COFFEE CAKE

Time 50m

Number Of Ingredients 10

170g butter or margarine, plus extra for the tins
170g caster sugar
3 large eggs
170g self-raising flour
1 tbsp cooled instant coffee, dissolved in 1 tbsp hot water (add more if you like it stronger)
225g icing sugar
100g butter or margarine
1½ tbsp instant coffee, dissolved in 1 tbsp hot water
strawberry jam (optional)
walnuts or cherries, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan. Line and butter two 18cm sandwich tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
  • Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp of flour each time. (Make sure you don't use all the flour.) When the eggs have been fully combined into the mix, add the rest of the flour and fold it in gently.
  • Add the dissolved coffee to the mixture, still folding. Divide into the sandwich tins and cook for 25-30 min until risen and firm and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Can be frozen at this stage.
  • Meanwhile, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk, then cover and set aside until ready to ice the cake.
  • Spread half the icing on the bottom of one sponge and spread the strawberry jam on the bottom of the other, if using. Sandwich together, then spread the remaining icing on top. Decorate with walnuts or cherries, if you like.

BEST COFFEE CAKES - ALLRECIPES

Estimated Reading Time 4 mins
  • Cinnamon Coffee Cake II. This easy cake uses a package of yellow cake mix and two packages of instant pudding mix and can be made in 9x13 inch baking pan, or a 10-inch Bundt cake pan.
  • Amazing Pecan Coffee Cake. Scented with cinnamon and rich with butter, eggs, and sour cream, this pecan streusel-topped cake is a hit. The cake is baked in a 9x13 inch pan, but several recipe reviewers suggest making it in a bundt pan instead and baking it for 50 minutes instead of 35 minutes.
  • Berry Good Coffee Cake. Raspberries and almonds add flair to this coffee cake drizzled with a powdered sugar based glaze. Reduced fat yogurt and only two tablespoons of butter make this cake significantly lower in fat and calories than most other coffee cakes.
  • Easy Streusel Coffee Cake. Packaged yellow cake mix and instant vanilla pudding mix are the basis of this "dump" style cake where all the ingredients are mixed in one bowl.
  • Cranberry Swirl Coffee Cake. A great cake for Thanksgiving weekend, it uses a can of cranberry sauce for a sweet swirl. Recipe creator Laura Owen says plain yogurt can be substituted for sour cream and you could certainly use leftover cranberry sauce if you have it.
  • Graham Streusel Coffee Cake. Graham crackers are the basis for the crumbly streusel which is added to middle of the cake as well as on the top.
  • Polish Cream Cheese Coffee Cake. This Polish version of coffee cake has three layers: a tender sour cream cake on the bottom, a rich sweetened cream cheese filling, and a topping with crumbly streusel topping made with flour, brown sugar and butter.
  • Cinnamon Swirl Bundt Coffee Cake. For this easy-to-make and easily adaptable cake, recipe creator Ruth says you can swap fat-free sour cream or yogurt for the sour cream.
  • Texas Praline Coffee Cake. If you're out of flour you can still make a coffee cake using a baking mix like Bisquick. This recipe has plenty of pecans, graham cracker streusel and is flavored with instant coffee.
  • Almond Rhubarb Coffee Cake. Ruby-red rhubarb adds color and a contrasting tangy flavor to this vanilla scented coffee cake. Note that this recipe makes two cakes so you can keep one and give another away or freeze it for later.
