This beautiful seafood salad makes a terrific home for leftover Niçoise olives from the braised [Veal Cacciatore](/recipes/food/views/351137) . Quickly cooking the calamari renders it snowy white and very tender-such a nice backdrop to the salty olives and crunchy celery. Scallion, lemon zest, and celery add freshness.

Number Of Ingredients 8

2 pounds cleaned squid
Heaping 1/3 cup niçoise olives, finely chopped
1/3 cup finely chopped celery
1/3 cup chopped celery leaves
1/3 cup thinly sliced scallion
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice, or to taste
1/4 cup extra-virgin olive oil

Steps:

  • Rinse squid under cold running water, then pat dry between paper towels. Halve tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/8-inch-wide rings. Cook in a 4-quart pot of boiling salted water (1 tablespoon salt for 3 quarts water), uncovered, until just opaque, 30 to 40 seconds. Drain and immediately transfer to an ice bath to stop cooking. When squid is cool, drain and pat dry.
  • Meanwhile, combine remaining ingredients and 1/4 teaspoon salt in a large bowl. Add squid and toss until combined well. Serve chilled or at room temperature.

1/4 cup olive oil
Salt and freshly ground black pepper
1/4 cup red wine vinegar
2 lemons, juiced
3/4 cup extra-virgin olive oil
2 cloves garlic, minced
1 teaspoon fresh oregano, chopped fine
1 teaspoon chile flakes
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Preheat grill.
  • Clean the squid thoroughly, removing the backbone and head. Separate the tentacles from the body. Leave the tentacles and the body, whole.
  • Brush the squid with the olive oil and season with salt and pepper. Place on a hot grill and mark on all sides. Grill until cooked through about 3 minutes.
  • In a bowl mix together the vinegar, lemon juice, extra-virgin olive oil, garlic, oregano, chile, salt, and pepper. Pull the squid from the grill and cut the body into inch-sized rings leaving the tentacles whole. Put the squid in the marinade hot. Mix well. Serve warm or chilled as a meze with a glass of ouzo.

1/2 cup diced red onion
2 fresh jalapenos, minced seeds and veins removed
1 cup red bell pepper, diced seeds and veins removed

1/4 cup fresh cilantro, diced
salt and pepper

Steps:

  • Clean calamari remove the fins and skin.
  • If you wish to use the tenacles cut them off above the eyes remove the hard center.
  • Cut the calamari into small rings.
  • Cook the calamari in boiling salted water for approx 1 minute drain and rinse under cold water.
  • Put into serving bowl add all the chopped ingredients stir to combine.
  • In a small bowl add vinegar and lemon juice wish in olive oil to make an emulsion
  • add to salad and stir to combine.
  • Refrigerate for several hours before serving.

4 medium squid, use the hoods sliced into rings
1 cup milk
1 garlic cloves or 1 use bottled minced garlic
1 pinch salt
1 pinch pepper
1/2 cup flour or 1/2 cup use gluten-free flour

Steps:

  • Slcie the squid into rings and place in a small mixing bowl.
  • Cover the squid with milk (use more or less as required. Add garlic and season with salt and pepper. Cover and refrigerate for 24 hours (or at least overnight).
  • Drain the calamari and discard the milk. Pat dry with kitchen paper.
  • Toss calamari in flour. I use a large plastic bag to do this.
  • Deep fry until golden. Serve hot.
  • Do not overcook the calamari as it may toughen.
  • NOTE: Cooking time does not include overnight marination time.

1/2 teaspoon maple syrup or honey

2 garlic cloves, smashed and peeled
1/3 cup extra-virgin olive oil, more as needed
4 cups cooked or canned chickpeas
4 large or 6 small celery stalks, trimmed (reserve the leaves) and cut into large julienne
2 large scallions, white and pale green parts, thinly sliced on a diagonal, or 1/4 cup thinly sliced red onion
1 to 2 cups loosely packed celery leaves, coarsely chopped
1 pint small tomatoes, halved
1/4 cup loosely packed basil leaves, rolled and julienned

Steps:

  • In a large bowl, whisk together vinegar, mustard, maple syrup and a large pinch each of salt and pepper. Drop in garlic cloves, stir, and set aside 15 to 30 minutes to let the flavor infuse.
  • Gradually whisk in oil; dressing will emulsify. Mix in chickpeas, celery and scallions. Cover and refrigerate at least 2 hours or overnight.
  • Remove garlic cloves from dressing. Taste and adjust the seasonings with salt, pepper, vinegar and olive oil. Set aside to come to cool room temperature.
  • If desired, make croutons, for serving: Heat oven to 400 degrees. Pull the soft bread out of the center of the loaf, leaving most of the crust behind, and tear bread into bite-size pieces. You should have about 3 cups. Spread pieces on a rimmed baking sheet and bake for about 12 minutes, until golden and crisp; let cool.
  • Just before serving, mix celery leaves, tomatoes, basil and croutons, if using, into the salad. In a serving bowl, place a layer of greens, if using, in the bottom. Add celery mixture, then top with cheese and more black pepper.

1/2 cup olive oil
3 anchovy fillets, minced, optional

1 can (8 ounces) mushroom stems and pieces, drained, optional
1/4 teaspoon salt
