OLD FASHIONED FLAPJACKS



Old Fashioned Flapjacks image

Been using this recipe for many years. It came from one of McCalls oldest cookbooks. ALWAYS use real maple syrup.

Number Of Ingredients 7

2 cups all-purpose flour (wheat can be used also or a combination of the two)
4 tablespoons sugar
2 teaspoons baking powder
6 tablespoons butter, melted
1 1/2 cups milk
1/2 teaspoon salt
2 eggs

Steps:

  • Preheat griddle so that a drop of water beads when dropped on it.
  • Combine dry ingredients.
  • Combine wet ingredients and beat well. (Do this quickly as the butter will tend to set up when it hits the cold milk).
  • Add wet ingredients to dry ingredients.
  • Mix but not too much. Batter will be slightly lumpy.
  • Drop a couple tablespoons for each pancake onto hot griddle and cook until bubbles appear in batter and bottom is golden brown.
  • Serve with real butter and real maple syrup.

Steps:

  • Grease a baking tin of about 30x20cm (11"x7") and line with baking parchment
  • Pre-heat oven to 180C or Gas Mark 4
  • Melt the margarine, syrup and sugar in a hot pan
  • Take off the heat and stir in the porridge oats
  • Pour and spread evenly into the baking tin for 20mins (or until golden) at 180C/Gas Mark 4

½ cup butter or margarine
½ cup packed brown sugar
4 tablespoons golden syrup or corn syrup
3 cups rolled oats
¼ cup raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a saucepan over low heat, combine the butter, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted. Stir in the oats and raisins until coated. Pour into an 7 or 8 inch square baking pan. The mixture should be about 1 inch thick.
  • Bake for 30 minutes in the preheated oven, or until the top is golden. Cut into squares, then leave to cool completely before removing from the pan.

2 cups complete buttermilk pancake mix
1-1/2 cups water
1 tablespoon maple syrup
1 tablespoon butter, melted
1/2 teaspoon ground cinnamon
SYRUP:
1 cup packed brown sugar
1/4 cup water
1 tablespoon butter
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the pancake mix, water, syrup, butter and cinnamon. Pour batter into a plastic squirt bottle. Squeeze batter into desired letters and shapes onto a greased hot griddle. When undersides are browned, turn and cook until second side is golden brown., Meanwhile, in small saucepan, combine the brown sugar, water and butter. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until sugar is dissolved. Remove from the heat; stir in vanilla. Serve with flapjacks.
