1 vanilla bean
1 1/4 cups heavy cream
1 tablespoon powdered gelatin
3 tablespoons milk
1/4 cup sugar
5 egg yolks
1 1/4 cups whipped cream
6 sliced strawberries

Steps:

  • Put the split vanilla bean in cream and slowly bring to a boil. Turn off heat and let sit for 1 hour.
  • Remove bean and scrape out seeds, add them to the cream and discard the pod. Sprinkle the gelatin into the milk and set aside.
  • Whisk the sugar and egg yolks together. Warm the cream mixture back up and slowly whisk into eggs. Place mixture over simmering water and stir until it is thick enough to coat the back of a wooded spoon. Remove from heat and add milk and gelatin mixture.
  • Place bowl in ice bath and stir until at room temperature.
  • Fold in whipped cream and pour mixture into 6 (6-ounce) ramekins. Place in refrigerator for 4 to 5 hours or until mixture is set. Remove from molds and garnish with strawberries.

4 tablespoons unsalted butter, melted, plus more butter for pan
1 1/2 cups unbleached all-purpose flour, plus more for pan
2 large eggs, room temperature
2/3 cup granulated sugar
1/4 cup extra-virgin olive oil
1/3 cup whole milk
1/2 teaspoon pure vanilla extract
3/4 teaspoon baking powder
1 pinch of sea salt
Grated zest of 1 lemon
Grated zest of 1 orange
10 ounces small fresh purple grapes
Confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 350 degrees. Generously butter and flour a 9-inch springform pan, tapping out any excess flour. Set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat eggs and sugar until thick and lemon colored, about 3 minutes. Add melted butter, the olive oil, milk, and vanilla extract, and mix until blended.
  • Sift flour, baking powder, and salt into a large bowl. Add lemon and orange zests, and toss to coat the zest with flour. Spoon zest mixture into batter, and stir with a wooden spoon until thoroughly blended. Scrape down the sides of the bowl, and mix once more. Set aside for 10 minutes, to allow the flour to absorb the liquids.
  • Stir about 3/4 of the grapes into the batter. Spoon the batter into the prepared cake pan, and smooth out the top with a spatula.
  • Place the pan in the center of the oven. Bake for 15 minutes, then sprinkle top of the cake with remaining grapes. Bake until the top is a deep golden brown and the cake feels quite firm when pressed with a fingertip, about 40 minutes more, for a total baking time of 55 minutes. Remove to a rack to cool. After 10 minutes, run a knife along the sides of the pan. Release, and remove the side of the springform pan, leaving the cake on the pan base. Sprinkle with confectioners' sugar just before serving. Serve at room temperature, cut into thin wedges.

1 quart strawberries, hulled
2 envelopes unflavored gelatin
1/4 cup cold water
1/2 cup sugar
3 tablespoons cherry-flavored liqueur
2 cups heavy cream, whipped
Whole strawberries for garnish

Steps:

  • Puree strawberries in blender.
  • In saucepan soften gelatin in cold water. Add to puree with sugar.
  • Heat and stir until gelatin is dissolved. Cool and add cherry liqueur.
  • Chill, stirring occasionally, until mixture begins to thicken.
  • Fold in whipped cream and spoon into eight-cup mold or serving bowl until mixture is set.
  • To serve, unmold and top with whole berries.

1 tablespoon cornstarch
1/4 teaspoon salt
1 1/2 cups milk
1 egg, beaten
1 teaspoon vanilla
1/2 cup heavy cream, whipped

Steps:

  • Combine sugar, flour, cornstarch and salt. Gradually stir in milk.
  • On med-high heat (turning down to med, if necessary), cook and stir until mixture thickens and boils.
  • Cook and stir 2-3 minute.
  • Stir a little of the hot mixture into egg yolk.
  • Stir egg mixture into the rest of the hot mixture and bring it just to boiling.
  • STIRRING CONSTANTLY.
  • Add vanilla.
  • cover entire surface with plastic wrap or waxed paper.
  • Cool.
  • beat smooth.
  • Fold in whipped cream.

  • In a medium size mixing bowl, combine chili sauce, cranberry sauce, sauerkraut, water, and brown sugar. Mix well. Pour sauce and meatballs in a slow cooker, stir.

GRAPE CAKE

A different sort of cake. The batter is prepared and put in the pan and the grapes are distributed over top for baking. When I first saw this recipe I thought the grapes would either sink or burst and leak during the baking but they didn't! Make sure the grapes are well dried off before placing on the cake. Measure the flour carefully and be careful not to over bake or the cake can turn out to be a bit dry. A lovely and different cake to serve with tea or coffee. I found this originally in a 1974 issue of Gourmet magazine. Try serving it with a sifting of icing sugar over the top or a dollop of vanilla yogurt or lightly sweetened whipped cream.

1/2 cup butter, softened
1/4 cup sugar
3 egg yolks
1 teaspoon finely grated fresh lemon rind
1/2 teaspoon vanilla
3 egg whites
1/2 cup sugar
1 1/4 cups sifted flour, sift before measuring
1 1/3 cups green seedless grapes, about 1 lb

Steps:

  • Cream together the butter and the ¼ cup sugar. Beat in egg yolks, 1 at a time, beating well after each addition. Beat in lemon rind and vanilla.
  • In another bowl, beat egg whites until they hold soft peaks. Add the ½ cup sugar, 2 tablespoonfuls at a time and continue to beat until they hold stiff peaks.
  • Stir one fourth of the whites into the yolk mixture and fold in the remaining whites. Sift the sifted flour over the mixture, folding it in gently.
  • Transfer the batter to a buttered 8 inch round cake pan. Sprinkle the grapes over the top of the batter.
  • Bake at 350 F for 35-40 minutes or until it is lightly browned and pulls away from the sides of the pan. Let the cake cool in the pan on a rack until barely warm. Makes 6 to 8 servings depending on how you cut it.

2-1/4 cups boiling water
1 cup sour cream
1 quart orange sherbet, softened
1 can (11 ounces) mandarin oranges, drained and halved
Red and green grapes, optional

Steps:

  • Dissolve gelatin in water. Stir in sour cream until smooth. Mix in sherbet until melted. Chill until partially set. Fold in oranges. Pour into a 7-cup ring mold coated with cooking spray. Cover and chill 8 hours or overnight. Just before serving, unmold onto a platter; fill the center with grapes if desired.

1 box (3 oz.) JELL-O Strawberry Flavor Gelatin
1 cup boiling water
1 can (12 oz.) evaporated milk
cooking spray

Steps:

  • Important: Shake and place the evaporated milk the day before in the refrigerator. It must be very cold.Place a large bowl and beaters in the freezer for 5 minutes.
  • Prepare your 4-cup mold by spraying a thin layer of oil. Or you could use 6 little containers, do not spray if using individual containers.
  • Boil the water. Measure 1 cup and pour the gelatin, stir until completely dissolved.
  • Beat the evaporated milk in the chilled bowl for 5 minutes on high speed, until doubled in size.
  • Lower the speed to medium and add the gelatin dissolved in water.
  • Beat 1 minute more.
  • Pour into the prepared pan.
  • Refrigerate at least 4 hours, better overnight.
  • Unmold and serve with chocolate sauce or fresh strawberries.
  • Keep refrigerated.
