This oatmeal cake always brings back memories of my childhood.

Number Of Ingredients 17

1 ¼ cups boiling water;
1 cup rolled oats, uncooked;
½ cup (1 stick) unsalted butter, at room temperature;
1 cup granulated sugar;
1 cup packed brown sugar;
2 eggs, at room temperature;
1 tsp vanilla extract;
1 ½ cup all-purpose flour;
1 tsp baking soda;
¾ tsp ground cinnamon;
½ tsp salt;
¼ tsp ground nutmeg.
½ cup (1 stick) unsalted butter, melted;
2 cups flaked coconut;
1 cup almonds, chopped;
1 ½ cups packed brown sugar;
4-5 tbsp evaporated milk.

Steps:

  • Preheat the oven to 350°F. Grease a 9x13 inch baking dish with a cooking spray.
  • Put the rolled oats in a small bowl and cover with boiling water. Set aside.
  • In a large mixing bowl, cream together softened butter with granulated sugar and packed brown sugar using an electric mixer. Then, add eggs and vanilla extract and beat until well combined. Add cooled rolled oats. Beat until combined. Then, add all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg. Beat until combined.
  • Pour the batter into the prepared baking dish. Bake in the preheated oven for 30 minutes or until oatmeal cake is set. You can also check the readiness of the oatmeal cake using a toothpick inserted in the center, if it comes out clean - the cake is ready.
  • While the oatmeal cake is baking, prepare the topping. In a large bowl, mix together melted butter, flaked coconut, almonds, packed brown sugar, and evaporated milk.
  • Remove the oatmeal cake from the oven and spread evenly the coconut topping over the top.
  • Switch the oven mode to broil. Broil the oatmeal cake until the top is brown and the coconut is toasted. Let it cool in the pan. Then, slice and enjoy!

1 cup old-fashioned rolled oats
1/2 cup butter
1 1/2 cups boiling water
2 large eggs
1 cup light brown sugar
1 cup granulated sugar
1 1/3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
6 Tablespoons butter (, room temperature)
1 cup shredded sweetened coconut
1/2 cup evaporated milk
1/2 cup light brown sugar
1 cup nuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
  • Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
  • In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
  • In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
  • Add to the bowl with eggs and sugars and stir to combine.
  • Add the oatmeal mixture and stir to combine.
  • Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking, make the topping by combining all the ingredients in a bowl.
  • Remove the cake from the oven and turn the oven to high broil.
  • Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

CAKE:
1 c quick oatmeal
1 1/2 c boiling water
1 c granulated sugar
1 c brown sugar
1/2 c oleo (butter or margarine)
2 medium eggs
1 1/2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
FROSTING:
2 Tbsp soft oleo (butter)
1 c brown sugar
1/2 c milk or cream
1 tsp vanilla extract
3/4 c flaked coconut
3/4 c chopped pecans

Steps:

  • 1. Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature). Combine sugars,oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well. Pour into sprayed 9x13-inch cake pan. Bake in 350^ oven for 40-50 minutes. --- Frosting: In a small saucepan combine butter,sugar and milk, heat to boiling. Remove from heat add vanilla, coconut and pecans. Spread on cake while it is still warm.

Number Of Ingredients 10

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

This incredibly delicious Oatmeal Cake recipe has been in our family for generations. One bite and you'll fall in love with this soft, hearty, and oh so flavorful cake!

1 1/4 cup boiling water
1 cup quick oats
1 stick butter
1 cup sugar
1 cup brown sugar
2 eggs (slightly beaten)
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Icing Ingredients
2 Tbsp melted butter
1/2 cup evaporated milk
1/2 cup sugar
1/2 tsp almond extract
1/2 cup coconut (optional)

Steps:

  • Combine quick oats, boiling water, and butter in a large mixing bowl. Cover and let stand for 20 minutes.
  • While you are waiting, butter and flour two cake pans* and preheat your oven to 350 degrees Fahrenheit.
  • After 20 minutes, mix together oat mixture. Add 1 cup of granulated sugar, brown sugar, and eggs, mix until well combined.
  • In a medium bowl whisk together flour, soda, cinnamon, and salt. Add to oat and sugar mixture and mix until well combined.
  • Pour cake batter evenly into prepared cake pans. Bake for 30-35 minutes until tooth pick inserted into the middle comes out clean.
  • While cake is baking, mix icing together in a microwave safe bowl (preferably something with a spout). Combine melted butter, evaporated milk, sugar, almond extract, and coconut - stir until well combined. Microwave for 30 seconds and stir.**
  • When cakes come out of the oven, slowly and evenly pour icing over the hot cakes while still in the pan. Place cake pans back in the oven under the broiler to toast the coconut and broil the icing. Watch carefully so they don't burn.
  • When coconut is a perfect golden brown, removed cakes from oven again. Let cakes cool 5-10 minutes. Run a butter knife around the edge of the cake pans and turn cakes out onto a cooling rack. Use the cooling rack to flip cake layers onto your cake serving plate - stacked.***

1 ¼ cups boiling water
½ cup butter
1 cup white sugar
1 cup packed brown sugar

1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
6 tablespoons melted butter
1 ½ cups packed brown sugar
¾ cup evaporated milk
1 ½ cups flaked coconut
1 ½ cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Pour water over oats, let stand.
  • Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
  • Pour batter into a 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
  • To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
  • Pour this coconut concoction over the hot cake.
  • Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.

1-1/2 cups shortening
2 cups sugar
4 large eggs, room temperature
4 teaspoons water
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
4 cups quick-cooking oats
2 cups chopped raisins
1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.

1 cup oatmeal (quick cooking)
1 1/2 cups flour
1 1/2 cups hot water
1 teaspoon baking soda
1 cup packed brown sugar

1/2 teaspoon salt
1/2 cup shortening
1 teaspoon vanilla
2 large eggs
1 cup coconut
1 cup margarine
1/2 cup walnuts
3 tablespoons milk
1 1/2 cups packed brown sugar
1/2 cup uncooked oatmeal

Steps:

  • Pour hot water over oatmeal; set aside.
  • Cream together sugars and shortening, then add eggs.
  • Sift together dry ingredients and add to the wet.
  • Stir in oatmeal and vanilla.
  • Pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
  • Topping: Combine butter, milk and sugar in a small saucepan.
  • Bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.
  • Spread on cake and broil until brown (WATCH CAREFULLY IT WILL BURN FAST).
