CRUNCHY SWEET AND SALTY CHICKEN

Steps:
- Preheat oven to 425 degrees.
- In a small bowl, mix mayonnaise and mustard. Slather this mixture all over both sides of each breast using a pastry brush.
- In a large bowl or high rimmed pie plate, place slightly crushed Grape-Nuts, brown sugar and salt and mix to combine.
- Place a breast in the Grape-Nuts mixture and turn, pressing to coat. Transfer breast to a 9X14 baking dish. Repeat for the other three breasts. Spray tops on each breast with a light coating of pan spray.
- Bake uncovered 30-40 minutes depending on breast size. Poke with your finger, if it bounces back, it is done.
- Broil for a few minutes to further brown the tops if desired.
- Let chicken sit for 5-10 minutes. Slice the chicken from the breasts and serve with lime wedges.

- Preheat the oven to 375 degrees F (190 degrees C).
- Toss sliced apples with lemon juice to prevent browning.
- Mix flour, rolled oats, wheat and barley nugget cereal, melted butter, 1/4 cup white sugar, and 1/4 cup brown sugar together in a large bowl.
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir 1/3 cup brown sugar, 1/3 cup white sugar, and cinnamon into melted butter until sugar begins to dissolve, 3 to 4 minutes. Add apples and water; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.
- Pour apples and sugar mixture into a 2 quart baking dish. Sprinkle topping evenly over the apple filling.
- Bake in the preheated oven until the top is browned and the filling is bubbling up around the edges, 25 to 30 minutes. Cool for 10 to 15 minutes.

- Gather the ingredients.
- Preheat oven to 425 F. Grease and flour muffin pans or line with paper liners.
- In a bowl, combine flour, baking powder, salt, and sugar; whisk to blend thoroughly. Add cereal and mix.
- Combine beaten egg , milk, and melted shortening; add to dry mixture and mix just until all ingredients are moistened.
- Fill prepared muffin pans about 2/3 full.
- Bake for 18 to 22 minutes, or until done.

- 1. In a food processor pulse 4 or 5 times, or put the cereal in a zip lock baggie, and with a mallet crush the cereal.
- 2. Add the 2 cups all purpose flour, 2 cups Panko bread crumbs, 3 tablespoon onion powder, 3 teaspoon dry oregano, 2 tablespoons garlic pepper seasoning, 1 & ½ teaspoons cinnamon, 2 tablespoons cayenne pepper " more or less to taste ", 3 tablespoon Kosher salt and 1/2 cup tablespoon Turbinado sugar, and put in a jar. Put a lid on and turn up side down to mix.
- 3. Pound the chicken to flatten.
- 4. Take the 1 cup of flour and put it in a bowl.
- 5. Beat the eggs & milk and put them in a separate bowl.
- 6. Take 1 & ½ cups of the cereal breading and put them in a separate bowl. The amount of breading will depend on how big the chicken pieces are.
- 7. First put the chicken in the plain flour, shake off any excess.
- 8. Then the eggs, letting some of the egg drip off.
- 9. Then the cereal breading.
- 10. Fry in some oil " covered " first for about 5 minutes and then remove the cover , turn and finish cooking the chicken.
