Quick, easy granola bars.

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

½ cup firmly packed brown sugar
½ cup honey
1 cup peanut butter
1 teaspoon vanilla extract
1 ½ cups quick-cooking rolled oats
1 ½ cups crispy rice cereal
1 cup raisins
½ cup shredded coconut
½ cup sunflower seeds

Steps:

  • Lightly grease an 8-inch glass baking dish.
  • Bring brown sugar and honey to a boil in a saucepan, stirring constantly. Remove from heat and stir peanut butter and vanilla into the sugar mixture.
  • Mix oats, rice cereal, raisins, coconut, and sunflower nuts in a large bowl; add peanut butter mixture and blend. Press mixture into the prepared pan.
  • Cool mixture completely before cutting into bars.

4 ½ cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
⅔ cup butter, softened
½ cup honey
⅓ cup packed brown sugar
2 cups miniature semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan.
  • In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
  • Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Came across a clip-out of this recipe in a stack of old papers. I'd always wanted to try making granola bars and just hadn't gotten around to it. Finally did and discovered this is an excellent base recipe - very versatile and accepting of minor tweaks. The bottom portion of my clip-out says Good Housekeeping October 2009. Not sure if there was an article name associated with it, just has a heading of "Granola Bars." Here's what GH had to say about it: "Bake a pan of these snacks and you'll never go back to the boxed stuff. They're super-easy and fun to make with kids. One brand uses almost as many nuts as we do, but a 12-bar box is $30! Our tray of 18 costs only $6 - and it's a whole lot tastier."

2 cups old fashioned oats
3/4 cup toasted wheat germ
3/4 cup toasted walnuts
3/4 cup dried cranberries
2 tablespoons packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup honey
1/2 cup vegetable oil
2 large egg whites

Steps:

  • 1. Preheat oven to 325 deg F. Spray 13" by 9" metal baking pan with nonstick cooking spray. Line pan with foil, with ends extending 2 inches over short sides of pan; spray foil.
  • 2. In glass pie plate, spread oats; microwave on High, in 1-minute increments, 4 to 5 minutes or until fragrant and golden, stirring occasionally. Cool to room temperature.
  • 3. In large bowl, combine oats, wheat germ, walnuts, cranberries, brown sugar, cinnamon, and salt. Stir in honey, oil, and egg whites until well mixed. Transfer to prepared pan. Using wet hand, press into an even layer.
  • 4. Bake 32 to 35 minutes or until dark golden. Cool in pan on wire rack.
  • 5. When cool, use foil to transfer to cutting board. Cut lengthwise into 6 strips, then cut each strip crosswise into thirds. (You should have roughly 4 1/4" by 1 1/2" bars.) Store in tightly sealed container at room temperature up to 1 week, or in freezer up to 2 month.

1-1/2 cups miniature marshmallows
1/2 cup apricot or peach preserves
1/4 cup packed brown sugar
4 cups reduced-fat granola with raisins
1-1/3 cups diced dried mixed fruit

Steps:

  • Line an 8-in. square pan with waxed paper. Grease the paper with 1 tablespoon butter; set aside. In a large heavy saucepan, combine the marshmallows, preserves, brown sugar and remaining butter; cook and stir over medium heat until blended. Remove from the heat. , Stir in granola and mixed fruit; toss to coat. Press firmly into prepared pan. Cover and refrigerate for 1-1/2 hours or until firm. Invert and remove waxed paper. Cut into bars.

1 cup rolled oats
½ cup flax seeds
½ cup roasted almonds
¼ cup pumpkin seeds
2 cups puffed rice
½ cup dry milk powder
½ cup dried cranberries
⅓ cup protein powder
⅓ cup sesame seeds
¼ cup chia seeds
¼ cup shredded coconut
½ cup almond butter
½ cup peanut butter
½ cup honey
⅓ cup coconut milk
2 tablespoons vegetable oil
2 teaspoons vanilla extract
¾ cup oat bran

Steps:

  • Cover a large cookie sheet with parchment paper.
  • Pulse oats in a food processor just until slightly ground. Transfer to a large bowl. Repeat with flax seeds, then almonds, and finally pumpkin seeds, pulsing just one ingredient at a time.
  • Add puffed rice, milk powder, cranberries, protein powder, sesame seeds, chia seeds, and shredded coconut to the bowl; mix to combine.
  • Mix almond butter, peanut butter, honey, coconut milk, vegetable oil, and vanilla together in a quart-sized bowl until well combined. Pour wet mixture into the dry mixture and stir until well blended. Spread thinly onto the prepared cookie sheet.
  • Place in the freezer until solid, about 1 hour.
  • Remove from the freezer, dust with oat bran, and cut into 24 bars. Store in a zip-top bag in the refrigerator.

8 ounces old fashioned oats, approximately 2 cups
1 1/2 ounces raw sunflower seeds, approximately 1/2 cup
3 ounces sliced almonds, approximately 1 cup
1 1/2 ounces wheat germ, approximately 1/2 cup
6 ounces honey, approximately 1/2 cup
1 3/4 ounces dark brown sugar, approximately 1/4 cup packed
1 ounce unsalted butter, plus extra for pan
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
6 1/2 ounces dried cherries (any combination) or 6 1/2 ounces dried blueberries (any combination)

Steps:

  • Butter a 9x9-inch glass baking dish and set aside. Preheat the oven to 350°F.
  • Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
  • In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
  • Once the oat mixture is done, remove it from the oven and reduce the heat to 300°F Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.

2 tablespoons canola oil
2 teaspoons vanilla extract
1/2 teaspoon salt
3/4 cup chopped dried fruit

Steps:

  • Preheat oven 300 degrees F.
  • Place a medium saucepan over medium heat and add honey, dark brown sugar, canola oil, vanilla extract, and salt. Just stir that until the sugar has completely dissolved.
  • Add oat mixture, and chopped dried fruit mix.
  • When the mixture is completely mixed and no more liquid seems apparent, move that into a well-oiled 9 x 9 baking dish.
  • Allow the bars to cool completely. Run a knife around the edge of the pan, turn out onto a cutting board and cut into 16 squares.
