GRAPEFRUIT ZABAGLIONE OVER MIXED BERRIES



Grapefruit Zabaglione over Mixed Berries image

3 cups mix of hulled and quartered strawberries, blueberries, raspberries, and/or blackberries
4 egg yolks
1/3 cup sugar
1/4 cup fresh grapefruit juice
Pinch kosher salt
Grated grapefruit zest

Steps:

  • In a large bowl, toss together the berries. Spoon the berries into serving dishes and set aside.
  • Meanwhile, combine the egg yolks, sugar, grapefruit juice, and salt in a large metal or glass bowl. Whisk vigorously until combined and the color is a pale yellow. Set the bowl over a saucepan of simmering water. Be very careful not to let the bottom of the bowl touch the simmering water. Using a whisk or an electric hand mixer, vigorously whisk the egg mixture until it has tripled in volume and is very thick and creamy, about 4 to 5 minutes.
  • Spoon the warm zabaglione over the berries. Top with a light sprinkle of grapefruit zest. Serve immediately.

1/2 cup sugar
1/4 cup grappa (see note)
1/2 cup dry white wine
1 cup heavy cream
2 pints fresh strawberries, raspberries, blackberries or blueberries

Steps:

  • Bring three cups of water to a boil in a three-quart double boiler.
  • Beat the yolks with the sugar off the heat in the top of the double boiler until the mixture is thickened and light lemon color.
  • Reduce the heat and let the water come to a simmer. Place the bowl snuggly over the simmering water and whisk until the mixture becomes foamy and thickens, about 10 minutes. Gradually whisk the grappa and white wine into the mixture, whisking constantly until the mixture puffs and coats the back of a spoon.
  • Whisk the zabaglione over an ice-water bath until completely cool. Cover and refrigerate until chilled.
  • When ready to serve, whip the cream and fold it into the zabaglione. Spoon the zabaglione over fresh berries.

1/4 cup whipping cream, or heavy cream
1/2 cup semisweet chocolate chips
8 large egg yolks
2/3 cup sugar
1/2 cup dry Marsala
Pinch salt
1 pound fresh strawberries, hulled and quartered

Steps:

  • Add cream and chocolate to a heavy small saucepan. Cook over low heat, stirring often, until the chocolate chips are melted and smooth. Set aside and keep warm.
  • Whisk the egg yolks, sugar, Marsala, and salt in a large glass bowl until blended. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water. Whisk the egg mixture over the simmering water until it is thick and creamy, about 4 minutes. Remove from the heat.
  • Using a large rubber spatula, fold the melted chocolate mixture into the egg mixture.
  • Divide the strawberries among 6 coupe dishes. Pour the warm zabaglione over the strawberries and serve.

3 large egg yolks at room temperature
3 tablespoons sugar
3 tablespoons Moscato d'Asti wine
Garnish: butter or hazelnut cookies, or fresh fruit (like peaches, mango, or berries)

Steps:

  • Place ingredients in a 2-quart pot (copper is nice but not essential). If you want to duplicate Cesare's paiolo, which is a pot with a rounded bottom, use a copper or stainless-steel bowl, holding the edge with a pot holder.
  • Beat ingredients with a hand mixer at high speed until foamy. Place over medium heat and continue beating. The mixture will thicken and increase greatly in volume. When mixture feels warm, remove the pot from heat. Continue beating, periodically placing the pot back over heat and quickly removing the pot again once the mixture is warm. Do not overheat it or you will curdle the eggs. Practice makes perfect. When ready, the zabaglione will be thick, foamy, and warm - but not hot - to the touch.

⅔ cup dry Marsala wine
1 cup cold heavy cream

Steps:

  • Whisk egg yolks, salt, sugar, and Marsala wine together in a metal mixing bowl.
  • Set the bowl over a medium-low heat, or over a double boiler. Hold the bowl with one hand using a towel or pot-holder, while whisking constantly with the other. Continue cooking until the mixture is very thick and reaches the ribbon stage, about 10 minutes.
  • Remove custard from heat and allow to cool completely, preferably over an ice bath, whisking occasionally, 20 to 30 minutes.
  • Pour cold heavy cream into another bowl and whisk until soft peaks form. Transfer into the cooled custard and gently fold everything together until just barely combined; do not overmix.

2 red grapefruits
4 large egg yolks
1 1/2 tablespoons good-quality honey
1/4 teaspoon fresh lemon juice
Pinch of coarse salt
1/2 cup heavy cream

Steps:

  • Remove peel and pith from grapefruits with a sharp knife. Working over a large bowl, carve out segments from between membranes, allowing them to drop into bowl. Refrigerate until ready to use.
  • Whisk egg yolks, honey, 1 tablespoon water, the lemon juice, and salt in a heatproof bowl. Set bowl over a pan of simmering water; whisk vigorously until doubled in volume, about 10 minutes.
  • Meanwhile, put cream into the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until stiff peaks form. Remove yolk mixture from heat. Using a rubber spatula, gently fold whipped cream into yolk mixture until combined. Refrigerate zabaglione 15 minutes.

2 large egg yolks
3 tablespoons Marsala wine
2 teaspoons sugar
1 pint raspberries

Steps:

  • Bring a medium pot of water to a boil. Prepare an ice-water bath. Place peaches in boiling water and cook 10 seconds. Drain, and immediately transfer peaches to ice-water bath. Remove peels using your fingers or a paring knife. Slice peaches in half and remove pit; set aside.
  • In a heatproof bowl set over (but not touching) simmering water, add egg yolks, Marsala, and sugar. Beat until mixture is creamy and thick, about 4 minutes. Remove from heat.
  • Divide peach halves evenly between 4 plates. Fill peach halves with berries and spoon over zabaglione. Serve immediately.
