 6 small peaches. If you place your peaches into a pot of boiling water for about 30 - 40 seconds and then into cold water, the peels come off very easy. Another tip; before peeling (after the plunge into the boiling water), take your paring knife and starting from the stem end, slice around the peach ending were you started, then while holding each half, twist in opposite directions to release the pit (much like you would like an avocado). Then peel and slice. If you have really sweet peaches, you can adjust the brown sugar to 3/4 cup.
